rich , creamy kids love it.. but then there isnt much they dont like lol GREAT for using up that leftover ham as a foot note. I was going to take a picture after making it tonight.. I served the kids and we ate . I go upstairs to get the camera and by the time I had gotten back downstairs they demolished it..so no pictures :

3 Tbsp butter
2 Tbsp flour
1 tsp salt
1 tsp pepper
2 clove pressed or minced fine garlic
1 chicken bouillon cube
1-3 tsp cajun seasoning (depending on how much kick you like)
3 c milk
6 medium potatoes sliced thin (if you have the gadget that makes waffle fries. its great you get little pockets in the taters)
1 medium onion ( vidalia , sweet onions are great but any onion will work)
1 can(s) mushroom soup
worcestershire sauce .. splash
1 tsp mustard
2 c ham , cubed into small bite size pieces

Steps:

  • 1. in large deep pan ( I use the deep cast iron) melt butter and add garlic, salt , pepper, cajun spice, bouillon cube. stir in flour to make paste over med heat.
  • 2. add @ 1/4 cup of milk to paste to thin then slowly add remaining milk while whisking.. whisk whisk whisk over med high heat ... after smooth allow to cook for about 15 minutes , whisking occasionally .
  • 3. once the sauce is thickened , almost gravy like .. add mushroom soup, Worcestershire and mustard stir and continue to cook over low for 2 minutes
  • 4. add ham, onion and potatoes to sauce. Stir to coat and pour into buttered baking dish.
  • 5. Cover and bake at 350 for 45 minutes. UNCOVER and bake for 15 -20 minutes more or until the taters are soft ( it depends on the thickness of the taters the thinner the shorter the time ) let rest for @ 5 -10 minutes DIG IN!

3 tablespoons butter
1 small yellow onion, diced
3 tablespoons all-purpose flour
1 cup half-and-half
½ cup whole milk
salt and ground black pepper to taste
1 teaspoon garlic powder
½ teaspoon Worcestershire sauce
½ teaspoon onion powder
¼ teaspoon paprika
4 large russet potatoes, peeled and thinly sliced
1 ½ cups chopped hickory smoked ham
½ cup grated Cheddar cheese
½ cup grated Monterey Jack cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.
  • Melt butter in a large skillet over medium heat. Add onion; cook and stir until starting to soften, 3 to 4 minutes. Sprinkle flour over onion and whisk together. Cook until golden brown, about 2 minutes. Stir in half-and-half and milk; whisk until thickened, 3 to 4 minutes more. Remove from heat; season sauce with salt and pepper. Add garlic powder, Worcestershire sauce, onion powder, and paprika.
  • Place half the sliced potatoes into the baking dish; top with half the chopped ham. Sprinkle half the Cheddar cheese and half the Monterey Jack cheese on top. Pour in half the sauce from the skillet. Repeat layering the remaining potatoes, ham, cheeses, and sauce, ending with a layer of cheese and sauce. Cover dish with aluminum foil.
  • Bake in the preheated oven for 40 minutes. Remove the foil and bake until the cheese on top is golden and sauce is bubbling, 20 to 30 minutes more.

1-1/2 cups fat-free milk
1/2 cup shredded reduced-fat cheddar cheese
2 pounds red potatoes, peeled and thinly sliced (about 4 cups)
1 cup thinly sliced onions, divided

Steps:

  • Preheat oven to 350°. In a small saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Remove from heat; stir in cheese until melted., Coat an 8-in. square baking dish with cooking spray. Place half of the potatoes in dish; layer with 1/2 cup onion and half of the cheese sauce. Repeat layers. , Bake, covered, 50 minutes. Uncover; bake until bubbly and potatoes are tender, 10-15 minutes longer.

This is what we call quick and easy comfort. This deliciously creamy ham and scalloped potato casserole recipe goes with almost every dinner and only requires 20 minutes of prep, followed by a slow bake in the oven-making this hearty side dish your perfect go-to recipe for potatoes.

4 tablespoons butter
1 small onion, finely chopped (1/4 cup)
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups milk
6 medium peeled or unpeeled potatoes, thinly sliced (6 cups)
1 1/2 cups cubed fully cooked ham

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray.
  • In 2-quart saucepan, melt 3 tablespoons of the butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
  • Mix potatoes and ham in casserole; gently press down so surface is even. Pour sauce over potato mixture. Cut remaining 1 tablespoon butter into small pieces; sprinkle over potatoes.
  • Cover and bake 30 minutes. Uncover and bake 1 hour to 1 hour 10 minutes longer or until potatoes are tender. Let stand 5 to 10 minutes before serving (sauce thickens as it stands).

Place the potatoes and onions into a pot. Add enough water to cover the potatoes. Add 1 teaspoon of salt to the potatoes. Cook potatoes over medium-high heat for about 10 minutes. The potatoes are done when they are fork-tender.
  • Prepare the sauce by adding the butter and flour to a medium-sized pot over medium heat. Cook the flour and the butter together for about a minute. The roux is done when it begins to smell like pie crust. Add 1/3 of the milk to the roux and stir until the roux becomes thick. Add in the next 1/3 of milk and stir until the sauce becomes thick. Repeat with the last remaining milk. Season sauce with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. When potatoes are done, drain and place into a small baking dish. Pour sauce over potatoes.
  • If desired add shredded cheese to potatoes and bake for approximately 25 minutes or until the top begins to brown.
