GRILLED LAMB AND FETA BURGERS

Grilled Lamb and Feta Burgers image

Provided by Claire Robinson

Time 43m

Yield 4 to 6 servings

Number Of Ingredients 14

1 1/2 pounds ground lamb
2 cloves garlic, finely minced
1/2 pound feta cheese, crumbled
1/2 teaspoon ground allspice
1/3 cup fresh parsley leaves, coarsely chopped
Kosher salt and freshly cracked black pepper
4 to 6 rolls or buns
Easy Tzatziki, recipe follows
1 cup Greek whole milk yogurt
1 English cucumber, seeded, finely grated and drained
2 cloves garlic, finely minced
1 teaspoon lemon zest plus 1 tablespoon fresh lemon juice
2 tablespoons chopped fresh dill
Kosher salt and freshly cracked black pepper

Steps:

  • In a medium bowl, combine the lamb, garlic, feta, allspice, parsley, salt and pepper, making sure not to overwork the mixture. Form the lamb mixture into 4 to 6 patties.
  • Heat a grill pan over moderately-high heat and cook the lamb burgers until a nice crust forms, about 4 minutes. Turn the burgers over and let cook another 4 minutes. Let the burgers rest 10 minutes. Serve topped with Easy Tzatziki on a roll or bun.
  • In a medium bowl, whisk together the yogurt, cucumber, garlic, lemon zest, lemon juice and dill. Season with salt and pepper. Chill.
  • What Really Makes This Recipe Sing: Allspice is one of those secret weapons in savory foods. You can't put your finger on it, but you know it is there. It was named by the English, because they thought it contained cinnamon, nutmeg and cloves. Shh, it is also the secret ingredient in Cincinnati-style chili.
  • What to toss in if you have it: Feel free to add some chopped fresh mint to this as well. Having a cocktail party? BYOC and makes these into mini's. Grab one before you serve because they will disappear fast.

SPICY LAMB PATTIES

Spicy Lamb Patties image

I was forced to create these when my favorite brand stopped making their lamb meatballs, which were a staple in my little food-obsessed world. They're even more scrumptious with a small side of plain yogurt with some mint and cumin stirred into it. Add rice or couscous and a green salad and you have a tasty, easy, somewhat elegant dinner! This recipe can also be used to make meatballs for frying, if you prefer.

CURRY-SPICED LAMB BURGERS

Curry-Spiced Lamb Burgers image

This recipe came from a revelation in the '70s, when my friend Semeon Tsalbins introduced me to the lamb burger. It is ground lamb - shoulder is best - highly seasoned and grilled rare. Because lamb is the most full-flavored of the everyday meats, it makes a more delicious plain burger than beef. Cooked with nothing but salt, it's fantastic. Cooked with a variety of spices, as it is here, it's a game-changer. You can also stuff the burger, as Mr. Tsalbins does on occasion, with smoked mozzarella.

Provided by Mark Bittman

Categories     dinner, easy, quick, weekday, burgers, main course

Time 20m

Yield 4 burgers

Number Of Ingredients 14

1 1/2 pounds boneless lamb shoulder, cut into chunks
1 medium (or 1/2 large) onion, peeled and cut into chunks
1 fresh chili, preferably jalapeño, seeded and minced
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon turmeric
Salt
freshly ground black pepper to taste
Diced mango to garnish (optional)
green and red pepper to garnish (optional)
red onion to garnish (optional)
scallion to garnish (optional)
shredded carrot to garnish (optional)
shredded lettuce, to garnish (optional)

Steps:

  • If grilling or broiling, heat should be medium-high and rack about 4 inches from fire. Put lamb and onion into a food processor (in batches if your machine is small) and pulse until coarsely ground. Put in a bowl with chili, coriander, cumin and turmeric, and sprinkle with salt and pepper. Mix, handling the meat as little as possible, until combined. Taste and adjust seasonings. Handling meat as lightly as possible to avoid compressing it, shape it into 4 or more burgers.
  • To broil or grill, cook about 3 minutes on each side for rare and another minute per side for each increasing stage of doneness. For stovetop, heat a large skillet over medium heat for 2 or 3 minutes, then add patties; cook, undisturbed, for about 2 minutes, then rotate them so they brown evenly. Turn once and cook for a total of about 6 minutes for rare.
  • Garnish with diced mango, green and red pepper, red onion and scallion, and with shredded carrot and lettuce.

Moroccan-style lamb burgers image

Lamb burgers make a great change from beef and the spicy rub gives full-on Moroccan flavour

Provided by Jamie Oliver

Categories     Mains     Alfresco     Beef     BBQ food

Time 25m

Yield 6

Number Of Ingredients 13

600 g quality lamb shoulder, minced
olive oil
6 burger buns
6 heaped tablespoons natural yoghurt
1 heaped tablespoon harissa paste
1 lemon
extra virgin olive oil
½ a bunch of fresh mint, (15g)

1-2 teaspoons sweet smoked paprika

Steps:

  • Pound all the dry rub ingredients and 1 teaspoon each of sea salt and black pepper in a pestle and mortar until fine.

  • Quickly halve and lightly toast the buns on the cool side of the barbecue or in the griddle.

SPICED MIDDLE EASTERN LAMB PATTIES WITH PITA AND YOGURT

Spiced Middle Eastern Lamb Patties with Pita and Yogurt image

Whether you spell it kefta or köfte or kufte or some other variation, you can find versions of these lamb or beef meatballs throughout the Middle East. The seasoning mixture here is simple, with spices you should already have on your shelf and you can play around, adding fresh or dried mint, grated onion, or a pinch of cinnamon. And if you like a garlicky yogurt sauce, by all means, add a minced clove.

Provided by Kristin Donnelly

Categories     Sandwich     Ground Lamb     Summer     Grill     Grill/Barbecue     Coriander     Cumin     Sandwich Theory

Yield Makes 4 to 6 pita sandwiches

Number Of Ingredients 14

Yogurt sauce:
1 cup plain full-fat or low-fat yogurt
2 tablespoons fresh lemon juice
2 tablespoons finely chopped herbs, such as mint, dill or cilantro, plus herb sprigs, for serving
Kosher salt
Patties and pita:
1 1/2 pounds ground lamb or beef
1 tablespoon minced garlic (about 1 large clove)
1 tablespoon coriander
2 teaspoons ground cumin
1 1/2 teaspoons hot paprika
11/2 teaspoons kosher salt
1 1/2 tablespoons extra-virgin olive oil
4 to 6 pita bread rounds

Steps:

  • For the sauce:
  • In a small bow, whisk the yogurt with the lemon juice. Stir in the chopped herbs, season with salt and refrigerate until ready to use.
  • For the patties and pita:
  • In a bowl, use your hands to mix together all of the ingredients, except for the pita. Form the mixture into twelve 3-inch oval patties (about 1 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm
  • Preheat a grill for at least 10 minutes and prepare it for grilling over moderately high heat. If you are using a charcoal grill, leave one area where you can grill the pita indirectly.
  • Oil the grill grates and grill the patties until dark brown grill marks form on the bottom, 5 to 6 minutes. Flip the patties and grill for 4 to 6 minutes longer, until just cooked through.
  • Meanwhile, wrap the pita in foil and set the package on the top shelf of a gas grill or in the cooler spot of a charcoal grill and allow them to warm through, 8 to 10 minutes.
  • Wrap 2 or 3 patties in each pita, spoon some of the yogurt sauce alongside and serve with herb sprigs, passing the remaining yogurt sauce at the table.

GREEK LAMB BURGERS

Greek Lamb Burgers image

Do something different on burger night...go Greek! These Greek lamb burgers are juicy, flavorful and super easy to make. The secret is in the meat mixture, combining aromatics with spices like oregano, earthy cumin, and paprika, plus a generous does of fresh mint and parsley. Unexpected, yet super homey and familiar! Looking for sides and salads to serve along? Check the post above.

Provided by Suzy Karadsheh

Categories     Entree

Time 30m

Number Of Ingredients 19

2 lb ground lamb Or a combination of lamb and beef (see cook's tip #1)
1 small red onion, grated
2 garlic cloves, minced
1 cup chopped fresh parsley
10 mint leaves, chopped
2 ½ tsp dry oregano
2 tsp ground cumin
½ tsp paprika
½ tsp cayenne pepper, optional
Kosher salt and black pepper
Extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
Warm Greek pita bread or buns
Homemade Tztaziki sauce
Sliced tomatoes
Sliced Green bell pepper
Sliced cucumbers
Sliced red onions
Pitted Kalamata olives, sliced
Crumbled feta

Steps:

  • Heat an outdoor gas grill or an indoor griddle to medium (if working with an indoor griddle or skillet, you can just heat it once you prepare the meat mixture).
  • Add the ground lamb (or mix of lamb and beef) to a mixing bowl. Add grated onions, garlic, fresh herbs, oregano, cumin, paprika and cayenne. Season with kosher salt and pepper. Add a generous drizzle of extra virgin olive oil, and mix until everything is well combined.
  • Divide the meat mixture into 8 equal balls. Using both hands, work meat into smooth spheres, then lightly press to form into patties. Arrange the patties on a large tray or dish, and with the tip of your thumb, press lightly to form a shallow, somewhat wide, depression into the center of each patty. (see cook's tip #2 below) Cover and refrigerate, if you have the time.
  • Lightly oil the grill grates (or indoor griddle) and arrange the burger patties on top. Grill over medium heat, covered, for 3 to 5 minutes on each side, turning once midway through cooking (internal temperature for a medium burger should register 160 degrees F. Adjust cooking time according to your desired doneness.)
  • Allow the lamb burgers to rest for 5 to 10 minutes before serving. Serve in pita pockets (or buns), with tztaziki sauce, tomatoes, cucumbers, peppers, onions. If you like add kalamata olives and a sprinkle of feta.

SPICY GRILLED LAMB PATTIES

Spicy Grilled Lamb Patties image

I grew up in a large family of good cooks. My Father was Egyptian and my Mother was half Hungarian and half Italian. I was always an observant person and enjoyed helping my parents cook. It was a pleasure to eat such wonderful food as they served! I watched and learned so much from them. My own children and friends and siblings...

1 LB ground lamb
6 oz crumbled feta cheese
2 clove garlic, peeled and finely minced
1/4 cup minced red onion.
1 small sprig(s) fresh rosemary, minced fine
Pinch crushed red pepper flakes
salt and pepper to taste
olive oil to brush on prepared patties before grilling.

Steps:

  • 1. Have lamb at room temperature to assure even cooking. Preheat charcoal or gas grill or use a grill pan indoors on your stovetop.
  • 2. Combine all ingredients and blend well. Form into 4 patties of medium thickness so they stay juicy. Brush lightly with olive oil on all sides to prevent sticking.
  • 3. Grill over hot coals until a meat thermometer registers medium rare to medium doneness for lamb. Overcooking is NOT recommended for lamb.
  • 4. I like to serve these with grilled flatbread and a salad of Lettuce, chopped tomatoes, oil-cured Moroccan olives, a bit of crumbled feta and a sprinkling of toasted pine nuts. I dress the salad very simply using a few TBSPS. good olive oil, fresh lemon juice, salt and pepper and a bit of Oregano. You may even enjoy combining the patties and salad and making a sandwich with the flatbread. However you choose to eat it, I believe you will enjoy it!

  • Place all the burger ingredients in a large bowl and mix together with your hands until thoroughly combined. Really give it a good squishing!
  • Divide the mixture into 4 and roll each quarter into a large ball then squash to make a burger patty.
  • Press a small dent in the centre of each burger to help stop the burger from rising up too much in the middle.

  • To prepare the sauce, process the sauce ingredients in your food processor until combined. Set aside.
  • In a medium bowl, mix together the burger ingredients. Form four (4 oz) patties, 3 inches in diameter and 1/2 inch thick. Or form into two half-pound patties, as shown in the video.
  • Preheat your grill over medium-high heat. I used a two sided, dual contact, George Foreman Grill, but any grill will work, including a grill pan. Lightly spray or brush the grill with oil.
  • Grill the lamb burgers to your desired level of doneness. For medium doneness, grill about 5 minutes on the George Foreman grill, or 4-5 minutes per side if using a regular grill or a grill pan.*

  • Light a grill or preheat a grill pan. In a medium bowl, combine the ground lamb with the cooked rice, egg and 1/4 cup of the cilantro. Add 1 teaspoon of kosher salt and 1/2 teaspoon of black pepper and gently knead the meat to blend. Using lightly moistened hands, form the meat into 12 patties, about 1/2 inch thick. Brush the patties with olive oil.
  • Grill the patties over moderate heat, turning occasionally, until browned and cooked through, about 6 minutes.
  • Meanwhile, in a food processor, combine the hot and mild chiles with the scallions, garlic and the remaining 1/4 cup of cilantro and pulse until chopped. Add the 1/4 cup of olive oil and process to a chunky puree. Season the harissa with salt. Wrap the lamb in the warm naan with tomatoes and feta. Spoon some of the green harissa on top and serve.

  • Combine the ground lamb, tomato paste, garlic, salt, a few grinds of black pepper, cinnamon, cumin, coriander and onion powder in a shallow bowl. Use a wooden spoon to combine the meat ingredients as best you can before doing a final, gentle mix with your hands. Gently form the patties into quarter-pound portions and make a slight depression in the center of each with your thumb. Place on a plate and refrigerate for 15 minutes.
  • While the lamb burgers chill, make the sauce. Combine the ketchup, tomato paste, cinnamon, cumin and coriander in a microwave-safe bowl. Heat on 50% power for about 30 seconds - just long enough to warm the mixture slightly, then stir in the mint and set aside until ready to use.
  • Oil the grill grates, add the onion slices and grill until they're lightly browned and softened, about 1 minute per side. Transfer to a plate and set aside.
