OPEN-FACED CRAB RAVIOLI WITH TOMATO SHRIMP COULIS

Number Of Ingredients 15

1 sheet of 8-inch by 11-inch pasta
5 tablespoons butter
7 ounces Maine crabmeat (preferably leg meat)
6 stalks of finely chopped chives
Salt and pepper
3 large beefsteak tomatoes, very ripe
1-ounce garlic, sliced thin
1-ounce shallot, sliced thin
1-ounce garlic oil
1 tablespoon butter
1 tablespoon tomato paste
1 sachet with 2 basil stems, 1 thyme sprig, 1 tarragon stem, 4 coriander seeds, 4 white peppercorns
2 ounces fine sugar
Salt and pepper
6 small shrimp, peeled and deveined

Steps:

  • Gently blanch the sheets of pasta in a large pot of salted, boiling water for 60 seconds, then shock in ice water. Cut out 6 circles with a circular cookie cutter, approximately 2 1/2 inches in diameter. Lay out on oiled parchment paper and reserve.
  • Gently melt the butter in a small saucepan. Add the crabmeat and gently fold into butter. Add chives and season with salt and pepper.

1 tablespoon sugar
2 sprigs dill
4 white peppercorn
1 cup beer
2 cups water
1 pound crayfish
1/2 cup salt

Steps:

  • In a small saucepan bring the sugar, dill, white peppercorn, beer to a boil in 2 cups of water, add the crayfish let cook for 2 minutes, season with salt and pour into the jar and close lid. Serve warm.

Number Of Ingredients 8

1 1/4 pounds russet potatoes, peeled, quartered
1 1/4 cups freshly grated pecorino Sardo or pecorino Romano cheese
2 tablespoons chopped fresh mint
All purpose flour
1 12-ounce package wonton wrappers
2 tablespoons extra-virgin olive oil
1 large garlic clove, minced
2 pounds tomatoes, chopped

Steps:

  • Cook potatoes in large saucepan of boiling salted water until very tender, about 20 minutes. Drain. Return potatoes to pan and mash. Cool potatoes. Stir in 1 cup cheese and mint. Season filling to taste with salt and pepper.
  • Line 2 baking sheets with plastic wrap; sprinkle with flour. Stack 6 wonton wrappers on work surface. Trim edges of wonton stack to form 2 3/4-inch square, preferably using scallop-edged pastry wheel cutter. Repeat stacking and trimming with remaining wrappers. Place half of wrappers on work surface. Place 1 tablespoon filling in center of each. Brush edges of wrappers lightly with water. Top each with another wrapper; press on edges to seal well. Place ravioli on prepared baking sheets. (Can be made 4 hours ahead. Sprinkle lightly with flour. Cover with plastic wrap and chill.)
  • Heat oil in large nonstick skillet over medium heat. Add garlic and stir 30 seconds. Add tomatoes and sauté until heated through, about 5 minutes. Season sauce to taste with salt and pepper. Transfer 1/2 cup sauce to large shallow serving bowl.
  • Working in batches, cook ravioli in large pot of boiling salted water until just tender but still firm to bite, about 3 minutes. Using slotted spoon, transfer ravioli to bowl with sauce. Spoon remaining sauce over. Sprinkle with remaining 1/4 cup cheese and serve.
