Easy Mexican Dip with Cream Cheese image

You won't be able to resist this cheesy baked Mexican Dip with cream cheese, fresh salsa and melted cheese!

16 ozs lite cream cheese, left at room temperature for about 15 minutes to soften
16 ozs fresh tomato salsa, medium spice
2 cups shredded Mexican cheese blend
Tortilla chips for serving

Steps:

  • Preheat oven to 350 degrees.
  • Spread the cream cheese out to cover the bottom of a baking pan. 9 by 5 inches and 2 to 3 inches deep or thereabouts works well.
  • Scoop the salsa onto the cream cheese layer and spread even across the cream cheese to cover it.
  • Sprinkle the cheese around the pan to cover the salsa.
  • Place the baking pan in the oven. Bake uncovered for 25 minutes.
  • Remove dip from oven and serve along with tortilla chips. We typically have it served right from the pan. Enjoy!

2 (16 ounce) packages frozen corn
2 (8 ounce) packages cream cheese, softened
2 cups shredded Mexican-blend cheese
2 (4 ounce) cans diced jalapeno peppers
6 slices bacon, or more to taste
2 cups shredded Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Combine corn, cream cheese, Mexican-blend cheese, and jalapeno peppers in a bowl; mix until thoroughly combined. Transfer to the prepared baking dish.
  • Bake in the preheated oven for 20 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop when cool enough to handle.
  • Remove dip from the oven. Top with chopped bacon and shredded Parmesan cheese. Return to the oven and bake until cheese has melted, about 10 more minutes.

1 (8 ounce) container sour cream
1/2 teaspoon hot sauce
1/2 teaspoon soy sauce
2 teaspoons lemon juice
1 (16 ounce) jar salsa
1 bunch green onion, finely chopped
1 (2 ounce) can black olives, sliced
1/2 head iceberg lettuce, shredded
8 ounces cheddar cheese, grated
2 tomatoes, seeded and finely chopped

Steps:

  • Mix together cream cheese, sour cream, hot sauce, soy sauce and lemon juice until smooth.
  • Spread cream cheese mixture on bottom of glass baking dish (seeing the layers makes a nice presentation).
  • Layer the salsa evenly over the cream cheese mixture, then green onions, olives, lettuce and grated cheddar.
  • End with tomatoes spread evenly over lettuce.
  • Serve with tortilla chips or Fritos Scoops.

1 (12-ounce) can stewed tomatoes with juice
4 to 6 cloves garlic
3 whole fresh jalapenos
1 whole medium white onion
2 to 3 tablespoons chopped fresh cilantro
4 to 6 fresh Roma tomatoes
Kosher salt
Fresh ground pepper
1/2 lime, juiced
1 1/2 pounds ground beef
1 large chopped onion
1 or 2 chopped jalapenos
1 tablespoon freshly chopped garlic
Salt and pepper
2 pounds velveta cheese, cubed
1 can cream of mushroom soup
1/4 cup whole milk
Tortilla chips

Steps:

  • Puree stewed tomato juice only, garlic and 2 jalapenos in a blender or processor. Finely chop the onion, 1 jalapeno, 2 to 3 tablespoons of cilantro and 4 to 6 Roma tomatoes. Roughly chop the stewed tomatoes. Mix all these ingredients in a large bowl. Season with kosher salt, fresh ground pepper and lime juice.;
  • Cook the ground beef, onion, jalapenos, garlic and dash of salt and pepper. Drain excess fat in a small bowl. Add the beef mixture to slow cooker and put on medium setting. Keep hot. Add cubes of cheese, cream of mushroom soup and milk and stir. Next add 2 cups of the salsa mixture to the cheese mixture. Can be kept warm for 1/2 hour or longer. Serve with chips.

Creamy, spicy and tangy, this spread is served with tortilla crisps and can be accompanied by a fresh tomato salsa of your choice. I first tasted it with pre-dinner drinks at a Mexican-themed dinner party, and asked for the recipe. You can decide how 'chilli hot' you want it by varying the amount of chilli. It will be much hotter if you include the chilli seeds. Preparation time does not include chilling.

1 (8 ounce) package cream cheese, at room temperature and chopped roughly
1 tablespoon mild sweet chili sauce
1 clove garlic, crushed
1 tablespoon lime juice
1/2-1 small fresh red chile, chopped (with or without seeds - your preference)
1 -2 green onion, chopped
1 tablespoon chopped fresh parsley (or fresh cilantro)
2 tablespoons shelled pistachio nuts, toasted lightly and chopped
4 8 inch tortillas
vegetable oil, for shallow frying
1 -2 cup fresh salsa, as an accompaniment

Steps:

  • In a small bowl, beat cheese until smooth and creamy with an electric mixer.
  • Next, add the chilli sauce, garlic, lime juice, fresh chilli and green onion, and beat again until combined.
  • Spread a sheet of plastic wrap on your kitchen work surface, place cream cheese mixture on it, and shape into a 3 to 4 inch square.
  • Enclose the shaped cheese in the plastic wrap, and chill in refrigerator for at least 1 hour (and up to a maximum of 24 hours).
  • While cheese is chilling, cut each tortilla into 12 wedges.
  • Shallow fry the wedges in hot vegetable oil until puffed and lightly browned.
  • When cool, these can be stored in an airtight container for up to 24 hours before serving.
  • When ready to serve, roll cheese in combined parsley (or cilantro) and nuts.
  • Place cheese, fresh salsa and tortilla crisps in serving dishes and enjoy.

2 cups Mexican blend cheese (or half cheddar cheese, half monterey jack)
1 cup hot Pace Picante Sauce or 1 cup favorite spicy salsa

2 cups of fresh salsa or 2 cups grocery store deli salsa
2 cups of cooked bay shrimp
1/4 cup fresh cilantro leaves

Steps:

  • Whip softened cream cheese in a food processor for approximately 2 minutes, or until fluffy and no lumps are present.
  • Add salsa and cilantro leaves.
  • Blend again for approximately 1 minute, until mixture is an even color.
  • Add shrimp and mix only long enough to incorporate into mixture (over mixing will cause shrimp to break up into small pieces).
  • Transfer mixture to glass bowl or serving dish and refrigerate for approximately one hour.
  • Garnish with a few cilantro leaves.
  • Serve chilled with corn chips.
