3/4 cup sugar
1/4 teaspoon kosher salt
1/2 cup unsweetened cocoa powder, preferably Dutch-processed
3 tablespoons unsweetened chocolate, chopped (1 ounce)
1 teaspoon pure vanilla extract
8 cups cold milk, or unsweetened dairy-free alternative (see note)

Steps:

Combine sugar, salt and 1/2 cup water in a small saucepan. Bring to a boil over medium heat, whisking to dissolve the sugar and salt, then add the cocoa powder while whisking. Whisk until smooth. Remove from the heat and add the chocolate. Whisk until melted, then whisk in the vanilla. Transfer to a jar and refrigerate until room temperature. If you're in a rush, you can transfer the syrup to a heatproof bowl set in a larger bowl filled with ice and water. Stir until room temperature.
Stir or whisk 2 tablespoons syrup into 1 cup whole milk. Add more syrup to taste. Repeat with remaining cups.

2 ounces spiced rum
1 cup skim milk
1 tablespoon chocolate syrup
1/2 teaspoon vanilla
cola or diet cola

Steps:

Add all ingredients except cola to a water bottle, drink mixer, or some other container with a lid.
Shake the hell out of it.
Pour into a glass and top off with cola. I use Diet Coke, and probably 1/2 cup of it, but for a sweeter drink, use more cola.
Drink.
Repeat several times.

1/3 cup very cold heavy cream
1 teaspoon granulated sugar
1/2 cup whole milk
1/4 cup malted milk powder
1 1/2 cups chocolate ice cream
Maraschino cherry, for garnish, optional

Steps:

Chill one 16-ounce serving glass (or two 8-ounce serving glasses) in the freezer.
For the whipped cream: Combine the heavy cream and sugar in a large, deep bowl. Whisk vigorously by hand until soft peaks form, 30 to 60 seconds. Set aside.
For the milkshake: Blend the milk and malted milk powder in a blender on high speed until the malted milk powder dissolves, 15 to 20 seconds. Add the chocolate ice cream and blend on high until creamy and thick, pushing down as needed, 20 to 25 seconds.
Pour the milkshake into the chilled glass and top with the whipped cream. Garnish with a maraschino cherry if using and serve immediately.

2 ounces Kahlua

Stir all together in a pyrex glass measuring cup, or what ever you have. (Use shot glasses to measure, though.).
Fill glass with ice.
Pour mixture over ice.
For extra fun, hang a small scoop of chocolate or coffee ice cream on the rim of the glass!
