1 tsp. hot pepper sauce

  • Mix ingredients until blended.

1/4 cup lemon juice
1/4 cup lime juice
1/3 cup orange juice
1 1/2 teaspoons chicken bouillon granules
1/2 teaspoon oregano
1/2 teaspoon rosemary
1/2 teaspoon basil
1 teaspoon crushed red pepper flakes
2 cloves minced garlic
4 chicken breast halves, skinned and boned

Steps:

  • Combine all ingredients to make a marinade and mix well.
  • Add chicken and marinate in the refrigerator for two hours.
  • Grill over medium heat for approximately 10 minutes per side or until fully cooked.

PORK CHOPS WITH SPICY CITRUS MARINADE



Pork Chops with Spicy Citrus Marinade image

1/2 cup fresh orange juice
1 teaspoon freshly ground black pepper
1/4 teaspoon chili powder
1/4 teaspoon paprika
a pinch cayenne, or to taste
two 1-inch-thick rib or loin pork chops (about 1/2 pound each)
2 tablespoons chopped fresh coriander leaves

Steps:

  • In a shallow baking dish whisk together orange juice, black pepper, chili powder, paprika, cayenne, and salt to taste. Add pork to marinade, turning to coat, and marinate at room temperature 20 minutes.
  • In a non-stick skillet cook pork in marinade, covered, over moderately high heat 6 minutes on each side, or until just cooked through. Sprinkle pork with coriander.

Yield Makes 300ml/½ pt, serves 4 adults and 4 kids

Number Of Ingredients 7

2small fresh red chillies , seeded
2 red peppers , seeded and roughly chopped
2 garlic cloves , crushed
1 shallot , roughly chopped
400g can chopped tomato with juice
100g dark muscovado sugar
3 tbsp sherry vinegar

Steps:

  • Blend the chillies, peppers, garlic, shallot and tomatoes in a food processor until smooth.
  • Pour the purée into a stainless steel saucepan, add the sugar and vinegar, then bring to the boil, stirring from time to time. Reduce the heat and simmer for 40-60 mins until thick, stirring regularly, especially in the latter stages of cooking.
  • Pour into large, warm sterilized jars then cool. This will keep for up to 2 weeks in the fridge.

1/2 cup fresh orange juice
1/4 cup fresh lime juice
2 teaspoons sugar
2 teaspoons Dijon mustard
2 tablespoons olive oil
Coarse salt and ground pepper

Steps:

  • In a small skillet over high heat, boil 1/2 cup fresh orange juice and 1/4 cup fresh lime juice until reduced to 1/2 cup, 8 to 12 minutes.
  • Remove from heat; whisk in 2 teaspoons sugar, 2 teaspoons Dijon mustard, and 2 tablespoons olive oil. Season with coarse salt and ground pepper.

We loved this flavorful summer recipe from the latest issue of Cooking Light. It can be prepared up to two days in advance--the tomatoes will take on more flavor the longer they marinate. I used grape tomatoes, rather than cherry, and substituted white wine vinegar for the white balsamic. If you prefer a milder heat, you will want to seed the pepper.

1/3 cup thinly sliced green onion (about 4)
4 garlic cloves, minced
1 jalapeno pepper, thinly sliced
1/3 cup white balsamic vinegar
1 tablespoon light brown sugar
1 tablespoon extra virgin olive oil
2 teaspoons minced peeled fresh ginger
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • In a large bowl, combine first 4 ingredients.
  • Stir together remaining ingredients in a small bowl until blended, then pour over tomato mixture; toss to coat.
  • Chill 1 hour.

  • Combine chopped bell peppers, jalapeno peppers, whole garlic cloves, dill and parsley into a large food processor or blender and pulse to finely chop.
  • Transfer mixture to medium bowl and add 1/2 cup vinegar, 1/2 cup olive oil, 1/2 cup sugar and 2 1/2 Tbsp salt. Stir to combine.
  • Cut tomatoes in halves (or quarters if using larger tomatoes), trimming off fibrous stem tops. Layer tomatoes and marinade into large 1 gallon jar, alternating with tomatoes and marinade until jar is full.
  • Cover with lid and tighten. Turn jar upside-down, placing it over a plate to catch any leaks. Refrigerate up-side-down 12 hours (*see note). After 12 hours, flip the jar right side-up and enjoy! Refrigerate remaining tomatoes keeping jar right-side-up.
