I've read lots of accounts of how soy milk won't set in Jello Instant Pudding because of the lack of casein, lack of calcium, etc. Here's how I got it to work

Steps:
- 1. Heat soy milk to about 160 to 170. Just under boiling is fine.
- 2. Follow directions on back of box.
- You should see your pudding start to thicken as soon as you add in the powder. I used Jello Sugar and fat free chocolate pudding mix and pistachio pudding mix.

INSTANT SOYMILK PUDDING
Very simple recipe, but if anyone has ever tried making instant pudding with soymilk you have probably been very disappointed! This trick will not leave you with a runny mess, just a creamy, yummy instant treat that is pretty healthy too! I like my pudding thick, so I use 1 cup of soy, but if you like a thinner pudding just increase the soymilk by 1/4 or 1/2 cup.

- Empty pudding mix into a bowl.
- Add soymilk and whisk until smooth.
- Refrigerate until set.
- NOTE: Try with different flavors of pudding and soy milk! Or, make double chocolate pudding by using chocolate pudding with chocolate soy milk. I usually use Soy Slender, but I'm sure your favorite brand will work just fine.

SOY MILK
For those who like to know how to make soy milk. Preparation time does not include the 8hrs/overnight soaking.

Steps:
- Drop soaked soybeans in continuous 4 cups boiling water with baking soda. Blanch for 5 mins and rinse.
- . After rinsing, add a cup of hot water and process the beans in a food processor or blender. Careful, it's hot so be sure to cover it well.
- Next, boil the remaining 7 cups of water and put in the processed beans and sugar/maple syrup/vanilla for 20 mins stirring occasionally and removing the thin film formed on top.
- Strain the bean particles using a cheesecloth. The soy milk would be hot so this serves as a warning. Either use silicon gloves, or press the spatula against the cheesecloth to strain out the liquid.
- Drink hot or cold and can last til a week in a ref.
- Freeze or use the okara (bean residue) for other recipes.

- Mix together rice milk (or soy, or coconut, or cashew or almond--see post notes) and pudding mix in a saucepan over medium heat. Bring to a boil, and boil for one minute, constantly stirring.
- Pudding may be eaten immediately--be careful, it's hot! Or it can be eaten after being refrigerated. Pudding will set further as it cools.
- If you find it's set too much--especially if you refrigerate it (which rarely happens for us, we usually eat it in one sitting), you can add in 1 Tablespoon of milk alternative at a time to thin it back out to the consistency you prefer.

Who says roughing it means you can't have dessert? This simple recipe is very tasty, and can be used for backpacking, camping, picnics, or even just to have at home for the kids to make a single serving for a snack.

- Before your trip: Empty the pudding mix into a bowl. Add the Instant Skim Milk Powder and mix well. Divide mixture evenly into 4 baggies.
- At camp: Pour powder into a bowl. Add 1/2 cup cold water. Mix well to get all lumps out. Let stand 3-5 minutes until set. Enjoy the pudding while your campmates are jealous over your awesome dessert.
- Tip 1: Label the baggies "Instant Pudding - add 1/2c water, mix well, let set, enjoy!
- Tip 2: Choose your camping style: If you empty the powder into a bowl at camp, then you have a bag to reuse (but you have to wash the bowl). If you add water to the baggie, zip it closed and knead it to mix well, then eat it out the bag (Saves washing a bowl, but you have a dirty bag to add to your trash to carry out).

- Spoon 1/2 the pudding evenly into 12 (16-oz.) glasses, adding about 2 Tbsp. pudding to each glass; top evenly with 1/2 the cake cubes. Add 2 Tbsp. COOL WHIP, 4 strawberry halves and 2 Tbsp. blueberries to each glass. Cover with layers of remaining pudding, cake cubes and COOL WHIP.
