We have been given some fresh corn by friends, since it was so fresh I didn't want any of the corn flavour to be removed so I boiled the corn. This dish is simple yet quick could be used as a side dish or plate filler.

1 corn on the cob, remove husks
water
1 tablespoon butter (optional) or 1 tablespoon margarine (optional)
salt, to taste (optional)
ground black pepper, to taste (optional)

Steps:

  • In a large pot, enough to hold the corn, fill it with water to cover the corn (the corn should float).
  • On a medium heat allow the pot of water to boil. Once the water is boiled, add in the corn into the pot and cover. Cook for 10-15 minutes depending on how soft you want your corn.
  • Drain water and remove corn on the cob. Be careful as cob will be extremely hot.
  • Top the corn with preferred seasons, herbs and spices. I prefer salt, pepper and butter.
  • Enjoy.

  • Fill a large saucepan half full with water; bring to a boil. Add corn; cover and cook for 5-7 minutes or until tender. , Meanwhile, in a small saucepan, heat oil and butter over low heat until butter is melted. Stir in the jalapeno, cumin and pepper. Drain corn; brush with butter mixture.

1/2 cup fresh basil leaves, chopped
1/2 cup fresh parsley leaves, chopped
8 cloves garlic
Zest of 1 lemon
Pinch kosher salt
Freshly ground black pepper
2 sticks butter, softened
Oil, for oiling grill
6 ears corn, shucked and silks cleaned

Steps:

  • In a food processor, combine the basil, parsley, garlic, lemon zest, a big pinch of salt and a few grinds of pepper. Pulse until everything is thoroughly chopped and combined. Add the butter and pulse until thoroughly mixed. Scrape the butter mixture out of the food processor onto a piece of plastic wrap or parchment paper and form into a log. Store in the refrigerator until ready to use.
  • Preheat a grill or a grill pan for medium-high heat. Lightly oil the grill grates. Grill the corn, rotating it as it cooks, until lightly charred in places, 3 to 4 minutes per side.
  • Remove the corn from the grill, smear each ear with a generous amount of the herb butter and serve.

  • Cut each shucked ear of corn into 2-inch pieces and place in a pot just large enough to fit the corn snugly. Add enough water to cover the corn.
  • Add the salt, black pepper, Scotch bonnet pepper, butter, and garlic. Bring to a boil over high heat, cover, and reduce the heat to medium-low. Simmer for 30 minutes. The corn came out of the pot full of flavor. For once I didn't have to slather any butter on as the corn already had a rich buttery taste from the milk butter bath. I just added a little salt (you can add a dash of pepper, too, if you'd like) and it was some of the best corn I've tasted. It only took 13 minutes in total (five minutes to prep and eight minutes to cook) which was time well spent waiting for this unbelievably fresh and flavorful buttered corn.
