Brilliant green, fresh and clean tasting, these Spinach Bites get a salty kick from Parmesan and a sweet finish from toasted pine nuts.

Number Of Ingredients 8

10-12 ounces spinach (I used 2 (5-ounce) containers Organicgirl Super Spinach blend)
1/2 cup cottage cheese (drained a bit if watery) or ricotta cheese
1/2 cup shredded Parmesan cheese, plus a bit more for garnish
2 large eggs
1 clove garlic, finely minced
1/4 teaspoon freshly ground pepper
1/4 teaspoon ground nutmeg
Garnish: pine nuts

Steps:

  • Heat oven to 400F degrees. Add raw greens to the bowl of a food processor and pulse repeatedly until finely chopped. Transfer to a mixing bowl.
  • Add cottage cheese, eggs, garlic, pepper and nutmeg to spinach bowl and stir to combine.
  • Mist a mini muffin pan with nonstick spray and divide the spinach mixture among 24 cups. Cups will be full. Garnish with a pinch of Parm shreds and a couple of pine nuts on each muffin.
  • Bake the spinach bites until set, about 20-22 minutes. Let stand in the pan for 10 minutes. Loosen the edges gently with a knife and pop them out onto a large plate. Serve warm or at room temperature.
  • Makes 24 bites.

Steps:

  • Cook spinach according to package directions. Squeeze out as much liquid as possible.
  • Mix all ingredients except english muffins.
  • Toast or broil english muffins.
  • Spread spinach mixture on english muffins.
  • Bake 10 minutes at 350°F.
  • Cut each english muffin half into quarters (or into 6).

4 tablespoons butter (or 1/4 cup)
3 eggs
1 cup flour
1 cup milk
1 teaspoon salt
1 teaspoon baking powder
1 tablespoon Dijon mustard
1 dash cayenne pepper
1/4 cup chives or 1/4 cup green onion, chopped
1 lb edam cheese, grated
2 (12 ounce) packages frozen chopped spinach, thawed and well drained

Steps:

  • Preheat oven to 350 degrees F. In a 9-inch x 13-inch cake pan, melt butter in the oven.
  • In a large mixing bowl, beat eggs; add flour, milk, baking powder, salt, mustard, cayenne and chives. Blend well.
  • Fold in cheese and spinach.
  • Pour into pan on top of butter, and bake for 35 minutes or until almost set in center.
  • Allow to sit for about 15 minutes; cut into bite-sized squares and serve warm.
  • These may also be frozen after baking and reheated in 350-degree F oven for 15-20 minutes at serving time.
  • Makes 10 dozen appetizers.

One 10-ounce package frozen spinach
1/4 pound firm feta cheese, coarsely crumbled
2 cloves garlic, pressed
About 20 grinds black pepper
Small dash nutmeg
Flour, for dusting
One 10-by-9.5-inch piece of packaged puff pastry

Steps:

  • Preheat the oven to 375 degrees F.
  • Thaw frozen spinach in microwave according to package directions or by running under warm water. Drain spinach, squeezing the excess liquid from it. In a bowl, mix the spinach, feta, garlic, pepper, and nutmeg together.
  • Flour a clean, dry countertop or other flat working surface. Lay out the puff pasty on the floured surface. Flour the top of the dough. Roll out the puff pastry until it is half as thick (about 1/8-inch) and about 24 by 12 inches. Trim edges to size if necessary. Cut into 3-inch strips crosswise and lengthwise, making 32 (3-inch) squares. Make sure the squares are well floured then stack them in a little pile.
  • Fill a little dish with some room temperature water. Imagine each square you work with is separated in half by a diagonal. Place a couple teaspoons of filling in the top half. Dip a finger into the water and moisten the edges of the top half with water. Fold the bottom half to meet the edges of the top half. Use a fork to seal the edges.
  • Place finished pockets on a nonstick baking sheet and bake about 15 minutes until golden brown and puffy. Serve warm.

1/2 cup unsalted butter
1 small onion, chopped
1 teaspoon minced garlic
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 (8 ounce) bag herb seasoned stuffing mix (do not precook this, use dry)
6 large eggs
1 cup grated parmesan cheese
salt and pepper

Steps:

  • Preheat the oven to 350 degrees.
  • In a large saute pan, over medium heat, melt the butter.
  • Add the onion and cook until the onion is translucent & soft, about 5 minutes; then add garlic and cook for about 30 seconds. Remove pan from heat and let cool.
  • In meantime, remove excess water from thawed spinach by pressing between paper towels (you do not need to cook the spinach).
  • In a large bowl, combine the stuffing mix, spinach, eggs, Parmesan cheese, salt & pepper, and onion/garlic mixture. Combine well.
  • Line a rimmed baking sheet with parchment paper.
  • One at a time, using hands, roll mixture into individual 1" balls. Place each on partchment lined baking sheet.
  • Bake the balls for 15-20 minutes or until very slightly browned.
  • Dipping sauces: Marinara recommended but could use Ranch, sour cream, horseradhish, etc.

Adapted from the spinach brownies recipe originally from Parents Magazine. And just like the original spinach brownie recipe, you can't taste the spinach! Yet these are even more kid-friendly because they are bite-sized. I had a gigantic Costco-sized bag of fresh spinach so I had to find things to do with it, after making spinach salad, spinach quiche, spinach-artichoke dip, I still had some steamed spinach left over so I made these. A note on the amount of spinach: I only added enough of the creamed spinach to the chocolate batter until it looks slightly greenish, it may not the the entire amount - If you use more spinach make sure to add more sugar and cocoa powder to taste or it will be bland (taste before adding eggs).

1 cup spinach, steamed & drained (roughly 6 cups of fresh spinach, stems removed and packed into measuring cups)
4 ounces semisweet baking chocolate, broken into pieces
1/2 cup unsalted butter, cut into pieces
1 cup brown sugar, packed
1 tablespoon cocoa powder
3 tablespoons sugar
2 teaspoons vanilla extract
2 large eggs
3/4 cup whole wheat pastry flour (or all-purpose flour)
2 tablespoons flour (whole wheat or all-purpose)
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup semisweet mini chocolate chips (mini preferred)
2 tablespoons carrot juice (more as needed) or 2 tablespoons grape juice (more as needed)

Steps:

  • Preheat oven to 350°F.
  • Steam spinach until soft, drain and set aside.
  • Using a glass or metal mixing bowl on top of a saucepan 1/2 full with water (double broiler method), break chocolate into small pieces and add butter, melt over hot but not boiling water. Stir until smooth and melted, remove from heat and let cool to room temperature, set aside.
  • Using a food processor, cream the spinach with drizzles of apple juice (adding only enough to be able to cream the spinach).
  • Add the spinach mixture to the chocolate mixture, blend.
  • Add the sugars, and vanilla. (you can taste this before adding eggs to make sure it's sweet enough if you'd like).
  • Add eggs to the chocolate mixture.
  • In a separate bowl, sift together flour, salt, baking powder.
  • Fold the flour mixture into the chocolate mixture and mix well.
  • Stir in the chocolate chips.
  • Butter or spray mini muffin tins.
  • Scoop or pour in batter to the top of tins and bake for about 15 - 18 minutes (or until firm).
  • Cool 5 - 10 minutes then pop them out (using a toothpick to loosen around edges if needed) and finish cooling on racks, if your kids can wait that long that is.

  • In a large bowl, mix together chopped spinach, dry bread stuffing mix, eggs, Parmesan cheese, onion, butter and Cheddar cheese. Cover and chill in the refrigerator approximately 30 minutes.
  • Drop the mixture by rounded spoonfuls onto a lightly greased large baking sheet. Place baking sheet in the freezer approximately 1 hour.
  • When ready to bake, allow the balls to partially thaw, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking sheet.
  • Bake the balls in the preheated oven 20 to 25 minutes, or until lightly browned.
