TUNA SALAD RECIPE
Recipe for Mexican style tuna salad with cilantro and lime. This is our photographer's recipe. Tuna salad served with saltine crackers is a very popular quick meal in Mexico.

Steps:
- Drain the tuna very well.
- Peel and finely chop the carrot.
- Finely chop the onion and celery.
- Remove the stems from the cilantro and finely chop the leaves.
- Place the tuna and the chopped ingredients in a mixing bowl. Add the mayonnaise and stir well.
- Add salt and pepper to taste.
- Wash and separate the lettuce leaves. Pat dry with a towel.
- On each cracker, place a lettuce leaf and then top with a spoonful of tuna salad. Serve with a sliced lime on the side.
- You can also use it as a filling for tuna salad sandwiches.

- Drain the canned tuna really well. Squeeze it in a colander or sieve if necessary.
- Crumble the tuna into a mixing bowl. Add mayonnaise, drained Greek yogurt, chopped celery, chopped red onion, chopped red bell pepper, chopped chipotle peppers, sweet relish, capers, chopped herbs, grated garlic and lemon zest.Tip: Adjust the amount of chipotle peppers as per taste.
- Combine it all together very well into a creamy and thick salad. Season with salt and pepper as per taste.
- Serve it as sandwiches with whole grain bread, wraps, on crackers, on a bed of greens or stuffed in veggies.

- Remove the stem and seeds from the ancho chiles and pat dry. In a small skillet, heat the vegetable oil until shimmering. Add the anchos and fry over moderately high heat, turning once, until blistered and fragrant, about 2 minutes. Blot the anchos with paper towels and transfer them to a food processor. Let cool.
- Add the serrano chiles, fish sauce, lime zest and juice and sugar to the food processor and puree until smooth. With the machine on, drizzle in the olive oil. Season with salt and transfer to a large bowl.
- Add the tuna, onion, tomatoes, celery, hearts of palm and capers to the chile dressing and toss well to coat. Season with salt. Cover and refrigerate for at least 20 minutes.
- Transfer the salad to a serving dish. Sprinkle with the rice powder and garnish with mint and cilantro leaves. Serve chilled, with toasts or sticky rice.

- Make the Dressing: In a small bowl whisk together all the ingredients for the dressing. Taste and adjust for seasoning with salt and pepper. Set aside.
- For the Tuna: Season the tuna steak on all sides with chili powder, coriander, ginger, salt and pepper. Place the sesame seeds on a plate and add the tuna, gently pressing to adhere the seeds and turning to fully coat.
- Heat a good drizzle both olive and sesame oil in a medium sauté pan over medium-high heat. Add the tuna and sear, about 30 seconds – 1 minute on each side depending on how cooked through you would like it. (The white sesame seeds should be slightly golden, but the inside of the tuna should be rare.) Transfer the tuna to a clean cutting board and let rest for a minute. Cut the tuna into ¼’’ thick slices.
- Optional: Return the sauté pan to the stove. Add the zucchini noodles and season liberally with salt and pepper. Cook for 3 minutes, or until warmed and al dente. Remove to bowl.
