- Pasta: Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and transfer to a large serving bowl. Add the butter and parsley and toss until coated. Season with salt and pepper, to taste.
- Sauce: In a large skillet or saucepan, heat the oil over medium-high heat. Add the shallots and season with salt and pepper, to taste. Cook, stirring frequently, until soft, about 3 to 4 minutes. Add the garlic and cook for 30 seconds until aromatic. Add the wine and simmer until the liquid has reduced by half, about 2 minutes. Stir in the broth, red pepper flakes, clams and mussels. Season with salt and pepper, to taste. Bring the mixture to a simmer. Cover the pan with a tight-fitting lid and cook until all the shellfish have opened, about 5 to 8 minutes. Discard any unopened shellfish.
- Using tongs, remove the shellfish from the pan and reserve. Season the cooking liquid with 2 teaspoons of salt and 1 teaspoon pepper. Pour the shellfish cooking liquid over the pasta and toss well. Season with salt and pepper, to taste. Arrange the reserved shellfish on top of the pasta and serve.

- Bring a medium pot of generously salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water; drain.
- Meanwhile, heat oil in a large pot over medium heat. Add garlic and red-pepper flakes and cook, stirring, 30 seconds. Add wine and bring to a simmer. Increase heat to medium-high and add clams. Cover and cook just until clams open, 4 to 5 minutes. Discard unopened clams.
- Stir in butter and parsley leaves and stems. Add pasta and toss to coat, adding reserved pasta water 1 tablespoon at a time, until sauce is loose and creamy. Season with salt and pepper.

Top with prosciutto, if desired. Drizzle with olive oil and garnish with parsley sprigs.

- Put a pan of water on to boil. While that's happening, sort through your cleaned clams and if there are any that aren't tightly closed, give them a sharp tap. If they don't close, throw them away. Put a large pan with a lid on a high heat and let it heat up. Finely slice the parsley stalks, then put them to one side and roughly chop the leaves. Peel and chop the garlic, quarter the tomatoes and get your wine ready.
- Add the pasta to the boiling water with a good pinch of salt and cook according to packet instructions until al dente. About 5 minutes before your pasta is ready, get ready to start cooking - you'll have to be quick about this, so no mucking about! Put 4 generous lugs of extra virgin olive oil into the hot pan and add the garlic, parsley stalks and a good pinch of salt and pepper. Crumble in the dried chilli and add the chopped tomatoes. Stir everything around constantly and just as the garlic starts to colour, tip in the clams and pour in the wine. It will splutter and steam, so give everything a good shake and put the lid on the pan. After about 3 or 4 minutes the clams will start to open, so keep shuffling the pan around until all of them have opened. Take the pan off the heat. Get rid of any clams that haven't opened.
- By now your pasta should be just about perfect. Drain and add to the pan of clams along with the parsley leaves and an extra drizzle of extra virgin olive oil. Stir or toss for a further minute or two to let the beautiful seashore juices from the clams be absorbed into the pasta. Serve right away. No sane Italian would eat this dish without some fresh hunks of bread to mop up the juices. Beautiful!
- PS The first time you make this it will be good, but you might find things don't come together exactly at the right time. But don't worry, this dish is all about confidence and the more you make this, the more you'll find the pasta and clams are ready and perfect at the same time. And then it will be great!

SPICY LEMONY CLAMS WITH PASTA

- Fill a large stockpot three-quarters full of water, and add 1 tablespoon salt. Bring to a boil over high heat, and add pasta. Boil until pasta is al dente, 7 to 8 minutes, and drain well. While pasta is cooking, prepare sauce.
- In a large skillet over medium-low heat, heat olive oil. Add garlic, and saute just until garlic is translucent, about 2 minutes. Add clams and wine, and cover immediately. Raise heat to medium-high. Shake pan often, and check clams after 4 minutes. If any have opened, transfer them to a bowl so they do not overcook. Simmer remaining clams until all have opened.
- In a large serving bowl, combine clams and broth from pan. Add pepper flakes, lemon zest, lemon juice, parsley, and salt and pepper to taste. Mix well. Add drained pasta, and toss well. Serve in soup bowls, accompanied by hot sourdough toast.

SPAGHETTI WITH CANNED CLAMS

- Drain the chopped clams reserving the clam juice and set aside. You will yield about 1 1/2 cups clam juice.
- Bring a pot of water to a boil and cook the pasta to al dente(one to two minutes under time recommended in package). Reserve about 1/2 cup of the pasta water right before you drain the pasta in case you need it for the sauce.
- In a large skillet, heat the butter and a few tablespoons olive oil to medium. Add the garlic and crushed red pepper if using. (See Note) Cook for four to five minutes or until the garlic slices start to turn golden.
- Add the wine, turn the heat up to medium high and allow one to two minutes for the alcohol to cook off. Add the clam juice (Not the chopped clams), the lemon juice and season with salt and pepper. Once the liquid starts boiling reduce the heat to medium. Check your pasta. Reserve your pasta water and drain. If your clam sauce is done and your pasta is not, turn off the heat until your pasta is ready.
- When the pasta is done, drain and add to the skillet with the clam sauce. Add the chopped clams and chopped parsley and toss. It will seem like a lot of sauce but it will thicken and be absorbed by the pasta over time. You shouldn't need more liquid but if you feel it needs it, add some of the pasta water a little at a time. I like to add extra drizzles of olive oil before serving. Taste and adjust according to your liking for more salt and/or lemon juice. Plate and serve.
SPICY CLAM PASTA WITH BACON, PEAS AND BASIL
In a pinch, canned baby clams make a very decent pasta ingredient. There is great variation between different brands of canned clams - some are not salty at all, so bear that in mind when seasoning. The liquid in the cans is not needed here, but you may save it for another purpose if you wish.

- Put basil, parsley and garlic in a mortar or food processor. Add salt and pepper to taste and 1/4 cup oil. Pound or whiz to obtain a bright green purée.
- Put a pot of water on to boil and make it very salty. (It will boil faster with the lid on.)
- Over medium heat, render bacon in its own fat until browned and crisp but not hard, 5 to 8 minutes. Remove with a slotted spoon and set aside. Pour off fat but leave a small amount in the pan, just to coat the bottom.
- Increase heat to medium-high, add 2 tablespoons olive oil, the clams, serrano chile and red pepper. Season with salt and pepper and cook for 2 minutes, stirring and coating clams well. Add peas and warm through, then turn off heat.
- Boil pasta and cook until slightly underdone. Drain pasta and add to pan with clams. Turn heat to medium-high and stir all together. Add a splash of pasta water, if it seems dry. Add basil purée and toss well. Top with bacon and reserved basil leaves. Pass lemon wedges.
LINGUINE WITH LEMON CLAM SAUCE
This is an easy, wonderfully flavoured pasta dish that can be whipped up in no time for an intimate dinner for two. Recipe is easily doubled. I use my non-stick wok as it is big enough for tossing the pasta and sauce together in and the sauce gets distributed better throughout that way.

- I usually make this in my non-stick wok.
- Heat oil and butter on medium heat and saute onion and garlic until soft and tender, not brown.
- Add basil and bay leaf.
- Pour in wine, lemon rind, lemon juice and reserved clam juice.
- Simmer until reduced a little (by about a third).
- Add clams and heat through.
- Toss in the cooked linguine a little at a time (don't make the mistake of adding too much or the sauce will be lost!) and lastly add the cheese and parsley.
- Serve with more cheese on the side and red pepper flakes (optional) and warm garlic bread.

- Cut zucchini and tomatoes into 1/2-inch pieces and keep vegetables separate. Chop onion and mince garlic.
- In a heavy kettle heat oil over moderately high heat until hot but not smoking and sauté uncooked pasta, turning occasionally, until golden, about 2 minutes. - In a large pot, bring to a boil 6 quarts of salted water. Add pasta, stirring constantly in the beginning to prevent it from sticking together. Cook until al dente, about 8 minutes.
- Meanwhile, heat the olive oil in a large saute pan. When almost smoking, add shallots and garlic and saute until soft and translucent, about 3 to 4 minutes, being careful not to burn the garlic. Add the clams and wine. Cover and simmer for 6 to 8 minutes or until most clams have opened.
- Add 2 tablespoons chopped parsley. Whisk in butter to thicken sauce slightly.
- Drain pasta in a colander. Do not rinse pasta with water - this will remove the pasta's natural starches. Place pasta into the clam saute pan and mix thoroughly. Check seasoning.
- Pour pasta into large serving bowl. Zest lemon over the dish, being carefull not to zest the white part of the lemon, which is bitter. Garnish with remaining parsley. Serve immediately.

- Soak the clams in cold water. Scrub the shells with a brush. Rinse with cold water, drained and set aside.

- Bring a large pot of salted water to a boil. Meanwhile, heat the olive oil in a large skillet over medium-high. When hot, add the pancetta and shallots. Saute for 1-2 minutes, then add the garlic and rosemary. Saute another 1-2 minutes.

- Bring a large pot of water to a boil, then add about 1 Tbsp kosher salt. Add tagliatelle, then cook according to package directions, or until al dente. Reserve about ½ cup of pasta water, then drain pasta and set aside.

- Add clams to a large bowl and cover with cold water. Add in two teaspoons of salt. Stir and let clams sit for about 10 minutes. Use your hands to remove the clams from the water and into a colander, pour the water and any accumulated sand out. Repeat process two more times.(I like to prep all of my ingredients while the clams soak and make any sides I'll be serving.)
- Heat a large pot to a medium heat. Add olive oil. Add 1/2 of the garlic and cook for about 30 seconds to one minute or until it's slightly softened. Be careful not to burn. Add white wine, water and clams. Stir and bring mixture to a boil. Reduce the heat to a simmer and over. Cook for about 8-10 minutes or until the clams open up.
- Use a slotted spoon to spoon the clams out. Discard any clams that did not open. Bring the wine mixture to a boil and then reduce to a simmer. Simmer for 4-5 minutes until slightly reduced. Pour liquid into a liquid measuring cup and reserve. Wipe pan clean. Remove all clams from shells and set aside. (If you want a pretty presentation only remove about 3/4 of the clams from the shells.
- Bring another large stock pot filling with water to a rolling boil while you cook the rest of the sauce.

- Heat a large 12” stainless steel frying pan over medium heat. Add enough olive oil to coat the bottom. Pat the shrimp dry and season with a pinch of salt. When the oil is hot, place the shrimp into the pan in one, even layer. Sear on one side until slightly golden, then flip and sear until just cooked through. Transfer the shrimp to a plate.
- Add a little bit more olive oil to the pan, along with the shallots. Cook for a few minutes until slightly caramelized. Add the fennel and continue to cook until fully caramelized. Season with a pinch of salt. Stir in the garlic and red pepper flakes. Let cook for a few seconds longer.
- Add the white wine. Stir well, bring to a simmer, reduce the heat to medium-low, and cook for about 3 minutes or so. Add the crushed tomatoes. Continue to simmer for about 5 minutes.
- Meanwhile, drop the linguine in a large pot of boiling salted water. Stir the pasta well and boil for 1 minute less than the package’s instructions.
