SPICY SHRIMP AND SMOKED SAUSAGE PASTA

Spicy Shrimp and Smoked Sausage Pasta image

This dish is my own version of the many different dishes served with the same name down in NOLA. Down there they use Taso ham instead of smoked sausage most of the time, but the sausage is easier to find and just as good in my opinion.

Provided by graniteangel

Categories     Creole

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 18

19 ounces frozen cheese tortellini
1 teaspoon olive oil
1 lb large shrimp, peeled and deviened
8 ounces smoked sausage, chopped into small cubes
1 large onion, chopped
1/4 cup celery, finely chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 large garlic clove, minced
2 teaspoons fresh thyme leaves
1 teaspoon fresh oregano, chopped
2 tablespoons unsalted butter
1 cup heavy cream
1/4 cup dry white wine
2 teaspoons creole seasoning
1 teaspoon louisiana hot sauce
1/2 teaspoon fresh black pepper
1/2 cup parmesan cheese, freshly grated

Steps:

  • Cook Tortellini in boiling water just until they start to float. Rinse with cold water. Toss pasta with the teaspoon of olive oil to avoid sticking.
  • Try to use either andouille or Emeril's kicked up smoked sausage. You want a spicy sausage for this dish.
  • Melt the butter in a sauce pan. Saute smoked sausage, onion, celery, bell peppers, and garlic. Let cook on Med-high for 3-4 minutes. Add shrimp and let cook another 2 minutes, or until shrimp looks mostly pink.
  • Add wine, cream, creole seasoning, herbs, hot sauce and fresh black pepper. Turn temp down to Med and let reduce for 3-4 minutes.
  • Pour sauce over the pasta and toss in the Parmesan cheese.
  • Serve imediately with french bread and butter. Goes great with a nice salad. I recommend a nice crisp chardonnay wine to go with it.
  • Sometimes I even add catfish nuggets to this dish. I saute them with the shrimp and sausage. It's pretty good that way too.

AMAZING SHRIMP AND HOT ITALIAN SAUSAGE OVER ANGEL HAIR PASTA

Amazing Shrimp and Hot Italian Sausage over Angel Hair Pasta image

This is a great one dish meal with an Italian accent. The Shrimp and Hot Italian Sausage are accented with a Garlic Cream Sause.

Provided by aeb8889

Categories     One Dish Meal

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 12

1 lb raw shrimp (shell off and deviened)
1 lb hot Italian sausage (I buy mine at the Italian Market)
5 -6 garlic cloves
1 teaspoon salt
1 teaspoon pepper
fresh rosemary, to taste
1 quart heavy cream
3 bunches green onions
3 tablespoons flour, for thickening
1/2 cup water
parmesan cheese
romano cheese

Steps:

  • Remove Italian Sausage from caseing. In an electric skillet or on top of the stove, brown very slowly the Italian sausage, the objective here is to brown it slow enough to allow the fat to run off into the skillet, add salt, pepper and press garlic, to the Italian Sausage once is has cooked.
  • While Sausage is cooking chop tops of green onions and set aside.
  • Mix water and flour together, make sure it is not lumpy and set aside.
  • Add shelled and deveined shrimp to sausage , allow to cook for 3 minutes.
  • Add Heavy Cream to Shrimp and Sausage, enough to cover over about an inch and a half, increase heat slightly, add water and flour mixture to thicken. Simmer to desired thickness. (Do not over cook shrimp).
  • Sauce should be the consistancy of alfredo sauce and light pink in color (from the sausage fat). Serve over fresh Angel Hair Pasta tossed with Extra Virgin Olive Oil. Add fresh chopped green onion tops, Rosemary, Fresh Fancy Grated Parmesean and Ramano Cheese -- enjoy.

SPICY CAJUN SHRIMP AND SAUSAGES

Spicy Cajun Shrimp and Sausages image

Delicious over rice. The original recipe ingredients are for 1 tablespoon Cajun or Creole seasoning - this seemed like a lot for us, so adjust per your taste. The original recipe also used Creole mustard and I used Dijon mustard (reducing the amount that was called for). Recipe source: Bon Appetit (February 2007)

Provided by ellie_

Categories     Pork

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 10

1 tablespoon creole seasoning (or to taste see my comment in description) or 1 tablespoon cajun seasoning (or to taste see my comment in description)
2 tablespoons vegetable oil, divided
12 ounces andouille sausages, cut crosswise into diagonal 3/4-inch pieces (or your favorite smoked sausage)
1 onion, halved, thinly sliced
1 green pepper, cut into 1/2 inch wide strips (or use a red bell pepper for a prettier dish)
1 teaspoon dried thyme or 1 tablespoon fresh thyme
1 cup chicken broth
3 tablespoons Dijon mustard (the original recipe suggested 5 tablespoons Creole mustard)
2 teaspoons red wine vinegar

Steps:

  • Toss shrimp with the Cajun seasoning in a medium bowl and set aside.
  • In a skillet over high heat heat 1 tablespoon oil and then add the sausage pieces, cooking until browned turning occasionally (5 minutes).
