Steps:
- First make the cake. Heat oven to 190C/170C fan/gas 5. Grease and line the base of a 20cm sandwich tin. Place the butter, sugar and vanilla extract into a bowl and beat well to a creamy consistency. Slowly beat in the eggs, one by one, then fold in the flour and mix well. Tip into the cake tin and bake for about 20 mins until risen and golden brown. Set aside to cool completely.
- While the cakes are cooling, make the buttercream. In a large bowl or the bowl of stand mixer, beat the butter and icing sugar together until smooth, add the vanilla extract and milk and beat again. Once the cake is cooled, crumble into large crumbs. Add the butter cream and stir together. Take chunks of the cake mixture and roll into balls, transferring each ball to a lined tray or plate, push a lollypop stick into each, then put into the fridge for an hour to set.
- Melt the white chocolate in the microwave, blasting it and stirring at 10 seconds intervals until smooth. Tip the sprinkles into another bowl. Take each of the chilled cake pops and dip into the white chocolate, allowing it to drip off a little over the bowl. Dip into the sprinkles, then stand upright in a mug to dry at room temperature for an hour, or in the fridge for 30 mins.

EASY FUDGY CAKE POPS
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Blend cake mix, water, oil, and eggs in a large bowl at low speed with an electric mixer until moistened. Beat at medium speed for 2 minutes. Pour batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 26 minutes. Cool in pan for 10 minutes. Crumble cake while still warm into a large bowl and stir in chocolate chips. Once chocolate chips have melted, stir in frosting. Mix by hand until the mixture has a dough-like consistency.
- Scoop cake mixture with a melon baller or small scoop, round each scoop into a ball using your hands, and place on a baking sheet. Freeze cake balls for 10 minutes.
- Melt about 1/4 the chocolate coating in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes.
- Remove cake balls from freezer. Dip each stick into melted chocolate and insert all the way through cake balls. The melted chocolate will harden and hold cake on the stick. Return to the freezer for 10 minutes.
- Melt remaining chocolate coating and white chocolate coating in separate microwave-safe bowls in 30-second intervals, stirring after each melting, for 1 to 3 minutes. Remove cake pops from freezer; dip each cake pop in either melted white chocolate or chocolate. Spoon sprinkles or chopped nuts over cake pops before the coating hardens. Stick each cake pop upright into the styrofoam blocks until candy shell hardens. Refrigerate cake pops until ready to serve.

Steps:
- Preheat oven to 325°F. Lightly spray the inside of each well of both sides of the cake pops pan with baking spray containing flour. In a medium saucepan, over low heat, melt chocolate chips and butter together; stir until smooth. Remove from heat and pour into medium bowl. Add sugar and cocoa; mix until blended. Add eggs, one at a time, mixing well after each addition. Add flour and salt; stir until blended. Fill each well of the bottom half of the cake pops pan (no holes) with a heaping tablespoon of batter. Place the top of the pan (side with holes) onto the bottom half of pan and secure. Place in oven (hole side up) and bake 15 to 18 minutes. Cool in pan 2 to 3 minutes on a wire rack. Remove cakes from pan and place on wire rack to cool completely. Wash and dry pans and repeat. If necessary, use a kitchen scissors or paring knife to snip off any extra batter that may have created a thin crust around the middle of each pop. Melt chocolate bark according to package directions. Dip a cake pop stick in the coating and insert halfway into a cake ball. Place in freezer a few minutes to set coating. Dip the cake pop in the coating, letting any excess drip off. Decorate with sprinkles as, if desired. Place on wax paper or insert into a foam block to harden. Makes about 24 cake pops.
FUDGY CAKE POPS
Steps:
- For the cake: Preheat the oven to 350 degrees F. Line a quarter sheet tray with parchment paper and spray with nonstick cooking spray.
- Combine the flour, cocoa powder, baking powder and salt in a large bowl. Reserve.
- Combine the granulated sugar and butter in the bowl of a stand mixer fitted with the paddle attachment. Beat until light and fluffy. Turn the mixer off and scrape down the sides of the bowl.
- Beat in the eggs one at a time. Slowly add the sour cream, milk and vanilla. Scrape down the sides of the bowl as needed. With the mixer on medium speed, gradually mix in the flour mixture.
- Spread the batter onto the sheet tray and bake, rotating the pan halfway through, until a toothpick inserted into the middle of the cake comes out clean, about 20 minutes. Let cool completely on a wire rack.
- For the cream cheese frosting: Beat together the cream cheese, powdered sugar, butter, vanilla and lemon juice in a stand mixer or with a hand mixer until light and fluffy. Set aside.
- Place the cake into a food processor and pulse to crumble. Transfer to a bowl, then add 2 cups of the frosting and stir to combine. Take some of the cake and frosting mixture and roll into a ball, roughly the size of a golf ball. Insert a candy stick into the center. Place onto a parchment-lined sheet tray. Repeat with remaining cake and frosting mixture, to make about 12 pops. Place into the freezer to chill for 15 to 20 minutes.
- For the decorating: Set up 2 double boilers with a glass bowl fit over the top of each. Add the dark chocolate to one bowl, and the white chocolate to the other. Gently melt the dark and white chocolate over the double boilers, stirring frequently to ensure the chocolate is not burning on the bottom of the bowls.
- For the white chocolate eyeball cake pops: Dip half of the chilled cake pops into the white chocolate, rotating to make sure they are fully coated. Allow any excess chocolate to drip off. Place right-side up into a piece of Styrofoam and stick one candy eye into the center of the cake pop. Repeat with remaining cake pops, transfer to the fridge to chill for 10 minutes.
- Scoop 1/2 cup frosting into a small bowl and add 2 drops red food coloring. Mix to combine, then transfer into a pastry bag. Cut a very small amount off the tip, then pipe squiggly lines coming out from the candy eyes to resemble red veins.
- For the chocolate-dipped cake pops: Take the other half of the cake pops and dip into the dark chocolate, making sure to fully coat the cake and allowing any excess to drip off. Roll immediately in the black and orange nonpareils. Place right-side up into a piece of Styrofoam, then into the fridge to chill.

- Line a baking sheet with parchment paper and set aside. To a food processor, add pitted dates and blend until small bits remain or a ball forms. Scoop out and set aside.
- To the food processor, add your almond flour, coconut flour, and cacao powder. Blend until a fine meal is achieved - about 20-30 seconds.
- Add the dates back in along with the vanilla extract, maple syrup, and coconut cream. Blend until a tacky dough forms. If it’s too dry, add a little more maple syrup. If it gets too wet or sticky, add more coconut flour as needed.
- Scoop out 1 1/2 Tbsp amounts of dough (I like this scoop) and roll into balls. Repeat until all of your mixture is used up. Arrange on your parchment-lined baking sheet. Transfer to the freezer and freeze for 10 minutes.

- Break or cut chocolate into pieces. Place heavy cream in a small saucepan and heat just until it bubbles. Pour over chocolate. Stir until all chocolate is melted and mixture is smooth. (If it is cold in your house and your chocolate doesn’t want to melt all the way you can put it in the microwave in 10 second increments to aid in melting.) Stir in vanilla. Chill mixture for at least 2 hours, or overnight.
- Use a cookie scoop (1 or 2 tablespoon) to scoop balls of truffle. Roll into uniform balls and place on a wax paper lined cookie sheet.
- Remove the hard edges of the baked and cooled brownies. Crumble up the brownies into a bowl. For each pop you will need about 2 tablespoons of brownie. Take 1 tablespoon of brownie, compress with your hands so it sticks together, and flatten. Place 1 truffle in the center. Take an additional 1 tablespoon brownie and compress and flatten. Place over the truffle and seal the edges with the bottom brownie. Roll between your hands to seal and make it round. Repeat with remaining truffles. Chill for 30 minutes.
- Melt your candy melts according to package directions. I find it best to place the melted candy in a coffee mug for easy dipping. You may want to melt your candy in a bowl and then place the bowl on an electric griddle heated to 200 degrees and covered with a kitchen towel. This will keep your melts melted while you work.

- Birthday Cake Truffles. These are as good as they sound, and if you’ve ever been to Milk Bar, I know you’ve tried these and let out a little groan. The actual cake truffle here is a simple mix of leftover vanilla or Funfetti cake with vanilla frosting and a bit of extra milk for moisture.
- Cake Scraps Fudgy Brownie Recipe. This recipe is baking magic at its finest! Seriously, you won’t believe how simple and delicious these brownies come out.
- Cake Crumb Pudding. Bread pudding is a sweet, dense, and tasty way to use up stale bread. But did you know it doesn’t just have to be bread? When I worked in a bakery, we would take all the leftovers (cake, donuts, pastries, and more) and add them to the mix.
- Cake Pops. Cake pops can be made using any kind of cake and frosting you might have leftover, provided the flavors work together, of course. I don’t think chocolate cake would work too well with lemon frosting.
- Chocolate Cake Shake. I really enjoy a bit of texture in my milkshakes. Cookies and cream are a great example of that almost grainy texture from the blended Oreos.
- Pound Cake French Toast. Just when you thought French toast couldn’t get any better, with this recipe, nobody has to know you’re having cake for breakfast!
- Mango Trifle. Trifle is a layered dessert made using cake, custard/pudding, whipped cream, and usually a fruit layer. So, if you have some leftover vanilla cake, why not break it up and make this sunny little trifle?
- Grilled Pound Cake with Berries. I’ve mentioned toasting your leftover cake a couple of times in this post, but have you ever grilled cake before? If you’re already grilling meat and the BBQ is still hot, you’ll have to give this a go.
- Domino Cake. This is a very dense and fudgy cake scrap recipe. It’s pretty similar to a no-bake cake made using dates and nuts. The great part is, not only can you use chocolate or vanilla cake, but you can even throw in leftover cookies if you have them!
- Lemon Raspberry Trifle Recipe. This quick trifle recipe needs just four ingredients: leftover white, vanilla, or lemon cake, lemon pudding, whipped cream, and fresh raspberries.
