INDIAN CAULIFLOWER

Indian Cauliflower image

A spicy cauliflower served whole on a platter - looks like a red and yellow flower. Garam Masala can be found in Indian grocery stores and some traditional grocery stores. I like to serve peas and carrots lightly cooked in butter on the side of this dish.

SPICED INDIAN CAULIFLOWER SOUP

Spiced Indian Cauliflower Soup image

Taken from the Ultimate Vegetarian Cookbook, Roz Denny, 1994, Anness Publishing Ltd., page 18. This soup has a GREAT flavor and creamy texture, but doesn't have the fat that cream or half and half has. Makes a great first course or light meal. I am going through boxes and boxes of old cook books and RecipeZaar-ing my fave recipes... then I will take the cookbooks themselves to Goodwill. Back 15 years ago when I first used this recipe, vegetable stock was unheard of in the area I was living. Now I can find vegetable stock easily. I'm going to be making a lot more of this soup.

Provided by Arradius

Categories     Cauliflower

Time 13m

Yield 2 serving(s)

Number Of Ingredients 9

250 g cauliflower (amount depends on how many people you are cooking for. If for two, use about 200-250 grams or two me)
1 shallot
1 small onion
50 g turmeric (or 1 small finger)
4 garlic cloves
1 pinch coriander seed
1 tablespoon ghee
2 stalks celery
1 dash cayenne pepper (substitute with dried chilli flakes for more heat if desired)

Steps:

  • Peel and chop Onion finely.
  • Peel and chop Shallot finely.
  • Dice Celery stalks.
  • Place Shallot and onion and celery aside.
  • Crush Garlic with large flat knife to remove skin.
  • Finely dice Garlic.
  • Peel the small finger of Tumeric with a veggie peeler. Be careful, as if you get Tumeric on your hands it will stain your hands yellow or orange and is hard to remove.
  • Finely dice Tumeric.
  • Place Tumeric, Garlic and Coriander seeds in mortar and pestle and pound until ingredients reach a paste-like state.
  • Steam cauliflower florets in microwave safe container for 3 minutes or until soft.
  • In the meantime, heat Ghee in frying pan.
  • When Ghee has melted, add the Tumeric, Garlic and Coriander seed paste to the Ghee and lightly fry. This releases the fragrant smell of the ingredients, and mellows the flavour.
  • When Ghee is lightly coloured yellow by the Tumeric, and the garlic is softened but not discoloured, add the Shallot, Onion and Celery that was set aside earlier.
  • Fry gently, and add the dash of Cayenne pepper to taste (or dried chilli flakes if desired).
  • When Onion and Celery is soft, clearish and lightly coloured yellow, add the steamed Cauliflower. Cauliflower should be soft enough to break up into tinier portions.
  • Cook for about 3 minutes stirring constantly, or until the Cauliflower is yellow like the rest of the ingredients.
  • Serve hot.

CAULIFLOWER SPLIT PEA SOUP WITH INDIAN SPICES

Cauliflower Split Pea Soup With Indian Spices image

Make and share this Cauliflower Split Pea Soup With Indian Spices recipe from Food.com.

Provided by mehndiart

Categories     Beans

Time 2h20m

Yield 6 cups of soup, 6-8 serving(s)

Number Of Ingredients 18

2 tablespoons olive oil
1 large bay leaf
1 large onion, chopped
2 tablespoons ginger, chopped
2 teaspoons kosher salt
1/2 teaspoon black mustard seeds
1/2 teaspoon cumin
1/2 teaspoon turmeric
3 cups cauliflower, chopped
1 cup chicken stock (may replace with vegetable stock or water)
1 cup dried split peas, soaked in water for at least 30 minutes
1 tablespoon vinegar (balsamic or flavored vinegars will do)
1 tablespoon ground coriander
1/2 teaspoon red chili powder
2 tablespoons sugar
salt (to taste)
water
fresh cracked pepper (to taste)

Steps:

  • Place large saucepan over medium heat and add oil and bay leaf.
  • Once oil is hot add onion and ginger with kosher salt.
  • Add mustard seeds, cumin, and turmeric and mix onion, continuing to saute it until it is clear and begins to caramelize.
  • Mix in cauliflower and allow to saute slightly, for 2-3 minutes, then add in chicken stock and split peas. Add enough water up to the level of the split peas and cauliflower.
  • Bring to a boil, then bring down heat to simmer.
  • Add sugar, chilli powder, coriander, vinegar, and and cover.
  • Allow to simmer for 1-2 hours, mixing frequently. Soup is cooked adequately when cauliflower and split peas have broken down completely and combination resembles oatmeal consistency.
  • Puree well in blender, then may return to heat to simmer until serving time.
  • Salt before serving.
  • Note, soup will be concentrated and thick, which makes it good to store in separate containers and add water prior to reheating. If soup is too thick for desired consistency, may add water and mix gently prior to heating.
