ZHOUG CHICKEN THIGHS
Zhoug is a spicy, Middle Eastern cilantro sauce that is often used as a condiment or dip. I decided to use it as a way to perk up plain chicken! If you purchase prepared zhoug, this recipe has only 4 ingredients. Yes, it's spicy, but one bite just leads to another!

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish with olive oil.
- Measure 1/2 cup of prepared zhoug and spread over the bottom of the oiled baking dish. Place chicken thighs, cut side down, on top of the zhoug. Sprinkle fire-roasted bell peppers over chicken thighs. Using a spoon, drop remaining zhoug sauce in between the bell pepper pieces, covering as much of the chicken thighs as possible.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Homemade zhoug sauce adds a spicy cilantro kick to any meal! Zhoug is a popular Middle Eastern condiment that's very easy to make. Recipe yields 1 1/4 cup.

- Place the garlic in your food processor and process until the garlic is broken into tiny pieces.
- Add the cilantro, jalapeño (keep the seeds in case you want to make the sauce more spicy after tasting), salt, cardamom, cumin and red pepper flakes. Process until the mixture is all mixed together and very finely chopped.
- While running the food processor, slowly drizzle in the olive oil. Scrape down the sides and blend until the sauce is mostly smooth.
- Adjust to taste-for a spicier sauce, add the jalapeño seeds or additional red pepper flakes (1/4 teaspoon at a time) and blend again. Too bitter? You can add more salt or give the flavors some time to mellow. This sauce's flavor transforms with time, so if it's too spicy or you just don't love it right off the bat, let it chill in the fridge and try it again in an hour.

- Wash and dry the parsley and cilantro.
- Combine parsley, cilantro, garlic, lemon juice and zest, chiles, cumin, coriander, salt, pepper, ice, and 2 tablespoons olive oil in a food processor fitted with a blade. Blend until a smooth paste is achieved, adding more oil as necessary.
- Cover and refrigerate at least 1 hour before serving to allow flavors to meld.

Steps:
- In a food processor, combine the cilantro, parsley, olive oil, cumin, coriander, salt, cayenne, jalapeños, garlic and a few turns of pepper and blend until the mixture is the consistency of pesto, adding more olive oil if desired. Store in the fridge for up to 3 days, or spoon into ice cube trays, freeze and thaw as needed.

- Put oven on 200 degrees fan. Cut potatoes in to half new potatoes size. Boil in a pan for 10-15 min until fork tender. Once cooked drain and leave them to dry.
- While the potatoes are cooking put the baharat on the plate with a pinch of salt and rub the chicken thighs in them.
- Fry the chicken thighs skin side down and cook for 5-7 min until crispy. Put the chicken thighs on a baking tray skin side up and put in the oven for 15 min (or until cooked through ).
- While the chicken is in the oven put the drained potatoes, ground turmeric and coriander seeds in a frying pan and cook for 4 min/ until beginning to crisp. Whilst doing this cook the green beans too.
- Once the potatoes are beginning to crisp add the chopped garlic and chilli and juice of a 1/2 lemon. Cook for 2 min or until fragrant. Serve everything with a dollop of the optional natural yoghurt if you like.

- In a bowl, whisk together the miso, sugar, sesame oil, fish sauce, vinegar, chile powder, garlic and ginger. - In a small, lidded container marinate chicken breasts or thighs by sprinkling liberally with Mrs Dash Seasoning, and covering with Italian Dressing. Let marinate at least 2 hours, or up to overnight.
- Cook chicken to internal temp of 165F. If you’re doing thighs, they’d be great on the grill. If you’re doing breasts, they have a tendency to dry out easily so I’d recommend baking at 425F on a lined baking sheet for 18-22 mins. Once your bird hits about 162F, you can pull off the heat and let it continue to cook as it rests. Note: Make sure to rest your chicken for at least 5 minutes before cutting. If you don’t, you’re likely to have dry meat. :-(
- While chicken is cooking, make rice of your choice according to package directions. We’ve used brown rice, basmati and jasmine, and they are all lovely options. When all water has been absorbed, stir in TJ’s Zhoug Sauce, depending on your heat tolerance.

- The day before (or even the morning before if you have the time), score the thighbones in the chicken. Take each chicken thigh and run a sharp knife down the bone along the meat, without piercing through the other side, in order to expose a little more of the meat around the thigh bone. Use a paper towel to wipe the pieces dry, which helps to get a crispier skin when grilling.
- Put the thighs in a large mixing bowl, sprinkle with salt and mix to coat evenly. Then season with the hawayej. Place each piece skin-side up on a baking sheet or large plate and refrigerate until you’re ready to grill.
- Preheat your grill to have one side with high heat and one side very low or off. You’ll be cooking on the low heat side to start. If using charcoal, light all the coals together and then push them off to one side.
- Shave the cabbage very thinly. It's easiest to use a slicer attachment on a food processor. Otherwise, cut the cabbage into quarters from top to bottom. Slice along the inner stem to remove it. Slice as thin as you can get it but be very careful! Peel back some leaves and do it in smaller batches if you need to cut less at once.

- Roasted Vegetables. Ingredients: 1 sweet potato, 2 carrots, 2 red onions, 1 – 2 tbsp Early Harvest Olive Oil, 1 courgette, 2 bell peppers, 1 tbsp Zhoug. Preheat an oven to 180C and line a large baking tray with foil.
- Frittata. Ingredients: 200g new potatoes, 100g asparagus, 2 tbsp Early Harvest Olive Oil, 1 large onion, 8 eggs, 2 tbsp Zhoug, a handful of fresh coriander, 100g goats cheese.
- Yoghurt Dip. Ingredients: 1/2 cup full fat yoghurt, 2 tbsp Zhoug, (optional) a handful of fresh parsley, mint or coriander. Mix 1/2 cup of full fat yoghurt with 2 tbsp of Zhoug.
- Vinaigrette. Ingredients: 60ml Early Harvest Olive Oil, 2 tsp Zhoug, 1 tbsp lemon juice. Combine the ingredients in a jar and shake well to combine. Works great over salad, stirred through grains, or as a marinade for meat or fish.
- Fish. Ingredients: 2 fillets of white fish (sea bass, hake etc), 1 – 2 tbsp Early Harvest Olive Oil, lemon juice, salt & pepper to taste, 1 – 2 tbsp Zhoug, a handful of chopped parsley.
- Cauliflower. Ingredients: 1 head of cauliflower, 1 – 2 tbsp Early Harvest Olive Oil, salt & pepper to taste, 1 – 2 tbsp Zhoug, fresh coriander. Preheat the oven to to 180C.
- Hummus. Ingredients: 200g Chickpeas, 60ml Tahini, 2 garlic cloves, 2tbsp Early Harvest Olive Oil, 2tbsp lemon juice, a pinch of salt, 2tbsp Zhoug. Place all the ingredients into a blender and blend until smooth.
- Chicken Thighs. 4tbsp Zhoug, 5tbsp yogurt, 1tbsp lemon juice, 5tbsp orange juice, ¼tsp salt, 500g cubed lamb or chicken, Metal or wooden skewer. Combine the Zhoug, yoghurt, lemon and orange juices and the salt in a bowl.
- Grilled Kebab Skewers. Ingredients: 2 bell peppers, 2 courgettes, 1 red onion, 250g diced lamb, 1 – 2 tbsp Zhoug, 1 tbsp Early Harvest Olive Oil. Soak your skewers in water if using wooden skewers.
- Veggie Burger. Ingredients: 2 sweet potatoes, 400g tin of black beans, 2 spring onions, 1 red chilli, 65g flour, salt & pepper to taste, 3 tbsp Zhoug, 4 burger buns, 2 large tomatoes, 1 red onion, vegetable oil for frying.
