Easy, fast, creamy cheese tortellini! With butter and creme fraiche, it's gotta be good! Throw in some fresh herbs and garlic and it's done. Serve this as a side dish to any meat entree, or if you don't want to share, make it your meal and eat it all yourself! You can use frozen tortellini, but the fresh pasta is so good

1 (9 ounce) package refrigerated cheese tortellini
2 tablespoons butter
1 teaspoon fresh dill, finely chopped
1 teaspoon fresh rosemary, finely chopped
1 green onion, finely chopped, green parts only
1 large garlic clove, mnced
2 tablespoons creme fraiche
salt and pepper

Steps:

  • Cook tortellini according to package directions.
  • While the tortellini is boiling, heat the butter in a small skillet over medium low heat. When butter is almost fully melted, add the herbs, onion and garlic.
  • Continue to cook, stirring occasionally, for 2 minutes. You don't want it to sizzle, you are just warming them in the butter, so the low heat is important.
  • Put the creme fraiche in a serving bowl large enough to hold the tortellini. Add the warm butter herb mixture and stir to combine - it doesn't have to be stirred to a smooth consistency, the hot pasta will take care of that.
  • Drain the pasta and add to the serving bowl, mixing well to coat pasta. Season with salt and pepper to taste and serve.

Quick And Easy Creamy Herb Chicken, filled with so much flavour, ready and on your table in 15 minutes! You won't believe how easy this is!

4 chicken breasts ((pounded 1/2-inch thin))
2 teaspoons each of onion powder and garlic powder
1 teaspoon fresh chopped parsley
1/2 teaspoon each of dried thyme and dried rosemary*
salt and pepper (, to season)
4 cloves garlic (, minced (or 1 tablespoon minced garlic))
1 teaspoon fresh chopped parsley
1/2 teaspoon each of dried thyme and dried rosemary
1 cup milk ((or half and half)*)
Salt and freshly ground black pepper (, to taste)
1 teaspoon cornstarch mixed with 1 tablespoon water (, until smooth)

Steps:

  • Coat chicken breasts with the onion and garlic powders and herbs. Season generously with salt and pepper.
  • Heat 1 tablespoon of oil a large pan or skillet over medium-high heat and cook chicken breasts until opaque and no longer pink inside (about 5 minutes each side, depending on thickness). Transfer to a plate; set aside.
  • To the same pan or skillet, heat another 2 teaspoons of olive oil and sauté garlic, with parsley, thyme and rosemary, for about 1 minute, or until fragrant.
  • Stir in milk (or cream); season with salt and pepper, to taste.
  • Bring to a boil; add the cornstarch mixture to the centre of the pan, quickly stirring, until sauce has thickened slightly. Reduce heat and simmer gently for a further minute to allow the sauce to thicken more.
  • Return chicken to the skillet. Sprinkle with extra herbs if desired. Serve immediately.

A flavourful cream cheese dip based sauce encasing plump cheese tortellini and a mixture of fresh vegetables. The original recipe called for chicken, but we have substituted shrimp and scallops many times, which makes it just as good. You may also omit the chicken/seafood to make it part of a vegetarian meal.

1 lb boneless skinless chicken, thinly sliced (OR bay scallops and cooked shrimp)
227 g cream cheese with garlic and herbs (I use Philadelphia Dips)
1/4 cup skim milk
1 -1 1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1 teaspoon olive oil
1 garlic clove, minced
4 cups sliced vegetables (broccoli, cauliflower, carrots, mushrooms, peppers, beans, corn...)
400 g fresh cheese-filled tortellini

Steps:

  • In a small bowl, blend herb and garlic dip, milk, and seasonings until smooth.
  • In a medium/large pot cook tortellini according to directions.
  • If using Chicken: In a skillet on Medium-High, add oil, chicken slices and garlic; stir fry for 5 minutes.
  • If using Shrimp/Scallops: In a skillet on Medium-High, add oil and scallops; cook until done; remove from skillet, drain excess water, set aside; Add shrimp, garlic and vegetables (re-add the scallops in step 6).
  • For both variations: Now add vegetables; stir fry until tender (and chicken is done).
  • Reduce to low heat, stir in cooked tortellini and dip mixture.
  • Heat through.
  • Serves 5-6.

2 whole boneless skinless chicken breasts, cubed
2 (10 1/2 ounce) cans cream of chicken soup or 2 (10 1/2 ounce) cans cream of mushroom soup
1 (10 1/2 ounce) can cream of celery soup
1/4 cup minced onion
1/4 cup minced celery
1/4 cup minced carrot
1 (12 ounce) package frozen cheese tortellini

Steps:

  • I like to practically"puree" the onions and celery in my chopper so my kids don't notice them, but you can always keep them bigger if you like.
  • Place everything EXCEPT tortellini in your crock pot and cook on low all day (6-8 hours).
  • Either cook tortellini according to package directions and mix in before serving, or place frozen tortellini in crock one hour before serving and turn it up to high setting, but stir gently often.
  • Wonderful with green beans and cornbread.

pasta dough
2 ounces prosciutto
1/2 lb boneless skinless chicken breast
1/3 cup dried breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon ground nutmeg
1/2 cup butter
1 cup heavy cream
1 cup parmesan cheese

Steps:

  • While pasta dough is resting, chop meats to a fine mince.
  • In a large bowl mix the meats with bread crumbs, salt, pepper, nutmeg and 1/3 cup water.
  • You can do all this in a food processor if you like.
  • Roll and cut pasta into 1 inch squares.
  • Place 1/2 t.
  • filling on center of each square.
  • Fold over to make a triangle, seal and take the two opposite points, bring to center and pinch together.
  • Place tortellini in single layer on paper towel.
  • Repeat until done.
  • This makes around 125.
  • Heat a large pot of salted water to boiling and start cooking.
  • This will take around 4 rounds at 5 minutes each.
  • To make the sauce melt butter in a medium saucepan.
  • Add cream and heat to boiling, slowly add cheese and cook to thicken.
  • Add to cooked pasta, toss and serve.
