1 large head broccoli, florets only
1 c chopped red onions
1/2 c white raisins
1/2 c chopped pecans
1/2 lb bacon, cooked crisp and crumbled
DRESSING INGREDIENTS
2 Tbsp red wine vinegar
3/4 c mayonnaise
1/2 c sugar

Steps:

  • 1. In a large bowl, combine the broccoli florets, onions, raisins, pecans and bacon.
  • 2. In a small bowl, combine the dressing ingredients, the vinegar, mayonnaise and sugar.
  • 3. Mix well and pour over broccoli mixture.
  • 4. Toss gently, refrigerate, covered, overnight and toss gently the next day when ready to serve.

Steps:

  • In large bowl, mix all salad ingredients except bacon.
  • In small bowl, mix all dressing ingredients until well blended. Pour dressing over salad; toss gently to coat.
  • Just before serving, heat bacon slices as directed on package until crisp. Drain on paper towels; crumble. Stir bacon into salad.

8 ounces bacon
Salt
5 cups small broccoli florets
1 cup mayonnaise
1 tablespoon cider vinegar
1/3 cup chopped onion
1/4 cup sugar
3/4 cup raisins
1/2 cup sunflower kernels

Steps:

  • Cut the bacon into small pieces and cook over medium heat just until crisp; drain on paper towels.
  • Bring a large saucepan of salted water to a boil. Add the broccoli and blanch until bright green and slightly softened, about 3 minutes. Drain well, run under cold water to stop the cooking, and drain again.
  • In a mixing bowl, combine the mayonnaise, vinegar, onion, sugar and raisins. Add the broccoli and toss the coat with the dressing. Refrigerate for 1 hour.
  • Just before servings, fold in the sunflower kernels and the bacon pieces. Serve immediately.

This is kind of on the sweet side, but you can substitute granulated Splenda and also use light or fat-free Miracle Whip for calorie control. I use prepackaged all-natural bacon bits to save time. It's popular at church gatherings.

4 1/2 cups broccoli washed (drained & cut into bite-sized pieces (1 1/2 inch))
1/2 cup shredded cheddar cheese (I use sharp cheddar, but use what you like)
1/3 cup raisins
1/4 cup chopped red onion rinse in a strainer with hot water for 10 seconds if the onion is too strong
8 slices bacon cooked and crumbled or chopped
1/3 cup shelled sunflower seeds you can use roasted with no salt or roasted & salted
* Dressing (see notes)
1/2 cup mayo (Hellmann's light is my go-to)
2 tablespoons sugar
2 teaspoons lemon juice

Steps:

  • In a small bowl, combine mayo, sugar, and lemon juice. Mix dressing well and allow to chill for an hour or so. This allows the lemon juice to dissolve the sugar before combining with the rest of the salad ingredients.
  • While the dressing chills, combine broccoli, cheese, raisins, onion, bacon, and sunflower seeds in a large bowl. Store in the frig while the dressing finishes chilling.
  • Pour dressing over salad and toss well to coat. You can serve immediately, but I recommend refrigerating for several hours or overnight to meld flavors and soften the broccoli.

You know the one I am referring to... the broccoli salad with eight slices of bacon... it's not that one. If you don't want to stray too far from tradition, add a couple slices of chopped crisply cooked bacon or tempeh bacon. This version is not as syrupy sweet either. 1 lb broccoli
2 medium carrots, peeled and grated
1 small red onion, finely diced
1/2 cup raisins
1/3 cup roasted sunflower seeds or 1/3 cup slivered almonds, toasted

1/2 teaspoon orange zest, finely minced
5 tablespoons tofu mayonnaise or 5 tablespoons sour cream
1 teaspoon raspberry vinegar (optional)

Steps:

  • Toast the sunflower seeds. Let cool.
  • Trim bottom 2 inches off the end of the broccoli stalks.
  • In large pot of boiling water, lighlty blanch the broccoli for about 3-4 minutes. Immediately rinse with cold water and drain. Set aside.
  • In small non-reactive bowl combine all the dressing ingredients except for the vinegar and blend well with hand-held immersion blender. Taste and adjust dressing. If too sweet start by adding 1/4 teaspoon but up to 1 teaspoon of the raspberry vinegar. Season with salt and pepper.
  • Once cool enough to handle, dice the broccoli stems and chop up the florets into bite-size pieces. Place the cut up broccoli into a large salad bowl with the carrots, onion, raisins, and sunflower seeds.
  • Keep salad refrigerated until time to serve. Serve chilled.
