BAKED LEMONADE PORK CHOPS
Steps:
- For the sauce: In a large bowl or pitcher, mix all of the sauce ingredients together. Set aside.
- Preheat the oven to 350 degrees F.
- For the pork chops: Heat a large heavy skillet over medium heat and add enough cooking oil to coat the bottom. Dredge the pork chops in the seasoned flour and brown for approximately 2 minutes per side in the skillet. Transfer the chops to a baking pan. Fan the chops so that each chop is exposed as much as possible.
- Pour the sauce over the chops and cover the baking pan with heavy aluminum foil.
- Bake until the chops are tender 1 to 1 1/2 hours. Transfer the chops to a serving platter and serve.

- WHISK together the mustard and mayonnaise in a small bowl. In a shallow bowl mix together the bread crumbs, lemon zest, sage, salt, and pepper.
- POUND the pork chops between two sheets of wax paper until just tenderized, but not too thin. Working with each chop individually, dip the chop in the mustard mixture so that it is well coated. Then place it in the Panko mixture and turn it once or twice to make sure it is completely coated. Set side. Repeat with remaining three pork chops so they all are evenly breaded.
- MELT 1 tablespoon of butter with 1 tablespoon of olive oil over medium heat in a large skillet. Swirl so that it all coats the bottom of the pan. Then, place the pork chops in the pan and cook for about 10 minutes per side. Drizzle in a touch more olive oil if the bottom of the pan gets dry. Check doneness by cutting into one of the chops. Serve!

- In small bowl, mix lemonade concentrate, basil and oil until well blended; reserve 3/4 cup for brushing on pork and melon during grilling. In shallow nonmetal dish or resealable food-storage plastic bag, pour remaining mixture over pork; turn to coat with marinade. Cover dish or seal bag and refrigerate, turning once, at least 1 hour but no longer than 2 hours.
- Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Drain pork; discard marinade. Place pork on grill rack. Cover and grill pork over medium heat 12 to 16 minutes, turning once and brushing with reserved marinade, until pork is no longer pink in center. Add melon and cantaloupe wedges for last 3 to 4 minutes of grilling, turning and brushing 2 to 3 times with reserved marinade, until hot.
- Sprinkle pork with salt and pepper. Serve pork with melon.

- In a food processor, combine the lemons (rind & seeds too -- EVERYTHING), sugar and 1 cup water -- process until liquified.
- Strain the mixture.
- Place the lemon mixture & remaining ingredients, (except the chops & the flour) in a large stainless steel saucepan.
- Simmer for 1 hour on medium, stirring often, being careful not to burn.
- Remove from heat & set aside to cool.
- Preheat oven to 325°.
- Dredge chops in the seasoned flour.
- Brown chops in olive oil over med.-high heat until golden brown -- cook in batches, if need be.
- Place chops in roaster & pour lemonade sauce over.
- Cover roaster & place in oven.
- Cook for 1½ hours or until tender.

PORK CHOPS WITH LEMON ROAST POTATOES
Roast pork chops with olives, potatoes, lemon wedges and garlic for a tasty and gluten-free weeknight dinner

- Heat oven to 200C/180C fan/gas 6. Pour the oil into a roasting tin and put in the oven to heat. Put the potatoes, garlic and half the lemon wedges into a large pan. Cover with cold salted water and bring to the boil, then simmer for 10 mins. Drain the potatoes, discarding the lemon and garlic. Toss the potatoes with the lemon zest, oregano and seasoning, then carefully transfer to the hot oil in the roasting tin and roast for 30 mins.
- Meanwhile, finely chop the olives in a small food processor with some pepper. Press the olives onto both sides of the pork chops, then add the chops to the roasting tin and cook for a further 15-20 mins. Just before serving, heat a dry frying pan until very hot. Tip in the spinach, cook for 20 seconds or so until wilted, then set aside in a colander to drain. Season, then serve with the pork, potatoes and remaining lemon wedges.
