A slightly sweet bread good for breakfast, toast or with tea. From The Ultimate Bread Machine book. I use chopped dried cherries or dried cranberries, but the original recipe used raisins. Cook time depends on machine brand.

3/4 cup water
3/4 cup cooked sweet potato, mashed
2 tablespoons brown sugar (dark)
3 tablespoons powdered milk
3 tablespoons butter, cut into pieces
1/2 teaspoon cinnamon
2 pinches nutmeg
1 1/2 teaspoons salt
3 cups bread flour
4 tablespoons rolled oats
2 1/4 teaspoons yeast
3 tablespoons dried cherries, chopped (or raisins)
1/3 cup pecans, chopped

Steps:

  • Place all ingredients except cherries (raisins) and pecans in bread machine pan in order recommended by manufacturer.
  • Set on raisin bread setting. When machine beeps, add cherries and pecans.

2 teaspoons baking powder
¼ teaspoon salt
1 teaspoon ground nutmeg
½ teaspoon ground cinnamon
1 cup white sugar
2 eggs, beaten
½ cup vegetable oil
2 tablespoons milk
1 cup cooked and mashed sweet potatoes
1 cup chopped pecans
½ cup golden raisins

Steps:

  • Preheat oven to 325 degrees F ( 165 degrees C ). Grease an 8x4 inch loaf pan.
  • In a medium bowl, stir together the flour, baking powder, salt, nutmeg cinnamon, and sugar. Add the eggs, oil, and milk; mix until well blended. Finally, stir in the mashed sweet potatoes, pecans, and golden raisins. Pour the batter into the prepared pan.
  • Bake for 70 minutes, or until a toothpick inserted comes out clean. Allow bread to cool in the pan at least 15 minutes before removing. For best flavor, store overnight before serving.

Moist delicious way to use up excess sweet potatoes or yams after the holidays. This is so delicious that it disappeared within minutes. Wrap in aluminum foil to keep the moisture in. Ideally, refrigerate the loaves for 2 hours or more before serving; or can be frozen and served later. Just remove from freezer and allow to thaw while still covered at room temperature for about 4 hours before serving.

⅔ cup white sugar
⅔ cup packed brown sugar
2 cups mashed sweet potatoes
1 (14 ounce) can sweetened condensed milk
4 eggs, beaten
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon ground ginger
½ teaspoon ground cloves
2 cups baking mix (such as Bisquick ®)
2 tablespoons baking mix (such as Bisquick ®)
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5-inch loaf pans.
  • Beat butter, white sugar, and brown sugar together in a bowl until smooth. Stir in sweet potatoes, sweetened condensed milk, eggs, cinnamon, nutmeg, ginger, and cloves until well blended.
  • Place all the baking mix in a large bowl; stir sweet potato mixture into baking mix until batter is just blended. Fold in pecans. Divide the batter evenly between the two loaf pans.
  • Bake in the preheated oven until a knife inserted in the center of the loaves comes out clean, 60 to 70 minutes. Cool loaves in the pans for at least 5 minutes before removing to cool completely on a wire rack, at least 2 hours.

4 sweet potatoes, cut into chunks
1 ⅓ cups white sugar
¾ cup milk
3 eggs, beaten

1 teaspoon vanilla extract

1 ½ cups chopped pecans
¾ cup all-purpose flour
½ cup margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Cover sweet potatoes with water in a large pot; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer potatoes to a large bowl.
  • Mash potatoes with white sugar, milk, eggs, salt, vanilla extract, and cinnamon. Spread mixture in prepared baking dish.
  • Mix brown sugar, pecans, and flour in another bowl. Pour margarine over pecan mixture; toss until mixture resembles coarse crumbs. Sprinkle over potato mixture.
  • Bake in preheated oven until pecan topping is hard, about 1 hour.

2 tsp baking powder
1/4 tsp salt
1/4 to 1/2 tsp nutmeg
1 tsp cinnamon

1 c cooked, mashed sweet potatoes
1 c chopped pecans
1/2 c golden raisins

Steps:

  • 1. Preheat oven to 325. Grease loaf pan.
  • 2. Sift together flour, baking powder, salt and spices in mixing bowl. Stir in sugar, eggs, oil, and milk and blend well.
  • 3. Stir in mashed potatoes, pecans and raisins.
  • 4. Pour batter in prepared pan.
  • 5. Bake 1 hour & 10 minutes or until toothpick comes out clean. May need to cover with foil after 30-40 minutes during baking to prevent over browning of the top.

1/2 cup milk, warm PLUS
2 tablespoons milk, warm
1 egg, lightly beaten
4 1/2 teaspoons butter, room temperature
1/2 cup canned sweet potatoes, drained and mashed
2 tablespoons brown sugar
1/3 cup miniature marshmallow
1 1/2 teaspoons salt
3 cups bread flour
2 1/4 teaspoons active dry yeast

Steps:

  • In your Bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread settings. Choose crust color and loaf size if available.
  • I usually make this on the dough cycle. After removing the dough from the Bread machine, place it in a loaf pan that has been sprayed with Pam. Let rise in a warm place for about 30 minutes (I place the pan on the top of the stove while it preheats). Bake at 350° for about 30 minutes. The loaf will sound hollow when you tap on it when it is done. If using an instant-read thermometer, bread will be 180° - 190°.
  • Serve warm with butter.

TOPPING:
1/2 cup packed brown sugar
2 tablespoons all-purpose flour
1/4 cup cold butter, cubed
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the first 7 ingredients; beat until light and fluffy. Transfer to a greased 11x7-in. baking dish. , For topping, combine the brown sugar and flour in a small bowl; cut in butter until crumbly. Fold in pecans. Sprinkle over sweet potato mixture. , Bake, uncovered, at 350° for 30-35 minutes or until a thermometer reads 160°.

4 eggs, plus
6 egg yolks
1 cup granulated sugar
3/4 cup brown sugar

2 cups whipping cream

1 teaspoon ginger
1/2 cup raisins
1/2 cup pecan pieces
1/4 cup melted butter
8 cups crusty French bread (cut into 2 inch cubes) or 8 cups european bread (cut into 2 inch cubes)
2 cups whipping cream
1/4 cup good-quality maple syrup

Steps:

  • Preheat oven to 350 degrees.
  • Pierce sweet potatoes with a small knife or fork.
  • Place on a baking sheet and roast in the oven for 45 minutes or until they test soft when pricked with a knife or fork. (or, to microwave, pierce potatoes and place in a microwave safe dish; microwave on high 6 minutes per pound.).
  • Do not overcook.
  • Let cool.
  • When cool enough to handle, peel potatoes.
  • Dice into 1-to-1-1/2- inch pieces.
  • There should be four cups diced potatoes.
  • Reserve 2 cups;mash remaining potatoes witha large spoon or wire whisk.
  • In a large bowl, combine mashed potatoes, eggs, egg yolks, sugars, salt,milk,cream,cinnamon,ginger,raisins,pecan pieces and butter.
  • Gently toss bread and reserved potatoes with mashed potato mixture.
  • Pour into a 11x9 baking dish.
  • Cover with foil.
  • Set a larger pan on middle rack of oven;place baking pan in it and fill with enough hot water to come halfway up sides of smaller pan.
  • Bake 45 minutes or until a knife inserted in center comes out clean.
  • Remove foil and let top brown slightly, about 5 more minutes.
  • Remove from water and cool to room temperature,or keep warm until ready to serve.
  • Serve with a dollop(or more~)of Maple Whipped Cream.
  • For the Maple Whipped Cream.
  • 2 Cups whipping cream(chill cream,bowl and beaters well).
  • 1/4 cup good-quality maple syrup.
  • In a medium bowl or mixer, whip cream to soft peaks.
  • Add syrup; whip until incorporated.
  • Refrigerate until ready to serve.
  • Makes 6 to 8 servings.
