225 chorizo ring, sliced
1 onion, finely chopped
1 garlic clove, finely chopped
300g pearl barley
400g can chopped tomato with sliced olives
1l hot chicken stock, made with 1 stock cube
2 stalks rosemary, leaves chopped

Steps:

  • Heat a non-stick frying pan over a medium heat and fry the chorizo for 3-4 mins until it turns golden and releases its oil. Remove with a slotted spoon and set aside.
  • Add the onion and garlic to the pan, and cook for 3-4 mins, until they begin to soften. Add the pearl barley and stir well to coat in the oil, before tipping in the chopped tomatoes and the chicken stock. Bring just to the boil, then turn down to a simmer and cook for 30 mins, stirring occasionally, until all the liquid has been absorbed and the pearl barley is tender. You may need to top up with a little extra water as you go.
  • Season and stir in the rosemary and chorizo to serve.

Tuck into this comforting dinner flavoured with harissa and paprika, and made with pearl barley instead of risotto rice

2 tbsp rapeseed oil
1 onion, finely chopped
4 garlic cloves, crushed
65g diced chorizo
2 tsp paprika
400g can chopped tomatoes
800ml low-salt vegetable stock
300g pearl barley, rinsed
1-2 tbsp rose harissa, to taste
200g cherry tomatoes, any larger ones halved

Steps:

  • Heat the oil in a large saucepan over a medium heat and fry the onion for 5 mins until softened slightly. Add the garlic, chorizo and paprika and fry for 1 min more until fragrant and the chorizo is starting to crisp. Tip in the canned tomatoes, stock, pearl barley and harissa.
  • Bring the mixture to the boil, cover with a lid, reduce the heat and simmer for 25 mins, stirring occasionally. Tip in the cherry tomatoes and simmer for 10-15 mins more until the pearl barley is tender, with just a little bite. Serve in bowls.

1 tbsp olive oil
100g smoked bacon , diced
2 shallots , chopped
2 garlic cloves , crushed
350g small cooking chorizo
300g risotto rice
1l hot chicken stock
300g frozen broad beans

Steps:

  • Heat the oil in a medium-sized pan, then add the bacon, shallots, garlic and chorizo. Gently cook for 8 mins, stirring occasionally so everything cooks evenly.
  • Stir in the rice, coating all over with the cooking juices in the pan. Add just enough stock to cover the rice, bring to a simmer and gently cook until all the liquid is absorbed. Continue adding the stock a ladleful at a time, and gently cook. Just before the final ladleful of stock, add the broad beans and stir through, cooking for 3-4 mins until tender. Remove the chorizo, slice thinly, return to the pan and mix through before serving.

4 cups chicken stock
1 cup white wine
1 pinch saffron thread
30 g butter
1 tablespoon olive oil
2 garlic cloves, crushed
2 chorizo sausage, cut into thick slices
1 red pepper
1 green pepper
2 cups arborio rice
2 tomatoes
cracked black pepper
1/2 cup finely grated parmesan cheese
sea salt
1/4 cup freshly chopped parsley
parmesan cheese, shavings. to serve

Steps:

  • Preheat oven to 160 degrees celsius.
  • Heat stock, wine and saffron in a saucepan, cover and keep at simmering point.
  • Heat the butter and oil in a large ovenproof casserole baking dish. Add the garlic and onion and cook over medium heat until the onion is soft.
  • Add the chorizo and chopped peppers and cook for 5 minutes or until the chorizo softens. Stir in the rice and cook, stirring for 1 minute or until the rice is coated with oil.
  • Add the tomatoes and the stock mixture to the dish. Season with cracked black pepper. Cook uncovered on the middle oven shelf for 30 minutes.
  • Remove risotto from oven, stir in the parmesan and cook in the oven for a further 15 minutes or until the rice is soft.
  • Stir the parsley through the risotto, season with sea salt and cracked pepper.
  • Serve with parmesan shavings.

225 g pearl barley
2 chicken stock cubes
50 g butter
1 pinch saffron
1 onion
1 pepper
110 g chorizo sausage
110 g bacon
2 garlic cloves
1 teaspoon thyme
1 teaspoon paprika
120 ml white wine
400 g tomatoes
110 g peas
225 g prawns

Steps:

  • Put the pearl barley into a saucepan and add enough water to cover generously. Add the stock cubes, bring to the boil, then reduce the heat and simmer for 1 1/2 hours until tender, topping up the water if necessary.
  • Melt the butter in a large frying pan or wok and gently saute the saffron, onion, and pepper for 5 minutes. Add the chorizo and bacon, and fry on a higher heat for a further 5 minutes.
  • Add the garlic, most of the thyme leaves, paprika, wine, tomatoes, and peas. Bring to the boil, then simmer for 5 minutes. Stir in the prawns and simmer for 2 minutes to heat them through.
  • Drain the pearl barley thoroughly and stir it into the other ingredients, making sure it's piping hot. Serve immediately, garnished with a few thyme sprigs.
