MEDITERRANEAN MARINATED RED ONIONS

These marinated red onions pair perfectly with grilled fish or chicken - or you could add them to salads or wraps!

1 medium red onion, approx 8oz
¾ cup white wine vinegar
2 tbs lemon juice
2 tsp dried oregano
½ tsp dried thyme
½ tsp low carb sweetener, granular
½ tsp salt

Steps:

  • Peel and halve the onion, then cut into thin slices.
  • Place them in a saucepan, cover in water, and bring to the boil. Cook for 5 minutes, then drain and let cool.
  • Mix the remaining ingredients together and stir well.
  • Place the onions in a container, and pour over the vinegar mixture.
  • Leave to marinate overnight. Store in the fridge.

1 (16 ounce) package frozen white pearl onions
1/2 cup white wine vinegar
3 tablespoons tomato paste
2 tablespoons olive oil
1 bay leaf
1/8 teaspoon dried thyme leaves
2 teaspoons salt
1/4 teaspoon fresh ground black pepper
2 tablespoons sugar
1/2 cup chopped seedless raisin
3 tablespoons fresh Italian parsley, minced

Steps:

  • In a saucepan, put onions in 1-in of water. Add vinegar, tomato paste, olive oil, bay leaf, thyme, salt, black pepper, sugar and raisins.
  • Cover. Cook over low heat about 15 minute until onions are barely tender. Do not overcook. Transfer to shallow dish.
  • Pour sauce over onions, Cool and sprinkle with parsley. Chill at least 1 hour.

1/2 teaspoon salt
1 lb lean ground beef
1 onion, finely chopped
2 -4 garlic cloves, minced
1 (14 1/2 ounce) can tomatoes
1 1/2 cups beef broth
1 teaspoon minced fresh oregano or 1/2 teaspoon crumbled dried oregano
1/4 teaspoon pepper
8 ounces dried orzo pasta (1 cup)
1 (10 ounce) package frozen chopped spinach, thawed
1/2-3/4 cup grated parmesan cheese

Steps:

  • Sprinkle salt into a 10 to 12 inch frying pan over medium-high heat. Crumble beef into pan and cook, stirring often, until meat begins to brown, 3 to 5 minutes. Reduce heat to medium, stir in onion, and continue to cook, stirring, until onion is soft but not brown, about 5 minutes. Spoon off and discard excess fat.
  • Add garlic, tomatoes (break them up with a spoon) and their liquid, broth, oregano, and pepper. Bring mixture to a boil then stir in pasta. Reduce heat, cover and simmer gently until pasta is tender to bite, 10 to 12 minutes.
  • Meanwhile, squeeze as much liquid as possible from spinach. Stir spinach into pasta mixture just until heated through. Serve with cheese to add to taste.
