Chinese Spicy Eight Treasures Stir Fry image

This Spicy Eight Treasures Stir fry is another everyday home cooking dish from the old days in Shanghai. The secret of this dish is a combination of 3 things: dried shrimp, loads of garlic and the substitution of spicy bean paste for the sweet bean paste.

1 cup spiced bean curd ((cut in ½-inch cubes))
1 cup carrot ((diced in ½-inch cubes))
1 cup frozen shelled edamame ((thawed))
1 cup lean pork ((diced into ½-inch cubes))
2 heads garlic ((peeled and chopped))
½ cup small dried shrimp ((rinsed and drained))
1 cup raw shelled peanuts ((rinsed and drained))
1 cup green pepper ((diced; long hot peppers can be used for extra heat, or you can use bell peppers if you prefer it mild))
3 tablespoons cooking oil
2 tablespoons shaoxing wine
2 tablespoons spicy bean paste ((doubanjiang))
1/2 teaspoon sugar
1 tablespoon sesame oil
1 teaspoon black bean chili sauce ((Lao Gan Ma brand))

Steps:

  • Stir fry the spiced bean curd with a teaspoon of oil over medium heat for 2 minutes. Take it out of wok and set aside. Stir fry the carrot with a teaspoon of oil using medium heat for about two minutes...until softens slightly. Take it out of wok and set aside. Repeat the process another two times with the edamame and the cubed pork and set both aside.
  • Then add a tablespoon of oil to the pan and stir-fry the garlic over medium heat for about a minute. Add the shrimp and stir to combine. Add the peanuts and stir for another 3-5 minutes, until they start to smell fragrant. Then add the green pepper and mix well. Now add all the pre-cooked ingredients: the bean curd, carrot, edamame and pork. Continue to stir and cook for another few minutes so that everything comes together. Add cooking wine, spicy bean paste, sugar, sesame oil, and the black bean chili sauce. Stir everything together and keep stirring until most of the liquid has evaporated and all the ingredients are well-coated in sauce. Plate and serve!

2 Tbsp toban djang (Chinese Chili Bean Sauce)
2 Tbsp oyster sauce or Vegetarian oyster sauce
1 tsp sugar
1 Tbsp cooking oil (only if you are using center cut bacon)
6 slices of thick center cut or 4 slices of thick cut bacon, cut into bite sizes
3 cloves garlic, chopped
1 small shallot, chopped (You can substitute to 1/4 of small onion)
1 lb long beans, cut into 2-inches long (You can substitute to green beans)
1/4 cup chicken stock

Steps:

  • In a small mixing bowl, combine all the ingredients for the sauce. Set aside.
  • Heat a wok over high heat, add oil and bacon. Cook the bacon until the edges are crispy and enough oil's released.
  • Add chopped garlic and shallot. Stir fry for 30 seconds to 1 minute or until you can smell the fragrance.
  • Before the garlic and shallots get burn, pour the sauce mixture. Stir fry all together for 30 seconds to 1 minute. Be careful not to burn the sauce.
  • Add long beans and chicken stock. Now, cover with a lid and let them steam for 5 to 6 minutes. Stir occasionally. If don't have a lid for your wok, add additional 1/4 cup water. Stir fry for 5 to 6 minutes or until all the moisture's evaporated.
  • Serve on a serving plate and enjoy! I recommend to serve with my Zesty Prime Ribs and Honey Butter Smashed Potato!

Chinese green beans, also called long beans, make an easy stir-fry with Sichuan peppers, red chilis, and sesame oil. This dish is ready in only 15 minutes from start to finish!

1/2 pound Chinese long beans, trimmed and cut into 3 inch segments
1 tablespoon peanut oil
4 to 6 dried chilies, preferably Sichuanese, roughly chopped
1 teaspoon whole Sichuan peppercorns , lightly crushed
1/4 teaspoon salt
1/2 teaspoon sugar
1 tablespoon roasted sesame oil
Splash soy sauce

Steps:

  • Add the oil, stir-fry the chilies and peppers: Add a tablespoon of peanut oil to a wok or a large sauté pan over medium heat and swirl until hot. Add chilies and peppers and stir-fry briefly until fragrant.
  • Add the long beans, salt, and sugar: Add the long beans and stir-fry vigorously for 3 to 4 minutes. (You don't want the spices to burn. If they start to then turn down the heat a bit). Season with salt and sugar and stir-fry a few seconds more to mix it all together.
  • Stir in the sesame oil and soy sauce: Remove from heat. Stir in the sesame oil and soy sauce. Serve immediately.

2 large egg whites
1 teaspoon sesame oil
2 tablespoons cornstarch
Kosher salt and freshly ground black pepper
1 pound boneless beef top round, sliced paper-thin against the grain
8 fresh chives, minced
1/2 cup peanut oil
1-inch piece fresh ginger, peeled and minced
2 garlic cloves, minced
2 green onions, white and green parts, chopped
1 dried red chile
3/4 pound green beans, halved on the bias
1/2 cup chicken broth
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon sugar
3 tablespoons creamy peanut butter
2 strips orange peel
1/4 cup roasted peanuts, chopped

Steps:

  • In a mixing bowl, whisk together the egg whites, sesame oil, and 1 tablespoon of the cornstarch until foamy; season with salt and pepper. Add the beef and chives, toss to coat in the marinade and stick it in the refrigerator for 30 minutes.
  • Pour the peanut oil in a large skillet or wok and place over high heat. When the oil is smoking hot, add 1/2 of the beef. (If you fry all the meat at once the oil temperature will drop and the beef will stew instead of crisp.) Fry for 2 minutes then remove to a paper towel to drain; repeat with the remaining beef. Very carefully drain all but 2 tablespoons of the hot oil into a safe container.
  • Stir-fry the ginger, garlic, green onions, and chile in the remaining oil until they perfume. Add the green beans; season with salt and pepper. Stir-fry the beans for 2 minutes until crisp-tender; remove from the pan. Mix the chicken broth with the remaining tablespoon of cornstarch to make a slurry and add it to the pan. Add the soy sauce, vinegar, sugar, peanut butter, and orange peel. Simmer until the sauce is thick, about 5 minutes. Return the beef and green beans to the pan, tossing to coat in the sauce. Garnish with chopped peanuts and serve with rice.
