1/2 lb lean ground beef
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 -2 jalapeno pepper, thinly sliced
6 slices cooked bacon, drained
2 slices monterey jack cheese
2 hamburger buns

Steps:

  • In a bowl, combine ground beef and seasonings well, but don't overwork the meat! Form 2 patties out of the mixture.
  • Grill burgers to your liking.
  • Just before you take the burgers off the grill, top each burger with the jalapeno slices, a cheese slice, and finally 3 bacon slices. Once cheese starts to melt, remove from grill. (The cheese acts as a glue keeping everything together!).
  • Put burgers on buns and enjoy! ***We like to top our burgers with sliced red onions and a big dollop of guacamole!

Spicy Ranch Sauce
1 cup mayonnaise
1 cup sour cream
1/2 cup chopped fresh cilantro
6 tablespoons fresh lime juice
4 green onions, finely chopped
2 tablespoons minced seeded jalapeño chile
1/2 teaspoon cayenne pepper
Burgers
2 pounds ground beef
1 small onion, chopped (about 1 1/4 cups)
1/4 cup chopped fresh parsley
2 tablespoons Worcestershire sauce
1 tablespoon chopped seeded jalapeño chile
1 teaspoon salt
1 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
Worcestershire-Coffee Glaze
1/3 cup light corn syrup
2 tablespoons Worcestershire sauce
2 tablespoons ketchup
1 teaspoon instant coffee crystals
2 teaspoons (packed) golden brown sugar
3 tablespoons butter
16 bacon slices
Nonstick vegetable oil spray
8 hamburger buns or 3- to 4-inch square focaccia rolls, split horizontally
8 lettuce leaves
2 cups coarsely shredded sharp white cheddar cheese
Assorted additional toppings (such as tomato and grilled onion slices)

Steps:

  • For spicy ranch sauce:
  • Whisk all ingredients in medium bowl to blend. Season sauce with salt and pepper.
  • For burgers:
  • Gently mix all ingredients in large bowl. Form mixture into eight 1/2- to 3/4-inch-thick patties. Place on small baking sheet. Cover and chill at least 2 hours and up to 1 day.
  • For glaze:
  • Stir first 5 ingredients in small saucepan over medium heat until coffee is dissolved. Remove from heat. Whisk in butter. Season glaze to taste with salt and pepper.
  • Prepare barbecue (medium-high heat). Working in batches if necessary, cook bacon in large skillet over medium-high heat until crisp and brown. Transfer bacon to paper towels to drain.
  • Spray grill rack with nonstick spray. Toast buns until golden, about 2 minutes per side. Transfer buns, cut side up, to plates. Place lettuce on each bun bottom. Grill burgers 5 minutes, basting with glaze. Turn burgers, baste with glaze, and grill until cooked to desired doneness, about 5 minutes longer for medium. Press cheese atop each burger and allow cheese to melt. Place some sauce, then 1 burger on each bun bottom. Top each with 2 slices bacon and desired additional toppings. Cover with bun top. Serve with remaining sauce.

2 teaspoons Worcestershire sauce
Kosher salt and freshly ground pepper
1/2 cup mayonnaise
2 tablespoons Sriracha
1 tablespoon ketchup
Vegetable oil, for the grill
4 thick slices cheddar cheese
4 sesame hamburger buns, split
Shredded lettuce, for topping

Steps:

  • Preheat a grill to medium high. Cook the bacon in a large nonstick skillet over medium-high heat, turning, until browned and crisp, about 7 minutes. Transfer to a paper towel-lined plate to drain; break each slice in half.
  • Meanwhile, combine the ground beef, Worcestershire sauce, 1 1/2 teaspoons salt and a few grinds of pepper in a large bowl. Mix with your hands until just combined. Form the mixture into four 3/4-inch-thick patties. Press your thumb into the center of each patty to make a 1/2-inch-deep indentation.
  • Combine the mayonnaise, Sriracha and ketchup in a bowl. Brush the grill with vegetable oil. Grill the patties until marked and cooked through, about 3 minutes per side; top each with a slice of cheese during the last minute of cooking and cover to melt.
  • Toast the buns cut-side down on the grill. Serve the patties on the buns; top with the spicy mayonnaise, bacon and lettuce.

8 slices bacon, chopped
1 red onion, diced
2 to 3 jalapenos, diced
3 cloves garlic, minced
1 pound ground chuck
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
12 ounces elbow macaroni
3 1/2 cups beef broth
2 tablespoons grainy mustard
A few dashes Worcestershire sauce
2 cups grated Cheddar
2 tablespoons chopped fresh parsley
1/4 cup pickled jalapenos, optional

Steps:

  • Heat a large skillet over a medium heat. When the skillet is hot, add the bacon and cook until crisp, 8 to 10 minutes. Remove with a slotted spoon to a paper towel-lined plate. Drain all but 2 tablespoons of the bacon grease from the skillet and place back on the heat.
  • Add the onion, jalapenos and garlic to the skillet and stir. Add the ground chuck and season with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Stir in the tomato paste and cook for about 30 seconds.
  • Add the macaroni, broth, mustard and Worcestershire sauce. Give it a big stir and bring to a simmer. Cover and cook, stirring often, until the pasta is al dente and the sauce has thickened, about 10 minutes. Stir in the Cheddar. Sprinkle over the cooked bacon, parsley and pickled jalapenos, if using. Remove from the heat and serve.

1 lb ground beef, I use ground sirloin
1 jalapeno pepper, finely chopped
1 chipotle pepper, chopped (seeds and all)
1 Tbsp Adobo sauce
1 tsp liquid smoke
1/2 Tbsp onion powder
2 Tbsp mayonnaise
1 Tbsp Worcestershire sauce
4 strips of bacon
4 slice of your favorite cheese (pepper jack would be awesome)
4 ciabatta rolls
salt and pepper

Steps:

  • 1. Seed and finely chop your jalapeno pepper.
  • 2. Add ground beef and the chopped jalapeno to a bowl.
  • 3. Chop the chipotle pepper. Add that plus the adobo sauce to the ground beef and jalapenos.
  • 4. Add the liquid smoke, Worcestershire sauce, onion powder, and mayo to another bowl. Whisk together.
  • 5. Combine all ingredients into the bowl with the ground beef and thoroughly mix with your hands.
  • 6. Divide the ground beef into four sections and make your patties.
  • 7. Cook the burgers however you see fit. I grilled them and finished them off in the oven to help melt the cheese. You do what you see fit. Cooking them in a cast iron skillet would be remarkable.
  • 8. Don't forget to cook your bacon! Fry in a skillet. Or, I put mine in the oven at 375 for 12 to 15 minutes depending on your oven the cooking time may vary.
  • 9. Once your burgers are cooked, assemble them the way you see fit.

1 log (4 ounces) goat cheese, crumbled
1 tablespoon minced garlic

4 hamburger buns, split

Steps:

  • 1. In a large skillet over medium heat, cook the bacon until crisp, 10 to 12 minutes, turning occasionally. Drain the bacon on paper towels. Roughly chop the bacon into ½-inch pieces. 2. Prepare the grill for direct cooking over medium-high heat (400° to 500°F). 3. Roughly chop half of the jalapeños and set aside the remaining sliced jalapeños. In a large bowl gently mix the ground chuck with the roughly chopped jalapeños, the goat cheese, the garlic, and the salt. With wet hands, gently form four loosely packed patties of equal size, each about ¾ inch thick. Don't compact the meat too much or the patties will be tough.
