HEALTHY SPICED RICE PUDDING
Make a rice pudding infused with hot cross bun flavours for a special (and healthy) Easter treat for the family. Use semi-skimmed milk for 2-5 year olds

Steps:
- Butter the slow cooker all over the base and half way up the sides. Heat the milk to a simmer. Mix the pudding rice and the milk and pour into the slow cooker. Add the orange zest, and spices. Cook for 4 hours on low and stir once or twice if you can. If after 3 hours the rice pudding is beginning to stick to the base of the cook, add a splash of water. The rice will be tender when cooked. Add 100ml milk to loosen the pudding, if necessary.
- Serve topped with orange segments and honey, fruit and raisins, if you like.

Steps:
- Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
- Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
- Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
- Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
- Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
- Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

- Combine the whole corn, the cream corns and the eggs in a bowl and set aside.
- In a separate bowl, combine corn starch, season salt, dry mustard, onion.

- In a heavy saucepan combine the milk, rice, sugar, nutmeg, lemon zest and salt. Bring to a boil, stirring occasionally.
- Reduce heat to low and simmer , uncovered, until rice is tender and mixture begins to thicken, about 20 - 25 minutes, skimming any foam that may come to the surface. Stir in the egg and cook 2 minutes longer.
- Remove from heat and stir in bourbon and vanilla extract. Chill before serving.
- Sprinkle with Cinnamon Sugar before serving.
- CINNAMON SUGAR: Combine cinnamon and sugar and store in a tightly covered bowl.
COUNTRY PUDDING
A recipe I got years ago from the Apple Hill Cookbook and found it was good with other fruit besides apples. It's easy and quick.

- Beat egg and sugar and mix well.
- Sift flour, salt and baking powder and add to egg.
- Mix well.
- Fold in nuts, fruit and vanilla.
- Pour into greased 8-inch pan.
- Bake at 325°F for 30 minutes.
- Cool.
- Serve warm or at room temperature with ice cream or whipped cream.
