Crumbled goat's cheese, olives and a few slices of fresh chilli give this simple salad real punch

1 bunch fresh marjoram, leaves picked
7 tablespoons extra virgin olive oil
sea salt
freshly ground black pepper
2 good handfuls rocket
1 bulb fennel, halved and very finely sliced
1 handful good-quality black olives
1 bunch lemon basil, leaves picked
½ lemon, juice of
200 g goat's cheese, crumbled
2 fresh red chillies, deseeded and finely sliced

Steps:

  • Preheat your oven to 200°C/400°F/gas 6.
  • Chop the marjoram leaves, or pound them in a pestle and mortar. Put them in a bowl with a tablespoon of olive oil and a pinch of pepper. Rub this mixture all over the goats' cheese and bake in the preheated oven for around 10 to 15 minutes until nice and golden.
  • Toss the rocket, fennel, olives and lemon basil together in a bowl. Dress your salad with around 6 tablespoons of extra virgin olive oil and just over half your lemon juice, and season. Divide over four plates and sprinkle over the crumbled goat's cheese and sliced chilli ... fantastic!

2 (6-ounce) creamy goat cheese disks, such as Coach Farm
Kosher salt and freshly ground black pepper
Minced fresh dill
Julienned fresh basil leaves
Crushed red pepper flakes
Good olive oil
Bread or crackers, for serving

Steps:

  • Find a small, wide-mouth canning jar or small glass vase (3 1/2 inches in diameter by 4 inches high), just large enough to hold the two goat cheeses on top of each other with a little room to spare. Cut each cheese in half horizontally, making 2 rounds from each. (A piece of dental floss makes this easier.)
  • Place half of the first disk flat in the jar, sprinkle with salt and pepper, then with 1/2 teaspoon dill, 1 teaspoon basil, and a few red pepper flakes, and drizzle with 1/2 tablespoon olive oil. Place another disk of cheese on top and repeat the seasonings, herbs, and oil. Continue with the remaining cheese disks, piling one on top of the other with oil and seasonings in between. When all the disks are stacked and seasoned, drizzle 1 tablespoon of olive oil on top. Cover and set aside at room temperature for one hour or refrigerate for up to 24 hours. Serve at room temperature with bread or crackers for people to help themselves.

WARM GOAT CHEESE IN PHYLLO



Warm Goat Cheese in Phyllo image

12 sheets phyllo dough, defrosted
6 tablespoons (3/4 stick) unsalted butter, melted
2 to 3 tablespoons plain dry bread crumbs
3 (3.5- to 5.5-ounce) fresh goat cheese discs
Baby salad greens, such as arugula and mesclun mix, for 6
2 tablespoons champagne vinegar
1 teaspoon Dijon mustard
1/2 teaspoon minced garlic
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup good olive oil

Steps:

  • Preheat the oven to 375 degrees F.
  • Unroll the sheets of phyllo dough on a flat surface and cover them with a slightly damp towel. (If the towel is too wet, the dough will get sticky.) Working quickly so the dough doesn't dry out, place one sheet of phyllo on a board, brush lightly with melted butter, and sprinkle lightly with bread crumbs. Place a second sheet of phyllo on top, brush with melted butter, and sprinkle with bread crumbs. Continue until you have 4 sheets stacked up. Cut the sheets in half crosswise to make 2 almost-squares.
  • Cut one of the goat cheeses in half horizontally, making 2 thin discs. Place each disc in the center of one phyllo square. Starting at one corner, fold the phyllo up over the cheese and continue folding and pleating the phyllo around the cheese, as though you're wrapping a round gift that's tied on top. You will end with extra phyllo dough on top; twist the excess into a topknot. Brush the discs all over with melted butter and place on a sheet pan lined with parchment paper. Continue with the remaining phyllo dough and 2 goat cheese discs to make 4 additional packages.
  • Bake for 20 minutes, until the phyllo is lightly browned. Allow to cool for 5 minutes.
  • While the cheese packages bake, place the salad greens in a large bowl. Whisk the vinegar, mustard, garlic, salt, and pepper together in a small bowl. Still whisking, slowly add the olive oil, making an emulsion. Toss the salad greens with enough vinaigrette to moisten.
  • Distribute the salad among 6 plates and place one warm goat cheese package in the center of each plate. Sprinkle with salt and pepper and serve.

HERB COATED GOAT CHEESE

3 tablespoons olive oil
36 (1/2-inch-thick) slices baguette
3 tablespoons finely chopped fresh Italian parsley leaves
2 1/2 teaspoons finely chopped fresh thyme leaves
2 teaspoons finely chopped fresh rosemary leaves
1 teaspoon lemon zest
1 teaspoon coarsely cracked black pepper
1/4 teaspoon salt
1 11-ounce log soft fresh goat cheese
1 1/2 tablespoons extra-virgin olive oil or Meyer lemon olive oil
Fresh herb sprigs, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy baking sheets. Drizzle 3 tablespoons of olive oil over the bread slices. Bake until the crostini are pale golden and crisp, about 10 minutes.
  • Meanwhile, stir the herbs, lemon zest, pepper, and salt in a medium bowl to blend. Using about 2 teaspoons of cheese for each, form the goat cheese into 1-inch diameter balls. Roll the cheese balls in the herb mixture to coat completely. Arrange the cheese balls on a platter. Drizzle the extra-virgin olive oil over and around the cheese balls. Serve with the crostini. Garnish with herb sprigs.
  • The crostini and cheese balls can be prepared 1 day ahead. Store the crostini in an airtight container at room temperature. Cover and refrigerate the cheese balls.

1 (11 ounce) log plain goat cheese
2 extra-large egg whites, beaten with 1 tablespoon water, for egg wash
Fresh bread crumbs
1 tablespoon olive oil
1 tablespoon unsalted butter

Steps:

  • Slice the goat cheese into 12 (1/2-inch-thick) slices. Dip each slice into the egg wash and then into the bread crumbs, being sure the cheese is thoroughly coated. Place the slices on a baking rack set on a sheet pan and chill for at least 15 minutes.
  • Heat the oil and butter in a medium saute pan over medium-high heat. Add the goat cheese slices and cook on both sides until browned on the outside but not melted inside.

TOMATO STEAK WITH BAKED GOAT CHEESE AND HERB SALAD

1/4 cup fine dried bread crumbs
Gray salt
Freshly ground black pepper
1 large egg
4 rounds fresh goat cheese, about 2 ounces each
4 thick, ripe beefsteak tomato slices
2 tablespoons extra-virgin olive oil, plus more for the salad
2 cups lightly packed mixed tender fresh herb leaves such as basil, chervil, tarragon, Italian flat-leaf parsley, chives (1-inch lengths), or young cress
Red wine vinegar

Steps:

  • In a small, shallow bowl, mix the bread crumbs with salt and pepper, to taste. In another small, shallow bowl, beat the egg just until blended. Dip each goat cheese round in the egg, and then in bread crumbs, patting the crumbs in place. Cover and refrigerate the coated cheese rounds for about 15 minutes.
  • Center the tomato slices on 4 salad plates and season with salt and pepper.
  • Heat a large nonstick skillet over moderately high heat and pour in 2 tablespoons olive oil. When the oil is almost smoking, add the cheese rounds. Cook until lightly browned, about 45 seconds. Turn them over and cook on the other side until the cheese just feels quivery, about 45 seconds longer, depending on the thickness of the rounds. Place a cheese round on each tomato slice.
  • In a bowl, toss the herbs with a light drizzle of olive oil, a splash of red wine vinegar, and salt and pepper, to taste. Mound the herbs on top of the cheese, dividing them evenly. Serve immediately.
  • Michael's Notes: This salad looks best when the tomato slice and the goat cheese slice are about the same size. So if you can only find goat cheese in small logs, you may want to serve 2 goat cheese rounds to each diner and perch them on slices of smaller tomatoes.
  • Be sure you take all the stems off the herbs carefully so your guests can enjoy just the soft leaves.

1/3 cup lemon juice
1 tablespoon green onion, thinly sliced
1 tablespoon honey
1 teaspoon Dijon mustard
1/2 cup Italian seasoned breadcrumbs
1 1/2 tablespoons parmesan cheese, grated
1 1/2 tablespoons sesame seeds
12 ounces goat cheese (three logs)
1 large egg, lightly beaten
3 tablespoons butter
10 ounces mixed baby greens
12 kalamata olives, pitted and sliced

Steps:

  • Combine dressing ingredients and whisk well.
  • Combine bread crumbs, parmesan, and sesame seeds.
  • Cut each log of goat cheese into four slices. Dip each in egg and dredge in bread crumb mixture. Cover and chill two hours.
  • Melt butter in skillet over medium high heat. Fry goat cheese in two batches for 1-2 minutes per side or until browned. Drain on paper towels.
  • Toss salad with dressing. Top with olives and warm goat cheese.

4 rounds French bread 1/2-inch thick
8 ounces fresh goat cheese, preferably in a log
6 tablespoons fruity extra-virgin olive oil
1 head Boston lettuce
2 tablespoons sherry vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon fresh rosemary leaves
1/2 teaspoon chopped fresh chervil
1 teaspoon minced chives
Freshly ground black pepper

Steps:

  • Lightly toast the bread, then arrange the slices on a broiler pan lined with foil. Top each slice of toasted bread with a thick slice of the goat cheese. Brush the portions of cheese with half the olive oil and set aside until just before serving time.
  • Rinse and dry the lettuce, tear it into bite-size pieces and arrange it on each of four salad plates.
  • Just before serving time mix the vinegar and mustard together, then beat in the remaining three tablespoons of olive oil. Drizzle the dressing over the lettuce on the plates.
  • Preheat broiler and broil the goat cheese until it is just beginning to color along the edges. Center a portion of goat cheese on toast on each salad, sprinkle with the herbs and pepper and serve at once.

1 cup good quality- aged balsamic vinegar

2 teaspoons soy sauce
2 tablespoons rice vinegar
1 teaspoon cracked pepper
1 cup extra virgin olive oil
8 ounces baby greens
1/2 cup candied pecans (optional)
1/4 cup shaved carrot (optional)
1/4 cup red onion (optional)

Steps:

  • Cheese:.
  • Combine garlic, thyme, pepper, salt, and oil in a bowl.
  • Whisk to incorporate ingredients.
  • Place the cheese slices into the mixture making sure to coat all sides.
  • Cover and refrigerate overnight.
  • Dressing:.
  • Using a whisk mix all ingredients except olive oil in a bowl. After all are well mixed use whisk and slowly add oil to emulsify. Refrigerate till ready to serve.
  • Before serving place a cookie sheet in oven and preheat to 350°.
  • Spread bread crumbs onto plate and roll the cheese in them. Make sure to press the crumbs into the cheese.
  • Transfer the cheese onto the hot pan and cook for 8 minutes.
  • Toss the greens and all desired add ins together w/ desired amount of dressing and top each salad with cheese.
  • Serve while cheese is warm.
  • Prep time does not include chilling time.
