1 (16 ounce) package egg noodles
2 tablespoons butter, softened
2 onions, finely chopped
2 cloves garlic, minced
1 (8 ounce) package fresh mushrooms, thinly sliced
1 pound beef loin steak, cut into thin strips
1 (14 ounce) can beef consomme
¼ cup Burgundy wine
3 tablespoons lemon juice
2 tablespoons all-purpose flour
2 tablespoons cold water, or as needed
1 (8 ounce) container sour cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Add noodles and cook 5 to 7 minutes or until al dente; drain.
  • Melt butter in a large saucepan over medium-high heat. Stir in onions and garlic, and cook until slightly tender. Mix in mushrooms, and continue cooking 2 minutes. Place steak strips in saucepan and cook about 1 minute. Mix in consomme, Burgundy and lemon juice. Bring to a boil.
  • In a small bowl, thoroughly blend flour with cold water until smooth. Reduce saucepan heat to low. While stirring constantly, slowly pour flour mixture into saucepan. Gradually return to boil while stirring rapidly, until sauce is thick and smooth. Cover saucepan and continue cooking 5 minutes, stirring occasionally. Remove from heat, let cool slightly and stir in sour cream. Serve over cooked egg noodles.

1 pound ribeye steak, trimmed of excess fat and cut into 2-by-1/2-inch strips
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
5 tablespoons unsalted butter
1 medium yellow onion, sliced
8 ounces white button mushrooms, quartered
7 ounces shiitakes, caps sliced (stems removed and discarded)
1 tablespoon chopped fresh thyme
1 clove garlic, minced
1/2 cup dry white wine
2 tablespoons all-purpose flour
3/4 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth or beef stock
10 ounces medium or wide egg noodles
1/2 cup fresh flat-leaf parsley leaves, chopped
1 tablespoon chopped chives, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Season the beef with 1 teaspoon salt and a generous amount of freshly ground black pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook, untouched, until starting to turn brown in some spots, about 1 minute. Use tongs to flip the pieces and continue cooking until deep golden brown but still undercooked in the center, about 1 minute (the beef will finish cooking in the sauce). Transfer the beef to a bowl and return the skillet to the stovetop on medium-high.
  • Add 1 tablespoon butter to the skillet. Add the onion and 1/2 teaspoon salt and cook, stirring occasionally to scrape up the browned bits in the pan, until the onions are softened, 4 to 5 minutes. Add 2 tablespoons butter, the button mushrooms, shiitakes and thyme and cook, stirring occasionally scraping up any browned bits, until the mushrooms have released some liquid and are starting to crisp up, 5 to 6 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Pour in the wine and bring to a boil. Reduce the heat to medium and simmer until evaporated, about 5 minutes.
  • Sprinkle the flour over the vegetables and stir until incorporated. Fold in the sour cream, Dijon, Worcestershire sauce and 1/4 teaspoon freshly ground black pepper. Pour in the beef broth and stir until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
  • Meanwhile, while the sauce reduces, cook the egg noodles according to the package directions for al dente. Drain and toss with the remaining 2 tablespoons butter, the chopped parsley and chives.
  • Fold the beef and any accumulated juices from the bowl into the sauce and cook, stirring occasionally, until the beef is cooked through but still slightly pink on the inside, about 1 minute.
  • Divide the noodles between 4 bowls and top with the sauce and beef. Sprinkle with more chives, if desired.

1 tbsp olive oil
1 onion, sliced
1 clove of garlic
1 tbsp butter
250g mushrooms, sliced
1 tbsp plain flour
500g fillet steak, sliced
150g crème fraîche
1 tsp English mustard
100ml beef stock
½ small pack of parsley, chopped

Steps:

  • Heat 1 tbsp olive oil in a non-stick frying pan then add 1 sliced onion and cook on a medium heat until completely softened, around 15 mins, adding a little splash of water if it starts to stick.
  • Crush in 1 garlic clove and cook for 2-3 mins more, then add 1 tbsp butter.
  • Once the butter is foaming a little, add 250g sliced mushrooms and cook for around 5 mins until completely softened.
  • Season everything well, then tip onto a plate.
  • Tip 1 tbsp plain flour into a bowl with a big pinch of salt and pepper, then toss 500g sliced fillet steak in the seasoned flour.
  • Add the steak pieces to the pan, splashing in a little oil if the pan looks dry, and fry for 3-4 mins, until well coloured.
  • Tip the onions and mushrooms back into the pan. Whisk 150g crème fraîche, 1 tsp English mustard and 100ml beef stock together, then stir into the pan.
  • Cook over a medium heat for around 5 mins.
  • Scatter with some chopped parsley, and serve with pappardelle or rice.

1/4 cup all-purpose flour
1 teaspoon salt
1 teaspoon dried thyme, crumbled
1/2 teaspoon pepper
2 lbs beef sirloin, cut into 1 inch cubes
1/2 cup butter
1 medium onion, finely chopped
1 cup beef broth
1 cup Burgundy wine
2 tablespoons butter
10 ounces sliced mushrooms
2 cups sour cream
3 tablespoons tomato paste
1 tablespoon Worcestershire sauce
freshly cooked egg noodles
chopped parsley

Steps:

  • Combine flour, salt, thyme and pepper in plastic bag.
  • Add meat and shake well.
  • Remove meat, shaking off excess flour.
  • Melt ½ cup butter in large skillet over medium heat, add meat and brown lightly, about 3 minutes.
  • Add onion and stir until translucent, about 3 minutes.
  • Pour in broth and wine and simmer until meat is tender, about 30-45 minutes.
  • Melt 2 tblsps butter in small skillet over medium heat.
  • Add mushrooms and sauté until just tender, 3-4 minutes.
  • Stir mushrooms into meat.
  • Blend sour cream, tomato paste and Worcestershire Sauce in small bowl.
  • Slowly turn into meat; do not allow to boil.
  • Mound noodles on serving platter.
  • Spoon meat over.
  • Top with parsley.

2 tablespoons margarine
2 pounds beef round steak, cut into thin strips
¼ cup all-purpose flour for dusting
1 medium onion, sliced
1 cup beef broth
½ cup Burgundy wine
3 tablespoons tomato paste
½ teaspoon ground thyme
1 (12 ounce) package wide egg noodles
¾ cup sour cream

Steps:

  • Melt margarine in a large skillet over medium heat. Add beef strips, and fry until browned. Stir in onion and cook, stirring, for 3 minutes, or until softened. Sprinkle flour over the meat, and stir into the pan juices until blended. Gradually mix in the beef broth, Burgundy, tomato paste and thyme. Reduce heat to low, and simmer for 40 to 45 minutes.
  • During the last 15 minutes of the cooking, bring a large pot of lightly salted water to a boil. Add egg noodles, and cook until tender, about 7 minutes.
  • Remove the burgundy beef from the heat and stir in sour cream. Serve over hot egg noodles.

Your family will love it! You can add to it whatever you like. You could make it with chicken, but I suggest trying it this way first. If made with chicken, brown the chicken, with skins on, in the oven, then add all the juices to the pot also for flavor. This is an easy to make crowd pleaser, made with lots of burgundy wine, steak, and mushrooms.

4 (10 1/2 ounce) cans cream of mushroom soup (campbells)
2 (24 ounce) containers sour cream
2 top sirloin steaks
2 (4 ounce) packages mushrooms
Burgundy wine
4 garlic cloves
olive oil
salt
pepper
steak seasoning
garlic powder
onion powder
white rice

Steps:

  • First, pour the soup and sour cream into a large pot. Start to heat up.
  • Then put a few tbsp of olive oil in a med high pan. Chop up garlic and add to the pan with the mushrooms. Let brown up before you add salt and pepper. Pour it all into the pot when done.
  • Next season up your top sirloin with whatever steak seasoning you would normally use, garlic and onion powder. Brown the whole steak in a hot pan with a bit of olive oil. Let set for a couple minutes, then flip and brown the other side. Remove from stove and let rest for about 5 minutes. When cooled, cut it up into bite size pieces and add to the pot, juices and all.
  • Now add the burgundy wine. If you are using a small bottle, then I would add at least half of it. You may need to add more after it has been stirred in, to taste. Let simmer for about a half hour or longer. Then it is ready.
  • Prepare white rice as directed on the package and serve the stroganoff over the white rice. You can also use egg noodles, but I prefer the rice.

1.2kg stewing beef
1 garlic bulb, halved
1 star anise
small pack thyme
3 bay leaves
1l full-bodied red wine (preferably French and made from pinot noir)
5 tbsp sunflower oil
6 carrots, cut into large chunks
1 onion, roughly chopped
3 celery sticks, roughly chopped
1 tsp tomato purée
1 heaped tbsp plain flour
150g unsmoked bacon lardons
150g pearl onions or small shallots, peeled
150g button mushrooms
small pack parsley, leaves roughly chopped, to serve

Steps:

  • A day or two ahead, cut the meat into large 5cm chunks. Put in a glass bowl with the garlic, star anise, thyme, bay and plenty of seasoning. Mix everything together well.
  • Pour the wine into a large saucepan (keep the lid to hand and turn off any extractor fans). Bring to a boil, then, at arms-length, ignite with a long match. Wait for the flames to burn off (there will be quite a few), then boil for 5 mins more. If you don't feel comfortable setting the flames alight, just boil the wine. Pour the wine over the meat, then cover and cool slightly before chilling overnight or for up to 36 hrs.
  • Lift the beef out of the marinade and dry on kitchen paper. Heat half the oil in a large casserole. Working in batches, brown the beef for 10 mins, adding more oil if needed (watch out - this will splutter). Once browned, transfer the beef chunks to a plate.
  • Heat oven to 150C/130C fan/gas 3. Add a touch more oil to the dish, then tip in the veg and gently brown for 10 mins. Use a wooden spatula to scrape any sticky bits off the bottom. Scatter over the flour and cook for 2 mins, then stir in the tomato purée. Add the meat and any juices from the plate back in, then pour over the marinade with all the aromatics. Bring everything to a simmer and give it a good stir, then cover and place in the oven for 3½-4 hrs, stirring every hour or so until the meat is very tender. You now have a delicious rustic stew that can be served as is, but keep going to take it to the next level.
  • Leave the stew to cool, then carefully tip into a sieve or colander set over a bowl. Lift the meat and carrots back into the casserole, then squish everything else in the sieve so that you extract the juices and some of the garlic gets squished through. Simmer this sauce in a pan for 10 mins or until thickened to your liking, then pour over the meat.
  • While the meat is braising, heat the rest of the oil in a frying pan. Fry the bacon and onions for 15 mins until the bacon is crisp and the onions have softened and browned. Turn the heat up, add the mushrooms and fry until cooked. Tip the contents of the frying pan into the casserole, stir and simmer for a few mins. Scatter over the parsley, then bring the dish to the table and serve with the carb of your choice.

200ml beef stock
250ml soured cream
2 thick sirloin steaks , about 300g each with as much fat as possible trimmed off the steak
100g butter
2 banana shallots , halved and finely sliced
200g chestnut mushrooms , quartered
1 garlic clove , crushed
2 tsp smoked paprika , plus extra to serve
pinch of porcini powder , plus extra to serve (optional)
2 tbsp red wine vinegar
½ small bunch of parsley , chopped
1 tsp English mustard

Steps:

  • Whisk the stock and all but 2 tbsp of the soured cream together. Set aside.
  • Generously season the steaks. Heat half the butter in a frying pan until sizzling, then cook the steaks for 8 mins, turning them every minute or so, until golden brown on each side. Remove and set aside.
  • Heat the rest of the butter in the steak pan, tip in the shallots and cook for about 5 mins or until starting to caramelise. Add the mushrooms and cook for a further 5 mins or until golden. Stir in the garlic and paprika along with a pinch of porcini powder and continue to cook for 1 min.
  • Add the vinegar and leave to simmer for 1 min. Turn the heat down to its lowest setting and pour in the creamy stock, stirring everything together until hot but not simmering, then taste for seasoning and add most of the parsley and the mustard.
  • Pour in any juices from the steak, before carving it into thick slices and adding to the pan. To serve, top with the remaining soured cream, then scatter with the remaining parsley, a pinch of paprika and porcini powder, if using.
