This is "Hands Down" the best I've ever made! The thyme is what sets it appart. The garlic will end up very mild. Use less if you like. (I have now edited the recipe to include corn starch to thicken the broth. This of course is optional)

1/4 cup vegetable oil
1 1/4 lbs stewing beef, cut into 1 inch pieces
1 garlic, bud peeled and cut the cloves into large chunks
8 cups beef stock or 8 cups canned beef broth
2 tablespoons tomato paste
1 tablespoon sugar
3/4 tablespoon dried thyme
1 tablespoon Worcestershire sauce
2 bay leaves
2 tablespoons butter
3 lbs potatoes, peeled and cubed . 5 inch pieces (about 7 cups)
1 large onion, chopped
2 cups carrots, peeled and cubed, . 5 inch pieces
2 tablespoons chopped fresh parsley
2 tablespoons cornstarch

Steps:

  • Heat oil in heavy large pot over medium-high heat.
  • Add beef and sauté 1 minute uncovered.
  • Add beef stock, tomato paste, sugar, thyme, worcestershire sauce and bay leaves.
  • Stir to combine and bring to a boil.
  • Reduce heat to medium-low, cover and simmer 1 hour, stirring occasionally.
  • ---------------.
  • Meanwhile, melt butter in another large pot over medium heat.
  • Add potatoes, onion and carrots.
  • Sauté vegetables until golden, about 20 minute.
  • Add vegetables to beef stew.
  • (Optional) mix corn starch in 1 or 2 tablespoons cold water. Add to stew and stir thoroughly to thicken broth.
  • Simmer uncovered until vegetables and beef are very tender.
  • Discard bay leaves, let cool then tilt pan and spoon off fat.
  • Can be made in morning or day before.
  • Heat, sprinkle with parsley and serve.

¾ cup flour
2 ½ pounds beef stew meat, cut into 1 1/2-inch cubes
2 tablespoons vegetable oil
2 large potatoes, peeled and cut into bite-size pieces
2 carrots, peeled and cut into bite-size pieces
2 large yellow onions, quartered
1 sprig fresh thyme, or more to taste
2 cups Irish stout beer (such as Guinness®)
1 teaspoon salt
1 tablespoon chopped fresh parsley

Steps:

  • Place the flour in a resealable plastic bag. Add the beef, a few pieces at at a time, and shake the bag to coat.
  • Heat the vegetable oil in a large skillet over medium-high heat. Stir in the beef, cooking until browned on all sides, 8 to 10 minutes. Transfer the browned beef to a plate lined with paper towels to drain.
  • Place the beef, potatoes, carrots, onions, and thyme into a slow cooker, and pour the stout beer on top. Cover and cook on Low until the meat is very tender, about 8 hours. Season with salt, then remove thyme. Garnish with parsley before serving.

This super-simple beef stew features spoon-tender chunks of beef and a sauce that gets a deep, dark flavor from stout beer and maple syrup. The recipe calls for carrots, parsnips and potatoes, but feel free to swap in similar quantities of other root vegetables, like turnips and rutabaga, cut into large pieces. But do make sure to avoid precut stew meat from the grocery store, which is often unreliable and cut too small. A chuck roast that you cut yourself is a far better option. You can also make this on the stovetop or in the oven: Season the meat with salt, then sear it in 2 tablespoons vegetable oil over high heat in a Dutch oven. Add the rest of the ingredients, stir to combine, cover and simmer on low (or in a 325-degree oven) for 2 to 3 hours until the meat is very tender and move on to step 2.

1 1/2 pound chuck roast (cut into 1 1/2 inch pieces or pre-cut stew meat)
1/4 cup flour
2 teaspoons salt
1 teaspoon pepper
2 tablespoons olive oil
2 pounds Yukon Gold potatoes (halved or quartered depending on size)
1 pound baby carrots
2 tablespoons butter
1 yellow onion (diced)
3 cloves garlic (minced)
3 cans beef broth (approximately 40 ounces)
1 small can tomato paste
2 tablespoons Balsamic or red wine vinegar
1 tablespoon Worcestershire sauce
2 tablespoons cornstarch (+ 2 Tbsp cold water)
1 tablespoon dried thyme
1 teaspoon dried parsley flakes
2 bay leaves
Fresh parsley (for garnish)

Steps:

  • Cut roast into 1 1/2 inch bite size chunks and place them in a gallon size resealable bag or other airtight container. Add flour, salt, and pepper. Shake bag until the meat is coated with flour.
  • Heat olive oil in a large heavy bottom skillet or pot. Add coated meat and brown each piece on all sides.
  • While meat is browning, cut potatoes and carrots and place both in the bottom of a crock pot. When meat is browned, layer the meat on top of the potatoes and carrots and leave remaining juices in the skillet.
  • Return the skillet to the stovetop and add butter. Melt the butter on medium-high heat, then saute onions and garlic. Stir in beef broth, tomato paste, red wine vinegar, and Worcestershire sauce. In a small cup, combine cornstarch and cold water. Mix until smooth then add to the liquid mixture in the skillet. This will thicken the liquid. Pour all the contents of the skillet over the meat and vegetables in the crock pot. Add thyme, parsley flakes, and bay leaves.
  • Cook on low for 7-8 hours or on high for approximately 4 hours. 30 minutes before serving check the taste of the broth and add salt, pepper, or seasonings as needed. Allow to cook for another 30 minutes after adding seasonings.
  • Remove bay leaves before serving. Garnish with fresh parsley.

2 tbsp olive oil
2.5 lb / 1.25 kg beef chuck (, boneless short rib or any other slow cooking beef (no bone))
3/4 tsp each salt and black pepper
3 garlic cloves (, minced)
2 onions (, chopped (brown, white or yellow))
6 oz / 180g bacon (, speck or pancetta, diced)
3 tbsp flour ((all purpose/plain, Note 3 for GF))
440ml / 14.9 oz Guinness Beer ((Note 1))
4 tbsp tomato paste
3 cups (750 ml) chicken stock/broth ((or beef broth - Note 4))
3 carrots (, peeled and cut into 1.25 cm / 1/2" thick pieces)
2 large celery stalks (, cut into 2cm / 1" pieces)
2 bay leaves
3 sprigs thyme ((or sub with 1 tsp dried thyme leaves))

Steps:

  • Cut the beef into 5cm/2" chunks. Pat dry then sprinkle with salt and pepper.
  • Heat oil in a heavy based pot over high heat. Add beef in batches and brown well all over. Remove onto plate. Repeat with remaining beef.
  • Lower heat to medium. If the pot is looking dry, add oil.
  • Cook garlic and onion for 3 minutes until softening, then add bacon.
  • Cook until bacon is browned, then stir through carrot and celery.
  • Add flour, and stir for 1 minute to cook off the flour.
  • Add Guinness, chicken broth/stock and tomato paste. Mix well (to ensure flour dissolves well), add bay leaves and thyme.
  • Return beef into the pot (including any juices). Liquid level should just cover - see video or photos.
  • Cover, lower heat so it is bubbling gently. Cook for 2 hours - the beef should be pretty tender by now. Remove lid then simmer for a further 30 - 45 minutes or until the beef falls apart at a touch, the sauce has reduced and thickened slightly.
  • Skim off fat on surface, if desired. Adjust salt and pepper to taste. Remove bay leaves and thyme.
  • Serve with creamy mashed potatoes!!

1.5 lbs beef stew meat (in 1-2 inch cubes)
2 small-medium onions (peeled and cut into slim wedges)
2 cloves garlic (crushed)
1 pound waxy potatoes (peeled and cut into chunks)
4 medium carrots (peeled and cut into chunks)
3 sticks celery (sliced)
4 cups beef broth (see notes if want to use beer)
1 tablespoon Worcestershire sauce (can use soy sauce in place)

Steps:

  • Brown meat: Heat oil in large skillet over medium-high heat. Add beef and brown; remove and add to 4-6 quart slow cooker.
  • Sauté onions: Add onions to hot skillet and sauté over medium heat until softened. Pour in about 1/2 cup of the beef broth, scraping any browned bits off the bottom of the pan (see notes for using dark beer in this step). Take off the heat and carefully pour into slow cooker over meat.

2 tablespoons canola oil
2 onions (finely diced)

Steps:

  • Season beef with salt and pepper toss with flour to fully coat. Use all the flour.
  • Heat a dutch oven over medium high heat. Add 1 tablespoon of oil. Brown beef on all sides, working in batches if necessary to avoid over crowding pan. Remove beef from pan and transfer to slow cooker.
  • Return pan to heat, add another tablespoon of oil. Add the onions, season with salt and sauté until golden brown, about 20 minutes. Reduce heat as needed to avoid burning the onions.
  • When onions are golden, add the tomato paste and garlic, stir until combined and a "fond" (the brown bits) is starting to develop on the bottom of the pot.
  • Slowly whisk in the beef broth, scrapping up any brown bits on the bottom of the pan. Add 1/2 a cup of the Guinness, the brown sugar, and the fresh thyme. Whisk to combine.
  • Add potatoes and carrots to slow cooker. Carefully pour broth over meat and vegetables.

2 large carrots (,chopped in 1/2 inch pieces)

1 bottle ((1 pint or 16 ounces) Guinness Extra Stout)
1 cup strong beef broth
2 tablespoons Worcestershire sauce
1/4 cup tomato paste
1 tablespoons dried and ground porcini mushrooms ((optional and not remotely traditional, but oh so amazing))
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 1/2 teaspoons salt

Steps:

  • Cut the beef across the grain into into 1-inch pieces. Sprinkle with some salt, pepper and the flour and toss to coat the pieces. Set aside.
  • Fry the bacon in a Dutch oven or heavy pot until done then remove it with a slotted spoon, leaving the bacon drippings in the pan.
  • Working in batches and being careful not to overcrowd the pieces, generously brown the beef on all sides. Transfer the beef to a plate and repeat until all the beef is browned.
  • Add the onions and fry them, adding more oil if necessary, until lightly browned, about 10 minutes. Add the garlic and cook for another minute. Add the vegetables and cook for another 5 minutes. Add the Guinness and bring it to a rapid boil, deglazing the bottom of the pot (scraping up the browned bits on the bottom). Boil for 2 minutes. Return the beef and bacon to the pot along with the remaining ingredients and stir to combine. (**At this point you can transfer everything to a slow cooker if you prefer. Follow the remaining steps and then cook on LOW for 6-8 hours or on HIGH for 3-4 hours.)Bring it to a boil. Reduce the heat to low, cover and simmer for 2 hours. Add salt and pepper to taste.

2 cloves garlic, crushed
2 (14.5 ounce) cans green beans, drained
1 (6 ounce) can tomato paste
1 (1.5 ounce) package dry beef stew seasoning mix
2 teaspoons Worcestershire sauce
2 cups beef broth
2 tablespoons all-purpose flour, or as needed
½ teaspoon seasoned salt, or to taste
2 pounds cubed beef stew meat
2 tablespoons olive oil
½ (15 ounce) can Irish stout beer (such as Guinness®), or more if needed
1 cup water, or as needed

Steps:

  • Place potatoes, onion, garlic, green beans, and tomato paste in a slow cooker. Sprinkle with stew seasoning and pour beef broth over top. Mix in stew seasoning and Worcestershire sauce.
  • Heat oil in a medium skillet over medium-high heat.

2 tablespoons flour
4 large yukon golden potatoes, largely diced

2 large parsnips, peeled and diced into 1 inch pieces
1/2 large yellow onion, chopped
2 cloves garlic, minced
1 tablespoon tomato paste

11.2 fluid ounce bottle Guinness Extra Stout

Steps:

  • In a large pan, heat olive oil over medium high heat. Turn slow cooker on*.
  • In a large bowl, toss beef together with salt, pepper, and flour to coat. Add to the pan and cook until all sides of the chunks are browned (about 8 minutes).
  • While beef is browning, add potatoes, carrots, parsnips, onion, garlic and tomato paste to the slow cooker. Stir to coat.
  • Add browned beef, beef broth, and Guinness to the slow cooker and stir to combine.

3 tbsp vegetable oil
1 ½kg braising beef , cut into 3.5cm pieces
4 large onions , thickly sliced
3 tbsp plain flour
500ml stout
800ml beef stock
6 thyme sprigs
450g chestnut mushrooms , halved
handful parsley , to serve

Steps:

  • Heat oven to 170C/150C fan/gas 3. Put a large non-stick, flameproof casserole dish on a high heat and add 1 tbsp oil. Season the beef and brown in batches until well coloured on both sides, making sure you don't overcrowd the dish. Remove each batch and set aside on a plate.
  • Add the remaining oil to the pan and lower the heat to medium. Toss in the onions and cook for about 10 mins until softened and golden brown. Stir in the flour and cook, stirring, for 1-2 mins.
  • Add the stout and stir well to deglaze the pan, scraping up any sticky bits. Return the beef to the pan, pour in the stock and add the thyme. Bring to the boil, then put the lid on and cook for 1½ hrs.
  • Add the mushrooms to the casserole, stir well and return to the oven for a further 1½ hrs.

1 pound carrots, peeled and cut into 1-inch pieces
2 large onions, finely chopped
2 cloves garlic, minced
2 tablespoons fresh parsley, finely chopped
One 12-ounce bottle stout beer, such as Guinness Draught
1/4 cup olive oil
2 tablespoons light brown sugar
2 tablespoons tomato paste
1/2 cup all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
One 4-pound boneless beef chuck roast, trimmed and cut into 1 1/2-inch pieces
2 tablespoons unsalted butter
2 tablespoons canola oil
3 cups chicken broth

Steps:

  • In a 6-quart slow cooker, combine the potatoes, carrots, onions, garlic, parsley, stout, olive oil, brown sugar and tomato paste. In a separate bowl, mix the flour with the salt and pepper. Dredge the beef pieces in the dry mixture, shaking off any excess.
  • In a medium skillet, melt the butter and canola oil over medium-high heat. In batches, add the beef pieces and sear until brown, about 2 minutes, transferring the beef to the slow cooker as done. Remove the last batch of beef to the slow cooker, add 1 cup of the chicken broth to the skillet and scrape up all the brown bits that have accumulated on the bottom of the pan. Add the pan juices to the slow cooker, along with the remaining 2 cups of chicken broth. Cover, and cook on high for 6 hours.

It makes for a hearty bowl with fall-apart-tender chunks of beef in a luscious, rich broth, but that's not all that's going on here. Caramelized onions add a sweetness that's well balanced by the slightly bitter (think coffee-flavored) taste of the Guinness®. The preparation of the beef-it's dredged in flour and browned before being added to the slow cooker crock-helps thicken the stew and adds all sorts of deeply savory flavor. So when you want something comforting and crowd-friendly-but also feel like you've been eating the same thing for months-turn to this sensational stew for something new.

3 lb beef stew meat
2 tablespoons vegetable oil
1 cup Guinness® Draught (from 12-oz can)
1 lb baby Yukon Gold potatoes, scrubbed

1 teaspoon dried thyme leaves
2 tablespoons finely chopped fresh parsley leaves

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • Mix onions, melted butter, 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper in slow cooker. Add 1 cup of the broth. Cover; cook on Low heat setting 8 to 10 hours or until onions are very tender and browned.
  • In large bowl, mix flour, remaining 3/4 teaspoon salt and remaining 1/2 teaspoon pepper. Add beef; toss to coat. Discard any excess flour. In 12-inch skillet, heat 1 tablespoon oil over medium-high heat. Cook half of beef 5 to 7 minutes or until browned on all sides. Transfer to slow cooker; repeat with remaining 1 tablespoon oil and remaining half of beef.
  • Add remaining 1 cup broth to skillet; heat to boiling over medium-high heat, scraping up any browned bits on bottom of skillet. Add to slow cooker.
  • Add Guinness®, potatoes, carrots and thyme to slow cooker; stir. Cover; cook on Low heat setting 8 to 10 hours or until meat is tender and sauce is thickened.
  • Garnish with parsley.
