- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the cumin, salt, chili powder and pepper. , Transfer to a 4-qt. slow cooker; stir in the beans, tomatoes, corn, enchilada sauce, onions and cilantro. Cover and cook on low for 6-8 hours or until heated through., In a small bowl, combine muffin mix and eggs; spoon over meat mixture. Cover and cook 1 hour longer or until a toothpick inserted in the center comes out clean., Sprinkle with cheese; cover and let stand for 5 minutes. Serve with sour cream and additional cilantro if desired.

- In a 5-6 quart slow cooker combine garlic, tomatoes and accompanying juices, mushrooms, onion, jalapeno, zucchini, bell pepper, beans, chile powder, cumin, oregano and salt. Stir to combine, cover and cook on low for 6 hours. Increase slow cooker heat to high. Meanwhile, prepare cornmeal batter: In a medium bowl, whisk cornmeal and baking powder. In a large glass measuring cup or small bowl, whisk egg, milk, oil and vinegar. Add to cornmeal mixture and stir to combine. Stir in cheddar. Remove lid from slow cooker. Pour cornmeal mixture over top of vegetable mixture and spread evenly to form a crust. Place a clean dish towel over top of slow cooker and replace lid, resting over top of towel (this will prevent condensation from wetting the surface of the cornmeal crust). Cook for 1 hour, until cornbread sets. Remove lid and towel and slice into wedges.

SLOW COOKER TAMALE PIE
Looking for a easy mexican dinner. look no further! My husband and I love this stuff since I work till after 10pm most nights. Smack it in the crockpot at night and my lunch is waiting for me when I wake up the next morning. I leave the seasoning open because everyone has a different taste for heat I don't do a lot of chili powder with the ancho chili's but I love cumin and the other seasoning. Another good suggestion is mixing green onions into the gorn muffin mix, I top with shedded smoked cheddar cheese and a little sour cream. Hope you enjoy.

- 1. Season ground beef to taste with seasoning listed and brown in a pan till cooked through. Add to slow cooker.
- 2. Add remaining ingredients to slow cooker, seasoning with spices as needed.
- 3. Mix corn muffin mix as instructed on package. Stir in chopped green onions if you like. Pour evenly over top of ingredients.

- Place the ground beef in a skillet over medium heat, and cook and stir the beef until it is browned, about 10 minutes, breaking up the meat as it cooks. Drain the beef, and place it into the slow cooker. Stir in the kidney beans, enchilada sauce, and garlic powder.

- Combine tomatoes and boiling water; let stand 20 minutes.
- Drain tomatoes in a sieve over a bowl; set aside, reserving 1 Tbs tomato-soaking liquid.
- Combine 4 cups water, cornmeal, and salt in a large saucepan, and bring mixture to a boil.
- Cook cornmeal mixture over medium heat 5 minutes or until mixture is thick, stirring constantly with a whisk.
- Stir in cheese.
- Pour half of cornmeal mixture into a lightly greased Pyrex pan, 13 x 9.
- Preheat oven to 400 degrees.
- In a large skillet, saute onion in a little olive oil til onion is soft.
- Add tomatoes, reserved tomato liquid, oregano, chili powder, beans, corn, and chiles, and cook 1 minute.
- Spoon bean mixture evenly over cornmeal crust.
- Drop remaining cornmeal mixture onto bean mixture.
- Bake pie at 400 degrees for 30 minutes or until set.
- Serve pie with low-fat sour cream.
