ROASTED BROCCOLI

Roasted Broccoli image

How to make perfect crispy Roasted Broccoli in the oven. Top with Parmesan and lemon or enjoy it just as is. A fast, healthy side dish!

Provided by Erin Clarke / Well Plated

Categories     Side Dish

Time 40m

Number Of Ingredients 7

1 large head broccoli (about 1 3/4 pounds or 2 small broccoli crowns)
2 1/2 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon granulated sugar
¼ teaspoon ground black pepper
Pinch red pepper flakes (optional)
Toppings of choice: Parmesan (balsamic glaze, or a squeeze of lemon)

Steps:

  • Place a rack in the center of your oven (if baking the broccoli on one sheet pan) and preheat the oven to 425 degrees F. For easy clean-up, line a large, rimmed baking sheet with parchment paper. (If you will be using two sheet pans, place the racks in the upper and lower thirds of the oven and line two baking sheets.)
  • Prep the stem: Cut the broccoli stalk away from the head with florets. Place the stem on your cutting board, and trim off the outer edge along one of its long sides (you want to cut away about ¼ inch). Turn the cut side down onto your cutting board and trim off the next side. Repeat with the remaining two sides. You should be left with a rectangular-shaped piece of the stem's core (and it is delish!). If your remaining stem is large, cut it into pieces that are about 2 or 3 inches long and ½-inch wide. Place the cut pieces on the prepared baking sheet. Discard the outer parts of the stem you chopped away.
  • Cut the crowns into large, flat florets: If your crowns are small (about 3 or 4 inches in diameter), cut them into 8 wedges. If they are larger, cut them into 10 wedges. You want the florets to be roughly 1 1/2 to 2-inches wide at the top and 1/2 to 3/4-inch or so thick. These will be a bit larger than the florets you are used to seeing, but TRUST ME, it works. Add them to the sheet with the stems. (See photos in the blog post for guidance).
  • Drizzle the broccoli with the oil and sprinkle with the salt, sugar, and pepper. Toss to combine and evenly coat.
  • Spread the broccoli into an even layer on the prepared baking sheet, ensuring that the pieces have plenty of room for air to circulate. If the broccoli is crowded, divide it between two sheets. Flip the florets so that the largest cut side is touching the pan.
  • Bake the broccoli for 20 minutes, then flip. Rotate the pan 180 degrees and continue baking for 5 to 10 additional minutes, until it is tender and the tips of the florets are turning dark and crispy (if baking on two sheet pans, switch the pans' positions on the upper and lower rack when you flip). Add any toppings of choice. Enjoy immediately.

ELEGANT BROCCOLI BISQUE

Elegant Broccoli Bisque image

This was nice straight from "Vegan Vittles", but I've tweaked it to make this creamy, light-green soup truly irresistable. My whole family (little bro included!) enjoys this in fall or winter weather.

Categories     Potato

Time 40m

Yield 6 serving(s)

Number Of Ingredients 12

3 potatoes, chopped (medium-smallish sized ones, peel only if desired- you really don't need to)
2 cups water or 2 cups vegetable stock
1 medium onion, chopped
4 cups broccoli, cut into florets, including some stem (or 2 cups each broccoli and cauliflower)
2 teaspoons dried tarragon leaves
1 1/2 cups soymilk (low-fat works well)
1 1/2 tablespoons almond butter
1 tablespoon tahini
1 1/2 tablespoons Dijon mustard
1/2 cup water or 1/2 cup vegetable stock
1/4 teaspoon sea salt
1/4-1/2 teaspoon white pepper

Steps:

  • In a medium pot, combine the potatoes, water or stock, onion , tarragon and broccoli. (Note: If using frozen broccoli, wait 5-10 minutes before adding it.) Bring to a boil, then reduce to a simmer for 10-15 minutes, till the vegetables are tender.
  • Combine the milk, almond butter, tahini, mustard and stir together well. Set aside.
  • Transfer the vegetables, in batches, to a food processor and blend each batch with some of the milk mixture. Blend about 20-30 seconds, until smooth but still just chunky enough to be thick.
  • Return the soup to the pot. Pour that last 1/2 cup of liquid into the food processor to rinse it out into the pot. Stir in the salt and white pepper, to taste.
  • Reheat over medium-low, for five minutes or so. Serve with sandwiches, baked potatoes, or rolls with almond butter or margarine.

  • Creamy Broccoli Salad. Broccoli and indulgent aren’t words you find together too often. Even so, that’s precisely what this creamy broccoli salad is – indulgent.
  • Lemon Parmesan Roasted Broccoli. Parmesan-crusted Brussels sprouts are a favorite side dish of mine. So that’s why it’s surprising it took me so long to try Parmesan-roasted broccoli.
  • Roasted Broccoli. If you need a vegan version of roasted broccoli, simply leave out the Parmesan. It’s still crunchy and tasty, just without all the cheese.
  • Quick Broccoli and Cheese. Okay, so this recipe is for steamed broccoli, but it’s not “plain old” steamed broccoli. This is an ultra-cheesy recipe for broccoli smothered in cheese.
  • Broccoli and Cauliflower “Rice” If you like rice on the side of your meals but wish it had fewer carbs, try this recipe. We all know cauliflower rice is hugely popular, but if you add broccoli to the mix, it’s even more colorful and delicious.
  • Broccoli Casserole. No one makes broccoli casserole like my grandma. That said, this recipe gets pretty close. It uses fewer than ten ingredients and has just four steps in the directions.
  • Roasted Potatoes and Broccoli. Are you a ‘meat and potatoes’ kind of person? Do you have to force yourself to eat more greens? If so, this roasted potatoes and broccoli recipe should help.
  • Easy Low Carb Broccoli Fritters. Fritters are a terrific way to get the kids (and adults) to eat their greens! Between the crunchy edges and tender fillings, they’re just like roasted potatoes – only way tastier!
  • Garlic Grilled Broccoli. It’s hard to beat grilled broccoli because it’s effortless to make and retains its snappy crunch. Plus, the smoky, garlic-infused flavor is impossible not to love.
  • Broccoli Gratin. I have a serious weakness for potatoes au gratin. I mean, what’s better than tender potatoes with onions, cream, and cheese? That said, the carbs are pretty high.
