1 1/2 cups brown sugar, packed
1/2 teaspoon salt
2/3 cup butter
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 eggs, beaten
1 1/3 cups buttermilk
1/2 cup nuts, chopped (optional)

Steps:

  • Preheat oven to 350ËšF. Grease bottom and 1/2 inch up the sides of a 13x9x2-inch baking pan; set aside. In a medium bowl, combine flour, brown sugar, and salt. Cut in butter until mixture resembles coarse crumbs; set aside 1/2 cup. Stir baking powder, baking soda, cinnamon, and nutmeg into remaining crumb mixture.
  • In another bowl, combine eggs and buttermilk. Add egg mixture all at once to flour mixture and mix until just combined. Spoon batter into prepared pan. Combine reserved crumb mixture and nuts; sprinkle over batter.
  • Bake at 350ËšF for 35-40 minutes, or until a wooden toothpick inserted in the center comes out clean. Serve warm.

Got this off of one of the wally world recipe cards that they have out during the holidays.. Credit was given to a Georgia C. Harris. This recipe is actually fairly mild in flavor - the spices lend a pleasant hint of fall ( and make me hanker for some eggnog ), but it isn't "spicy" so far as heat content. My preferance is fresh ground nutmeg, but all I had was pre-ground, and it turned out fine. I plan to try some vanilla extract next time - I'll update accordingly.

2 1/2 cups self rising flour
2 cups brown sugar, packed
1/2 teaspoon salt
2/3 cup shortening
1/2 teaspoon baking soda

1/2 cup walnuts (or pecans, finely chopped )

Steps:

  • Preheat oven to 350 degrees F, and coat 10 inch bundt pan w/non stick spray ( I like baking Pam with flour ).
  • In lrg bowl stir together flour, brown sugar & salt. Cut in shortening ( a fork will work, but pastry cutters are best ) until the mix looks like fairly coarse crumbs. Set aside 1/2 cup of crumb mix. Then stir the baking soda,cinnamon, & nutmeg into the "crumb" mix.
  • In a smaller bowl gently mix the eggs and buttermilk together. Slowly add to crumb/spice mix, until just combined ( no dry spots, but will look lumpy due to the shortening bits ).
  • Sprinkle reserved crumb mix and nuts into the bundt pan. Carefully pour batter over, and gently tap the sides of the pan to get a level surface.
  • Bake for 50-55 minutes, or until a toothpick or cake tester comes out clean. Cool in pan for 10-15 mins ( on a wire rack if possible ), then remove from pan. Can be served warm or cool.

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease and flour 2 (9-inch) cake pans. In a large mixing bowl with an electric mixer, cream the brown sugar and butter. With the mixer running, add the oil in a steady stream. Add the egg yolks, one at a time, beating well after each addition. Sift the flour, baking soda, baking powder, spices and salt into a medium-size mixing bowl. Alternately add the flour mixture and the buttermilk to the batter, mixing well. With the electric mixer, in another large mixing bowl, beat the egg whites until stiff peaks form, then fold them into the cake batter. Pour the batter evenly into the prepared pans.   • For the cake: Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, apple pie spice, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream in 2 additions, beginning and ending with the flour. Beat until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the apple butter on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.

  • For buttermilk spice cake:
  • Preheat oven to 350°F. Butter and flour 9-inch-diameter cake pan with 2-inch-high sides; line pan with round of parchment paper. Sift first 9 ingredients into medium bowl. Using electric mixer, beat butter in large bowl until fluffy. Gradually add sugar, beating until smooth. Beat in eggs 1 at a time, beating to blend between additions. Scrape in seeds from vanilla bean and add lime peel; beat to blend. Beat in flour mixture in 4 additions alternately with buttermilk in 3 additions, scraping down bowl occasionally. Transfer batter to prepared pan.

2 1/4 cups flour (I use all purpose and it turns out fine)
1/4 teaspoon salt
1 1/2 teaspoons cinnamon

1 cup buttermilk (the dry buttermilk found in the baking section of the store will work, just follow the package instr)
1 egg, slightly beatten
1/2 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Mix flour, salt, and 1/2 teaspoon of cinnamon into a large mixing bowl. Add sugar and oil and mix on medium speed until well blended and feathery.
  • Remove 3/4 cup of this mixture and put in a smaller mixing bowl for the topping. Add walnuts and remainder of cinnamon to the contents of the smaller bowl for the topping, mix well and set aside for later.
  • To remaining mixture (not the topping) add baking soda, baking powder, egg and buttermilk. Mix until smooth, this is the coffeecake batter.
  • Spoon the cake batter into a buttered 9 x 13 baking dish. Sprinkle the topping over the cake batter and press lightly with fingers. Bake at 350 degrees for 25 - 30 minutes.

1/2 teaspoon salt
1/4 teaspoon ginger
2 teaspoons cinnamon
1 cup brown sugar
3/4 cup sugar
3/4 cup corn oil
1 cup chopped walnuts or 1 cup pecans
1 teaspoon baking soda
1 teaspoon baking powder
1 egg, beaten
1 cup buttermilk

Steps:

  • Mix together in a large bowl the flour, salt, l teaspoons cinnamon, ginger, both sugars, and corn oil.
  • Remove 3/4 cup of this mixture, and to it add the nuts and the remaining l teaspoons cinnamon.
  • Mix well, and set aside to use as a topping.
  • To the remaining batter, add the baking soda, baking powder, egg and buttermilk.
  • Mix to combine all ingredients. Small lumps in the batter are okay.
  • Pour the batter into a well greased 9x13 pan.
  • Sprinkle the topping mixture evenly over the surface.
  • Bake at 350 for 40 to 45 minutes.
