The sweetened condensed milk in the lemon topping makes these bars a bit like a lemon cream pie with its layer of smoothness atop a shortbread-like base.

1 1/2 cups all-purpose flour
Crust:
1 1/2 sticks (6 ounces) unsalted butter, at room temperature, plus more for greasing
3 tablespoons cornstarch
1/3 cup granulated sugar
1/4 teaspoon fine salt
Filling:
1/2 cup sweetened condensed milk
1/2 cup granulated sugar
1/3 cup all-purpose flour
Pinch fine salt
2 large eggs
2 large egg yolks
3/4 cup plus 2 tablespoons freshly squeezed lemon juice (about 7 lemons)
1 tablespoon fresh orange juice
Confectioners' sugar, for dusting

Steps:

  • For the crust: Lightly brush a 9- by 13-inch baking pan with butter. Beat the butter and granulated sugar with an electric mixer in a large bowl until light and fluffy, about 4 minutes. Whisk the flour, cornstarch and salt together in a medium bowl. Slowly add the dry ingredients to the butter and mix just until combined. Evenly press the dough into the prepared pan. Cover and refrigerate at least 1 hour.
  • Preheat the oven to 325 degrees F. Pierce the dough all over with a fork. Bake until golden, about 30 minutes. Cool.
  • For the filling: Whisk the sweetened condensed milk, granulated sugar, flour, salt, eggs and yolks in a large bowl until thick and light. Lightly whisk in the citrus juices. Pour the filling into the crust. Bake until set but still loose in the center, about 25 minutes. Cool to room temperature, and then refrigerate at least 1 hour.
  • Cut into 2-inch squares and just before serving, dust generously with confectioners' sugar.

Lemon bars are all about contrast: sour lemon and sweet sugar, crumbly base and creamy topping, buttery crust and tart filling. Two common ingredients lift this recipe above the pack: baking powder for a fluffy filling and shredded coconut for a rich, round-tasting crust. (Once baked, the coconut flavor almost disappears.) Bakers who avoid preservatives will find an easy version of homemade sweetened coconut in the tip below the recipe.) For thicker lemon squares, use the square baking pan; for thinner ones, the large rectangle. For an easy lemon tart, simply cut the recipe in half and bake it in an 8-inch round tart pan, pressing the crust up the sides.

2 cups/240 grams all-purpose flour
1 cup/225 grams very cold unsalted butter (2 sticks), cut into small chunks
1/2 cup/50 grams sweetened shredded coconut (see note)
1/4 cup/30 grams confectioners' sugar, more for sprinkling
Pinch of salt
2 cups/400 grams granulated sugar
4 eggs
1/2 cup/120 milliliters freshly squeezed lemon juice
1/4 cup/30 grams all-purpose flour
1 teaspoon baking powder
Pinch of salt

Steps:

  • Make the crust: Heat oven to 350 degrees. Butter a 9-by-13-inch or 9-by-9-inch baking pan, preferably nonstick.
  • In a stand mixer or food processor, combine crust ingredients. Mix or pulse until well combined and moist clumps form. Using your hands, press mixture evenly but gently into prepared pan.
  • Bake crust until edges and top are light golden brown, 20 to 25 minutes. Rotate once for even browning.
  • Meanwhile, make the filling: Whisk all the ingredients together until smooth.
  • Pour filling over hot parbaked crust and return to the oven. Bake until filling is almost set, about 20 minutes more. (Thicker squares, baked in the 9-by-9-inch pan, will take longer.) Start checking after 15 minutes; when you give the pan a gentle shake, filling should be lightly set all over and still quivery in the very center.
  • Let lemon bars cool completely in the pan on a wire rack. Sprinkle the top lightly and evenly with confectioners' sugar.
  • Cut into squares, diamonds or rectangles and remove from pan. Keep refrigerated until ready to serve. If desired, sprinkle again with confectioners' sugar just before serving.

I adopted this recipe after Mean Chef (IHHDRO) left the site. Mean Chef's quote on the recipe: "DBMNMR = Don't Blame Me, Not My Recipe", and therefore, I haven't felt badly about making a few changes. The original recipe had a much thicker graham cracker crust, and didn't really balance well with the delicate and refreshing lemon flavor of the bars. I have since adjusted those measurements for a thinner crust, and hope that you enjoy it.

1 cup graham cracker crumbs
2 tablespoons unsalted butter, melted
2 tablespoons sugar
3 extra-large eggs
1/3 cup fresh lemon juice, strained
1 cup granulated sugar
1 teaspoon baking powder
1/4 cup confectioners' sugar, about
1 pinch salt
2 lemons, zest of, finely grated

Steps:

  • Preheat the oven to 350 degree F with a rack in the center of the oven.
  • Make in a 9 inch square pan.
  • Place the graham cracker crumbs and the melted butter in a medium mixing bowl.
  • Use a wooden spoon or a rubber spatula to mix them together thoroughly.
  • Scrape the mixture into the baking pan, and use your fingers to press the mixture evenly onto the bottom of the pan.
  • Bake for 7 minutes, then remove the pan from the oven to cool while you make the lemon filling.
  • Keep the oven at temperature setting.
  • Break the eggs into a large mixing bowl, then add the granulated sugar.
  • With the mixer on high speed, beat the mixture until it is light yellow and almost doubled in volume, about 3 minutes.
  • Move the beaters around the bowl and scrape down the sides with a rubber spatula several times while mixing.
  • Add the baking powder and salt, and beat on low speed until just mixed, scraping down the sides of the bowl.
  • Beat in the lemon zest and juice.
  • Pour and scrape the filling into the crust and smooth the top with a rubber spatula.
  • Bake for 25 minutes, or until the top is golden brown and wiggles only slightly when the pan is moved.
  • Remove the pan from the oven and allow it to cool.
  • Place confectioners' sugar in a small sieve and sprinkle generously over the top of the cooled fining.
  • Cut into 16 squares.

35 vanilla wafers, finely crushed (about 1-1/3 cups)
1 cup sugar, divided
1/4 cup butter or margarine, melted
1 tsp. zest and 1/4 cup juice from 2 lemons, divided
2 eggs
2 Tbsp. flour
1/2 tsp. baking powder
1/3 cup BAKER'S ANGEL FLAKE Coconut

Steps:

  • Heat oven to 350°F.
  • Combine wafer crumbs, 1/4 cup sugar, butter and lemon zest; press onto bottom of 8-inch square pan. Bake 8 min.
  • Whisk eggs and remaining sugar in small bowl until blended and thickened. Add lemon juice, flour and baking powder; mix well. Pour over crust; sprinkle with coconut.
  • Bake 25 to 30 min. or until center is set and top is lightly browned. Cool completely. Refrigerate several hours or until chilled before cutting to serve.

2 cups flour
3/4 cup sugar
1 teaspoon baking powder
2 cups coconut
1 pinch salt
1 cup butter

Steps:

  • Preheat oven at 350°F.
  • Mix together dry ingredients.
  • Cut butter in until the butter is completely incorporated into the dry ingredients.
  • Press half the crumb mixture into a 9 x 13 well greased pan.
  • Pour lemon filling ( commercial or homw made ) over the bottom crumbs.
  • Gently sprinkle the remaining crumbs over the lemon filling.
  • Bake for 30 - 35 minutes or until light golden brown.
  • Cool completely in pan before cutting into squares

  • 1/3 cup corn starch.
  • 1/3 cup cake flour.
  • pinch of salt.
  • 1 1/2 cups of sugar.
  • 5 egg yolks, slightly beaten.
  • Zest of 2 large lemons.
  • Juice of 2 large lemons.
  • 2 cups water.
  • 2 tablespoons of butter.
  • In a medium sauce pan, combine corn starch, cake flour, sugar and salt. Pour in water and stir constantly over medium low heat until mixture comes to a slow boil. Remove the pan from the heat and reduce heat to low. Pour about a cup of this mixture onto the slightly beaten egg yolks while whiosking constantly. Pour the egg mixture back into the other mixture, whisking constantly. Return to the stove and cook for an additional 3 minutes, stirring constnatly. remove from heat and stir in lemon juice and lemon rind. Whisk in butter, one tablespoon at a time.

Steps:

  • Preheat oven to 350°F degrees.
  • Lightly grease a 13x9 baking pan; set aside.
  • In a medium bowl, combine flour& powdered sugar; cut in margarine with pastry blender until crumbly.
  • Press mixture into bottom of prepared 13x9 pan & bake for 15 minutes.
  • Meanwhile in a large bowl, combine eggs, sugar, baking powder & lemon juice.
  • Pour over crust and top with coconut.
  • Bake 20 minutes or until golden.
  • Cool completely & cut into bars.
  • Store in refrigerator.
  • NOTE: For plain lemon bars, omit coconut & add 3 Tbsp flour to egg mixture, and proceed as above.
