One 1-pound package refrigerated hot breakfast sausage
1 onion, diced
One 2-pound block processed cheese, such as Velveeta
One 10-ounce can diced tomatoes and green chiles
2 cans chopped green chiles
1 jalapeno, diced
Chips, for serving

Steps:

  • Brown the sausage and onion in a large nonstick skillet, breaking the sausage up as you go. Once browned, drain off some of the fat.
  • Chop the cheese block into cubes and add along with the diced tomatoes and green chiles and chopped green chiles, juice and all.
  • Cook over a low heat until it all starts coming together. Then stir in the diced jalapeno. Serve with chips.

  • Place pork sausage in a large, deep skillet. Cook over medium high heat until evenly brown.
  • Drain sausage and stir in onions. Cook until slightly tender, about 2 minutes. Mix in diced tomatoes with green chile peppers. Stirring occasionally, allow the mixture to simmer approximately 15 minutes.
  • Blend cream cheese and sour cream into the sausage mixture. Season with crushed red pepper.

16 oz. package of ground italian sausage (medium to hot)
2 lbs melting cheddar cheese or velveeta (i prefer cheddar)
16 oz jar of chunky salsa
1 t. fennel seed crushed
2 tsp. garlic powder
1 tsp. anise seed, crushed
1/4 tsp. dried basil
corn chips, tostados, garlic toast, garlic pita chips etc for dipping

Steps:

  • 1. In a skillet cook and crumble sausage, till browned and no longer pink. Drain
  • 2. Put cheese in a large microwave safe bowl and microwave on high for 6 minutes or until melted. (Stir every 2 minutes)
  • 3. Add salsa and stir. Add seasonings and sausage. Microwave 2 more minutes or until heated thru.

1 large onion, thinly sliced
1 jalapeno, diced (seeds removed if desired)
2 garlic cloves, finely chopped
1/4 lb fresh chorizo sausage, removed from the casing
3 tablespoons all-purpose flour
2 teaspoons chili powder
1/2 teaspoon ground cumin
12 ounces mexican lager beer
1/4 cup whole milk
4 cups shredded monterey jack cheese (about 1 pound)
1/2 cup loosely packed fresh cilantro leaves, roughly chopped, plus more for garnish
tortilla chips, for serving

Steps:

  • Heat a medium skillet over medium heat. Add 1 tablespoon of the butter, the onion, jalapeno and garlic. Cook, stirring occasionally, until the vegetables soften and begin to caramelize, about 20 minutes. Remove from the heat.
  • Heat 1 tablespoon of the butter in a large saucepan over medium heat. Add the chorizo and cook, breaking it up with the side of a spoon, until well browned, about 5 minutes. Add to the cooked vegetables in the skillet using a slotted spoon. Set aside.
  • Wipe out the saucepan the chorizo cooked in and return it to medium heat. Add the remaining 2 tablespoons butter. When the butter has stopped foaming, stir in the flour, chili powder, and cumin and stir until the flour is absorbed. Whisk in the beer and milk. Bring to a simmer and cook, stirring frequently, until slightly thickened, about 5 minutes. Remove from the heat and stir in the cheese, stirring until completely melted.
  • Transfer the cheese deep to a warmed serving dish, fondue pot or a small slow cooker set to warm or low. Stir the chopped cilantro leaves into the chorizo-onion mixture and dollop it on top of the melted cheese. Garnish with more cilantro leaves. Serve with tortilla chips.

  • Keep the heat under the skillet around medium-low and add olive oil, peppers, shallot and garlic with a pinch of salt. Stir well to coat. Let cook until softened, about 5 minutes, stirring occasionally. Turn the heat up to medium and add beer. After a few minutes, stir in softened cream cheese and continue stirring until it’s melted. At first it will look crumbly and separated, but it will melt! Once it is creamy, add in the white cheddar, stirring again until melted and reducing the heat to low. Stir in the black beans and sausage, then remove from heat and serve immediately. Top with scallions and cilantro if desired.
  • This stays creamy for a good while but like any queso, will seize up after time as it cools. If you can sit it over heat (like in a fondue pot) it will be perfect (with a stir every now and then) but otherwise, it reheats beautifully in the microwave with some additional liquid (beer, water, broth, etc)!
