Yield 4 to 6 servings

Number Of Ingredients 12

1 tablespoon canola oil
1 small yellow onion, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon chipotle chile powder
1/4 teaspoon cayenne pepper
One 4-ounce can diced green chiles
Two 15-ounce cans black beans, rinsed and drained
1 cup vegetable broth
2 tablespoons chopped fresh cilantro
1/4 cup Cotija cheese

Steps:

CHICKEN & BLACK BEAN ENCHILADAS

Chicken & Black Bean Enchiladas image

This is a recipe I've been perfecting for a while and I think I've reached nirvana. I crave these at least once a week and even though the instructions appear lengthy, it really is a simple dish to prepare and well worth the effort. Hubby has told me that if I ever open a restuarant that these should be on the menu, as they are far better than any enchiladas we've ever had dining out. And for those of you who claim to not like cilantro, please give this a try. If you didn't know better, you wouldn't know it had cilantro in it. The taste is just a hint of freshness when combined with everything else. Cooking the chicken in it's own little soup bath really gives it a nice subtle flavor too. I suppose if you were pressed for time, you could use a rotisserie chicken. I've also used other cheeses than monterey jack, but find that the jack is the best flavor combination. I have to admit, that most of the measurements are my best guess - feel free to use a little more or little less of any of the enchilada fillings, but I think what I've listed is pretty close to what I do. Also, if you prefer your sauce with a little heat to it, you could add in a little cayenne, but don't do to much and cover up all the other lovely flavors. I serve these with beans and rice on the side, and a little dollop of sour cream on the top. I have to admit, I'm pretty proud of this dish and hope you'll enjoy it as much as I do.

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 20

4 boneless skinless chicken breasts
1/2 yellow onion, quartered
1 tablespoon peppercorn
3 garlic cloves, smashed
2 bay leaves
1 chicken bouillon cube
8 flour tortillas, soft taco size
3 -4 cups monterey jack cheese, shredded
1 cup fresh cilantro, roughly chopped
1 (15 ounce) can black beans, rinsed & drained
2 tablespoons butter
2 tablespoons flour
1 (6 ounce) can tomato paste
2 1/2 tablespoons chili powder
1 1/2 teaspoons cumin
2 teaspoons garlic powder
1 teaspoon adobo seasoning (optional)
1 (14 ounce) can chicken broth
1/2-3/4 cup water
salt & pepper

Steps:

  • Place chicken breasts in a skillet, cover with water, and add onion, peppercorns, garlic, bay leaves, and bouillon.
  • Bring to a boil, then reduce heat and simmer until chicken is cooked, about 20 minutes (depending on how thick the breasts are). Remove from broth; set aside and let cool. When the chicken is cool, shred.
  • While chicken is cooking, melt 2 Tbsp butter in medium sauce pan over medium heat. Add flour and cook for 2-3 minutes, until roux starts to turn light brown.
  • Add tomato paste, chili powder, cumin, garlic powder and adobo; stir to combine.
  • Stir in chicken broth and 1/2 cup water.
  • Bring to a boil, the reduce heat to low. (You can add up to a 1/4 cup more water to thin it out a little if you prefer.).
  • Taste and season with salt and pepper.
  • To assemble enchiladas, warm tortillas in the microwave so they are more pliable, approximately one minute.
  • Sprinkle 1 Tbsp of the roughly chopped cilantro down the center of the tortilla.
  • Next, add 1/4 cup shredded cheese.
  • Top with 2 Tbls of black beans and a generous 1/3 cup of shredded chicken.
  • Bring one side of the tortilla over the top of the filling, tuck in and continue to roll.
  • Coat the bottom of a 9x13 baking dish with 1 cup of the enchilada sauce.
  • Place rolled enchiladas in the pan and cover with remaining sauce and 1-2 cups of cheese and any remaining cilantro.
  • Bake at 375 for 20-30 minutes, or until hot all the way thru and the sauce is bubbly.

SPICY BLACK BEAN, GREEN CHILI & CHEESE ENCHILADAS

Spicy Black Bean, Green Chili & Cheese Enchiladas image

Spicy black bean enchiladas with green chilis, sour cream, cheese and firey red enchilada sauce. Perfect alongside fajita veggies and guacamole. Simple, transportable, affordable, and great for pleasing a large crowd. I like to change it up sometimes and use green enchilada sauce. From the Minimalist Baker.

Time 35m

Yield 4 serving(s)

Number Of Ingredients 12

12 small flour tortillas (or corn, recommend flour)
1 (15 ounce) can black beans, drained and rinsed
1 (4 ounce) can diced green chilies
1 (28 ounce) can red enchilada sauce, such as Las Palmas
1/2 cup grated manchego cheese (plus more for topping or sub another Mexican cheese, such as Cojita or Pepper Jack)
1/2 teaspoon cumin (optional)
1/4 cup light sour cream (or greek yogurt)
diced green onion
cilantro
grilled fajita vegetables
avocado, salsa
sour cream, etc

Steps:

  • Preheat oven to 375*F. and position a baking rack in the middle of the oven.
  • Combine black beans, green chilies, sour cream and manchego(or other) cheese in a mixing bowl. Taste and add salt and pepper if desired. Add cumin if using, but fine without. Set aside.
  • Warm 3/4 of the enchilada sauce in a large shallow pan over low-medium heat.
  • Pour enough enchilada sauce to also lightly coat the bottom of a 9×13 dish. Swirl to coat and set aside.
  • If using corn tortillas drench them in hot oil before rolling up(this will soften them and make them easier to roll up).
  • Using your hands or tongs, carefully dip the tortillas in the warmed sauce until both sides are well coated. Transfer the tortilla to the baking dish, scoop in 2 Tbsp of the black bean filling and roll up. Place seam side down and continue until the pan is filled - should be about 10-12 enchiladas.
  • Top enchiladas with remaining sauce and use spoon to make sure all parts of the tortillas are evenly coated. Top with a bit more cheese and bake for 20 minutes or until slightly golden brown and the cheese is bubbly.
  • Serve with toppings such as avocado, guacamole, salsa, fajita veggies, sour cream, green onion, cilantro or lettuce.
  • Will keep in the fridge for a couple days.
  • Reheat in oven or microwave.

BLACK BEAN & CHICKEN ENCHILADAS

Black Bean & Chicken Enchiladas image

This recipe was developed from the combination of several other enchilada recipes that I had found online. I made adaptions to make it has healthy as possible without sacrificing flavor.

Provided by Tara M.

Categories     Chicken Breast

Time 1h10m

Yield 8 Enchiladas, 4 serving(s)

Number Of Ingredients 15

1 -1 1/2 lb boneless skinless chicken breast
2 (14 1/2 ounce) cans light fat free chicken broth
1 tablespoon dried oregano
1 bay leaf
1 small onion, chopped
1 (15 ounce) can black beans, rinsed
1 (10 ounce) can diced tomatoes with green chilies, drained (I use Ro-Tel brand)
1 (4 1/2 ounce) can green chilies, chopped
2 teaspoons cumin
1 teaspoon ground cayenne pepper
1/4 cup fresh cilantro, chopped
8 (8 inch) flour tortillas
1 (10 3/4 ounce) Campbell's Cream of Chicken Soup, Healthy Request
2 cups Mexican blend cheese, I use Kranft 2%
1/2 cup green onion, diced

Steps:

  • Pre-heat oven to 350 degrees & lightly grease a 13x9" baking dish. Depending upon the size of your enchiladas, you might need an additional greased 9x9' pan.
  • In a large skillet (with lid) over MED-HIGH heat, bring to boil both cans of chicken broth with 1 additional can of water, oregano, bay leaf, and chopped onion. Once mixture has come to a boil, add chicken breasts and cover. Poach chicken for 20 minutes over MED-HIGH heat, turning once half-way thru cooking.
  • While chicken is poaching, in a medium size bowl mix together; rinsed black beans, RO*TEL, green chilis, cumin, cayenne pepper, and chopped cilantro. Set aside.
  • Once your chicken is fully cooked, place it in a large mixing bowl. When cool enough, finely shred chicken with two forks, then add black bean mixture and toss all together. Set aside & save your cooking liquid from the chicken!
  • In a small mixing bowl, add can of cream of chicken soup and whisk soup together with an equal amount of cooking liquid from your chicken breasts. Set aside.
  • Pile chicken mixture into flour tortillas and roll. Line greased baking dish with enchiladas, seam side down. Pour over cream of chicken soup and top with Mexican cheese and diced green onions. Cover with foil and bake for 35 minutes in a 350 degree oven. Remove foil for last 5 minutes of baking.
  • I liked to serve these enchiladas topped with fresh Pico de Gallo and light sour cream.

Chicken & bean enchiladas image

A family dinner that delivers four of your 5-a-day - tender chicken, red pepper and black beans, wrapped in tortilla, baked in the oven with passata and cheese

Provided by Lulu Grimes

Categories     Dinner, Main course

Time 1h5m

Number Of Ingredients 13
