120g long-stem broccoli
plain flour , to dust
220g fresh or frozen pizza dough (defrosted if frozen)
3 tbsp mascarpone
1 lemon , zested
1 courgette , peeled into strips (discard the seeded core)
60g soft rindless goat's cheese
1 red chilli , finely sliced
olive oil , to drizzle

Steps:

  • Heat the oven to 240C/220C fan/gas 9. Put a baking sheet in the oven to heat up.
  • Bring a medium pan of water to the boil, add the broccoli and boil for 1 min. Drain and pat dry with kitchen paper.
  • Lightly dust your work surface with a little flour. Split the dough in half and roll into two oval shapes. Mix the mascarpone and lemon zest together in a bowl. Remove the hot tray from the oven and use a palette knife to transfer the bases onto the baking tray. Spread with the mascarpone and top with the broccoli and courgette, then season with black pepper. Put back in the oven to bake for 10-12 mins or until crisp and golden around the edges.
  • Scatter with the crumbled goat's cheese and red chilli, and drizzle over a little olive oil to finish.

1 package (1/4 ounce) active dry yeast
3/4 cup warm water (110° to 115°)
1 teaspoon olive oil
1/2 teaspoon sugar
1/2 cup whole wheat flour

TOPPINGS:
1 tablespoon olive oil
1 cup sliced fresh mushrooms
1/4 cup chopped onion
4 garlic cloves, minced
3 cups broccoli florets
2 tablespoons water
1/2 cup pizza sauce
4 plum tomatoes, sliced
1/4 cup chopped fresh basil
1-1/2 cups shredded part-skim mozzarella cheese
1/3 cup shredded Parmesan cheese

Steps:

  • In a bowl, dissolve yeast in warm water. Add oil and sugar; mix well. Combine whole wheat flour and salt; stir into yeast mixture until smooth. Stir in enough all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. Preheat oven to 425°., Punch down dough; press onto a 12-in. pizza pan coated with cooking spray. Prick dough several times with a fork. Bake until edges are light golden brown, 10-12 minutes. , In a nonstick skillet, heat oil over medium-high heat; saute mushrooms, onion and garlic until tender. 1/2 cup fresh basil leaves, torn
1/2 cup plus 2 tablespoons extra-virgin olive oil
3/4 teaspoon kosher salt
One 28-ounce can tomato puree
1 pound spicy Italian sausage, casing removed
1 bunch broccoli, cut into bite-size florets (about 3 cups)
3 tablespoons flour
One 16-ounce ball pizza dough
12 ounces fresh mozzarella, sliced 1/4-inch thick
1 cup Parmesan

Steps:

  • In a medium bowl, combine the basil, 1/2 cup of the olive oil, the salt and tomato puree. Stir together until combined. Cover with plastic wrap and refrigerate for at least 3 hours to allow the flavors to marry.
  • Preheat the oven to 500 degrees F. Place a rack on the highest level and leave space on the bottom of the oven for easy access.
  • Heat a large skillet over high heat. Add the remaining 2 tablespoons olive oil and the sausage and cook, breaking apart with a wooden spoon to form bite-size pieces, until golden brown and cooked through, about 10 minutes. Add the broccoli to the pan and stir to mix with the sausage. Remove from the heat and cool to room temperature.
  • Dust an upside-down rimmed baking sheet with the flour. Gently stretch the pizza dough and place on the dusted tray. Continue to stretch out to 1/4-inch thick leaving it a little thicker around the edges. Spread 1 cup of the sauce over the dough and top with the mozzarella. Spread the sausage and broccoli evenly over the crust and top with the Parmesan. Place the sheet tray directly on the bottom of the oven and bake for 5 minutes. Move the tray to the top shelf and finish cooking until golden brown and the crust is cooked, 5 minutes.

A fabulous white pizza... again, four cheeses are used (grated parmesan, provolone, ricotta, & mozzarella) as well as fresh broccoli florets. You could substitute with spinach if you like, but we LOVE this recipe as is... I buy the pre-made pizza dough from my grocery store to save time, but you could always make your own of course. Also, I use MILD provolone - it's pre-packaged & pre-sliced think it is Belgioioso brand. Note: I use the 12 oz. bag of "Broccoli Wokly" which is already cut into florets - I steam it according to the package directions first in the bag & use the full bag on the pizza.

Using two teaspoons, spoon about 3/4 teaspoonful size spoonfuls of ricotta sporadically around the broccoli areas in empty spots. Season whole pizza with salt, oregano & garlic powder to taste then sprinkle the shredded mozzarella evenly all over pizza.
  • Bake for 12-18 minutes or until crust just golden brown. Slice & serve.

1 medium head broccoli (cut into florets (about 16 ounce with center stem, 12 ounces florets))
2 large eggs
1/4 cup freshly grated Parmesan cheese
2 tablespoons nutritional yeast (or another 1 tablespoon Parmesan)
1/4 cup shredded part-skim mozzarella cheese
1 teaspoon Italian seasoning
1/4 teaspoon kosher salt
1/4 cup pizza sauce (homemade or good quality store-bought)
4 ounces part-skim mozzarella (sliced, shredded, or roughly torn into small pieces)
Pizza toppings of choice (I kept it classic with sautéed cherry tomatoes)
Thinly sliced fresh basil (optional but delicious)

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper or a silicone baking mat (do not skip lining it!).
  • Rice the broccoli: Place half of the broccoli florets in a food processor fitted with a steel blade. Pulse in 5-second bursts until the broccoli is in fine crumbs. Transfer to a large, microwave-safe bowl. Repeat with the remaining broccoli. You should have about 2 1/2 to 3 cups broccoli rice total.
  • Cover the broccoli and microwave on HIGH for 2 to 3 minutes, or until it is steamed. Let cool for 2 minutes, then transfer to a large, clean kitchen towel. Once cool enough to handle, wrap the towel around the broccoli and squeeze out as much liquid as you possibly can, adding a second towel if needed.
  • Add the broccoli to a large mixing bowl (this can be the same bowl you used to microwave the broccoli; just rinse and wipe it dry first). Add the eggs, Parmesan, nutritional yeast, shredded mozzarella, Italian seasoning, and salt. Stir until well combined. Transfer the mixture to the center of the prepared baking sheet and shape into a 1/2-inch-thick pizza (it will be about 9 inches in diameter.) It will feel very wet and sticky. Bake for 15 to 20 minutes, or until crust is set on top and beginning to very lightly brown at the edges.

Steps:

  • Whisk yeast into 3/4 cup warm water (110°) in a medium bowl; let stand until foamy, about 5 minutes. Add both flours and 1 1/2 teaspoons salt; stir until a dough forms, then turn out onto a clean work surface. Knead, dusting with flour as needed, until smooth and elastic, about 5 minutes.
