This German Apple Cake is a moist dense cake that keeps well. It has been a family favorite for twenty years.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch cake pan.
- In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
- Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 45 minutes or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners' sugar or with a Cream Cheese Frosting.

Steps:
- Preheat oven to 220°C. Grease a springform tart pan (Ø 24 cm) with butter.
- Cream together butter, sugar, vanilla with an electric mixer until light and fluffy. Add the flour and beat together until JUST combined, and forms a dough. Do not overmix.
- Press the crust mixture into the flat bottom the springform pan, with 2,5 cm up the side of the pan. Set aside. (dust fingertips in flour, if necessary to stop from sticking to fingers).
- In a medium bowl, whisk egg and vanille zucker together until well combined. Add the quark and whisk together until incorporated. Pour cheese mixture over crust. Using a spatula, spread the mixture evenly over the base.
- For the topping: Place apples in another bowl. Sprinkle with brown sugar and cinnamon. Toss the sliced apples with the sugar mixture until well coated with the sugar mixture. Spread the apples over the quark filling in a circular pattern, starting from the outside and working in a circle, slightly overlapping. Scatter almonds on top.
- Bake on middle rack, for 10 minutes. Reduce heat to 190°C and continue baking for 25 minutes. Until center set and the sides are golden brown. Transfer to a cooling rack to cool slightly before removing from pan.
- Serve warm or wait until cooled completely. Enjoy!

GERMAN APPLE CAKE (WIENER APFELKUCHEN)

- Gather the crust ingredients.
- Whisk together flour, sugar, and baking powder in a medium bowl.
- Cut in cold butter for pie dough until small crumbs form.
- Use 4 to 6 tablespoons of the egg-water mixture to moisten the crumbs. Stir just until the mixture forms a ball. Wrap in plastic and refrigerate 30 minutes.
- Gather the batter ingredients.
- Cut each quarter apple into 3 long pieces, then cut crosswise into small trapezoids. Sprinkle with lemon juice, toss and set aside.
- Beat together softened butter with sugar in a mixing bowl until light and fluffy. Beat in egg and lemon zest.
- Whisk together flour with baking powder (and a dash of salt if using unsalted butter) in a separate small bowl. Add to creamed butter mixture alternately with whipping cream and beat until smooth. Set aside.
- Preheat oven to 350F. Butter an 11-inch springform pan and sprinkle with breadcrumbs or flour, shaking out excess.
- Roll out the crust and line the pan, piecing crust as necessary to form a 1- to 1 1/2-inch lip.
- Place drained apple slices in the crust.
- Spoon cake batter over apple slices as if setting dumpling batter on a stew, then smooth over apples to edges.
- Sprinkle 2 tablespoons almond slices then 4 tablespoons granulated sugar evenly over batter.
- Bake for 1 hour in the preheated oven, then turn off the oven and leave the cake for another 15 minutes. The crust should be golden brown and filling should be moist but set.
- Allow cake to cool completely in the pan for best taste. Serve with whipped cream . Refrigerate any leftovers.

Steps:
- Cut peeled apples into quarters, then each quarter into 5 pieces, then partically cook apple with sugar, keep hot.
- Sift flour into bowl, rub in butter, add sugar, then egg and mix to soft dough.
- Roll out half the pastry and line large, deep flan.
- Spread apples to within 1/2" of top of flan tin.
- Grate remainder of pastry over top and bake 25-30mins at 220 deg C (425 deg F).
- Serve hot or cold, with cream, custard or ice-cream.

Steps:
- TO MAKE THE FILLING: Peel, core and quarter apples; cut each quarter crosswise into 5 or 6 pieces.
- Place in empty saucepan; stir in 1/2 cup of the sugar.
- Cover and simmer for 7 minutes or until apples are partially cooked.
- Place in sieve to drain.
- TO MAKE THE PASTRY: In bowl, combine flour, sugar, baking powder and salt.
- Cut in butter until mixture resembles fine crumbs.
- Lightly beat together egg and vanilla.
- Stir into flour mixture and mix well until ball of soft dough forms.
- (If dough seems too stiff, add a few drops of water.) Rolls out half the pastry to about 1/8 inch thickness and cut to fit bottom of lightly greased 8-inch springform pan.
- Place drained apples on top of pastry, leaving 1/2 inch space between apples and inside edge of pan.
- Crumble remaining pastry dough into currant-sized crumbs.
- Drop half the crumbs into the space between apples and edge of pan.
- Flatten top surface of apples and sprinkle with remaining pastry crumbs.
- Sprinkle torte with remaining sugar.
- Bake in 425 F.
- oven for 25 to 30 minutes or until well browned.
- Remove hinged ring and serve torte on pan base.
- Serve warm, garnished with whipped cream.
- Makes 8 servings.

- Preheat oven to 350°. Grease and flour a 10-in. tube pan. Combine the first 3 ingredients; set aside. , In a large bowl, beat eggs and sugar. Combine oil and orange juice and add alternately with dry ingredients to egg mixture. Beat until smooth; add vanilla and beat well. , Pour half of the batter into prepared pan. - Preheat the oven to 375 degrees Fahrenheit. Butter an 8-inch square pan or equivalent-size baking dish.
- In a small bowl, whisk together the flour, baking powder, and salt. In a medium bowl, cream together the butter and 1 cup of the sugar. Stir in the eggs and vanilla. Add the flour mixture and beat until combined. Spread the mixture evenly in the prepared pan.
- In a small bowl, combine the remaining 1/3-cup sugar with the cinnamon. Squeeze lemon juice into a medium bowl. Peel, core, and slice the apples into the bowl. Add the cinnamon-sugar mixture and toss to thoroughly coat each apple slice. Arrange the apple slices on top of the batter in overlapping rows, pressing lightly into the batter. Bake for 45 minutes, until a cake tester or toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 10 to 15 minutes before serving.
GERMAN APPLE TART (APFEL TARTE)
A beautiful, easy, and delicious German tart that is not too sweet. Creme Fraiche adds a decadent and important note (no substitutions!). A recipe I often make for entertaining. Be careful to use a light hand while cutting the apple quarters so the knife does not cut all the way through the apple.

- Combine the ingredients for the dough until its smooth. Wrap in foil and let rest in the refrigerator for at least 1 hour. Peel, core, and cut the apples into quarters. With a sharp knife cut each quarter apple in its round side several times lengthwise. Don't cut the apple all the way through. Combine 2 tablespoons sugar, lemon juice and Calvados or apple cider. Pour over the apples and let them marinate for 1 hour.
- Roll 2/3-3/4 of the dough out into a 9 inch round. Set into a 9 inch springform pan. Use the rest of the dough to create a small edge along the inner walls of the form. Using a fork punch tiny holes into the bottom of the unbaked crust. Bake at 350° F for 10-12 minutes. Place the apples in a sieve or colander. Make sure to catch the escaping juice in a small bowl. Combine this juice with the Creme Fraiche and stir until smooth and consistent.
- Sprinkle the remaining 2 tablespoons of sugar over the baked crust. Arrange the partially sliced apple quarters on the crust round side facing upwards. Pour the Creme Fraiche mixture over the apples. Bake at 350° F for 35 minutes or until lightly browned. Garnish with chopped almonds or nuts if desired. Serve with whipped cream, vanilla ice cream,sweet Creme Fraiche, or plain.
- Variations: substitute fresh peaches or pears. Instead of calvados or apple cider use peach or pear schnapps.

This is a fairly simple and very elegant apple tart in a deliciously thick crust with spirals of apple wedges graced with a delicious cinnamon-sugar topping. I wanted a safe place to keep it and my mom's paper copy is pretty tattered from so many uses! The cake/crust part is good for a variety of other recipes too (a quick pat-in-the-pan quiche crust, for example).

- Preheat oven to 350 degrees F.
- Cake/Crust: Mix dry ingredients and cut in butter as for a pie crust (mixture should be "sandy" with small pea-sized lumps of butter).
- Add egg and milk and mix well.
- Pat into the bottom and halfway up the sides of a 11 1/2 X 7 1/2 baking dish (I use large ceramic quiche pan).
- Filling: Arrange apple slices in a spiral around pan (I start outside and work in, eventually cutting pieces to fit).
- Topping: Mix topping ingredients and spread over apples. Bake for about 40 minutes or until apples are tender.
- Toward the end of the baking time you can also run it under a broiler to nicely brown the edges of the apples for the extra "wow" factor.

- Mix together the butter, 1/2 teaspoon vanilla extract, all-purpose flour, and 1/2 cup of sugar in a bowl. Press the mixture into the bottom of an ungreased 9-inch springform pan.

- Combine 14 tablespoons butter and sugar in a large bowl; beat with an electric mixer until smooth and creamy.
