- Mix cream cheese, carrots, nuts, 1/2 cup sugar, and 1/2 tsp. each cinnamon and vanilla until blended.
- Place 6 bread slices on bottom of 13x9-inch baking dish sprayed with cooking spray; spread with cream cheese mixture. Cover with remaining bread slices.
- Whisk eggs and milk with remaining cinnamon and vanilla until blended; pour over ingredients in baking dish. Refrigerate 2 hours.
- Heat oven to 350ºF. Bake French toast 30 to 35 min. or until center is set and top is lightly browned. Sprinkle with remaining sugar.
- Serve with syrup.

CHOCOLATE CHEESECAKE-STUFFED FRENCH TOAST

- For the French toast: Preheat the oven to 350 degrees F.
- Make an incision in the center of the Pullman loaf, as if you were slicing the loaf in half but taking care not to cut through the ends or the back side of the loaf. Stick your hand inside the incision and press lightly on the bread to make a pocket for stuffing.
- In a small bowl, mix together the cream cheese and chocolate-hazelnut spread with a rubber spatula until smooth. Spoon the mixture into a resealable plastic bag; snip off a corner from the bag. Pipe the mixture into the pocket and close the seam slightly around it.
- In a medium bowl, whisk together the eggs, milk, vanilla and salt. Soak the stuffed loaf in the egg mixture, rotating it, until all the custard is absorbed, about 12 minutes.
- Melt the butter over medium heat in a large oven-safe nonstick skillet. Gently remove the French toast from the custard pan and place in the hot skillet; cook until golden brown on all sides except the side with the pocket, 2 to 3 minutes per side. Transfer the skillet to oven and bake until firm and an inserted metal skewer comes out dry, about 15 minutes.
- For the raspberry compote: Meanwhile, place the raspberries, granulated sugar and orange juice in a small bowl. Partially mash the fruit with the back of a fork. Set aside to macerate.
- Remove the French toast from the oven and let rest for 10 minutes before cutting into slices. Serve drizzled with raspberry compote and dusted with powdered sugar.

- Generously spray a 9 X 13 casserole dish or baking dish with non- stick cooking spray. Arrange 1/2 the loaf of slices of bread in 2 rows, overlapping if need be, in a casserole dish.
- In a large bowl, combine the eggs, half-and-half cream, drained, crushed and squeezed pineapple (make sure you squeeze as much liquid out as possible!), pureed carrots (baby food), brown sugar, white granulated sugar, vanilla, cinnamon and maple syrup. Then beat with a whisk until blended thoroughly.
- Pour 1/2 the liquid mixture over the bread slices, making sure all are covered evenly with the cream-egg mixture.
- Then add the rest of the bread, pouring the remaining half of the liquid over the bread slices
- Sprinkle finely chopped walnut evenly over soaked bread slices.
- Cover with foil and refrigerate overnight (about 8 hours)
- The next day, preheat oven to 350 degrees F. Remove from refrigerator, leave the foil on and bake in preheated oven for 40 minutes.
- Remove foil and return to oven for an additional 15 minutes. Meanwhile prepare glaze.

- In a small saucepan, combine the brown sugar, butter and corn syrup; cook and stir over medium heat until thickened. Pour into a greased 13x9-in. baking dish; top with half of the pecans, a single layer of bread and remaining pecans. Arrange apples and remaining bread over the top. , In a large bowl, whisk the eggs, milk, cinnamon, vanilla, salt and nutmeg. Pour over bread. - For the French toast: Grease a 9-by-13-inch baking dish with butter.
- Tear the bread into chunks and evenly distribute in the baking dish. Sprinkle the carrots and pecans over the bread. Crack the eggs into a large bowl and whisk together with the milk, cream, granulated sugar, brown sugar, vanilla and cinnamon. Pour the mixture into the baking dish. Cover tightly with plastic wrap and store in the fridge until needed (overnight preferably).
- For the topping: Mix the flour, brown sugar, cinnamon and salt in a bowl. Cut in the butter using a pastry cutter until it resembles fine pebbles. Fold in the pecan pieces and store in a resealable plastic bag in the refrigerator until ready to bake.
- For the glaze: Add the cream cheese to the bowl of an electric mixer fitted with a paddle attachment and beat until smooth. Add the powdered sugar, milk and lemon juice and mix until smooth, scraping down the sides as needed. Keep in a small airtight bowl.
- When you're ready to bake, preheat the oven to 350 degrees F.
- Unwrap the baking dish with the French toast mixture, sprinkle with the topping and bake for 45 minutes for a softer, bread pudding-like texture or 1 hour for a firmer, more crisp texture.
- Drizzle over the glaze. Scoop out individual portions and serve with warm pancake syrup.
HOT BROWN-STUFFED FRENCH TOAST
This savory spin on baked French toast has all the components of a Kentucky hot brown--tender turkey, juicy tomato, thick slices of white bread, meaty bacon and a generous drizzle of mornay sauce that's broiled until golden. The savory custard base not only keeps the bread moist (no one likes a dry sandwich), but also adds another layer of flavor. We used a combination of grated pecorino and shredded sharp Cheddar for the mornay sauce; the pecorino is a classic addition to the hot brown, while the Cheddar adds creaminess and browning. Top with more pecorino, fresh parsley and a pinch of paprika, and you'll have hot browns for a crowd!

- Preheat the oven to 375 degrees F; lightly spray a 9-by-13-inch metal baking pan with nonstick cooking spray.
- Whisk together the half-and-half, eggs, 2 tablespoons of the pecorino, 1/4 teaspoon of the nutmeg, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl until smooth and combined. Lay 7 slices of bread on a cutting board. Sprinkle 1 heaping tablespoon shredded Cheddar on top of each slice. Top each with 2 slices of tomato, then 2 slices of turkey, folding the turkey as needed to fit. Place the remaining 7 slices bread on top to form 7 sandwiches. Cut each sandwich in half diagonally. Dip both sides of each sandwich half into the custard mixture and transfer to the prepared baking pan, arranging in 2 long shingled rows. Pour any remaining custard over the sandwiches.
- Spray a large piece of foil with nonstick spray. Place the foil sprayed-side down on top of the baking pan, crimping the sides of the foil around the pan to seal. Bake for 30 minutes. Remove the foil and bake until the custard is set but still slightly jiggly, about 10 minutes more. Remove the baking pan and switch the oven to broil.
- Meanwhile, add the bacon to a large nonstick skillet and set over medium heat. Cook, stirring occasionally, until light golden and almost completely rendered, 8 to 12 minutes (it will cook the rest of the way and crisp up under the broiler). Remove with a slotted spoon to a paper towel-lined plate to drain.
- Next, melt the butter in a large saucepan over medium heat. Whisk in the flour and cook until bubbling and no longer raw, 1 to 2 minutes. While continually whisking, slowly pour in the milk. Cook, whisking continuously, until thickened, about 2 minutes. Add the remaining Cheddar (about 1 cup), 2 tablespoons pecorino, 1/8 teaspoon nutmeg, 3/4 teaspoon salt and several grinds of pepper and whisk until combined. Remove from the heat and cover to keep warm.
- When the French toast is baked, pour the cheese sauce over it, making sure the bread is evenly coated, then sprinkle with the chopped bacon. Broil until bubbling at the edges and light golden brown, 3 to 4 minutes. Sprinkle with the parsley, paprika and another couple pinches of pecorino.
FRENCH TOAST BAKE
This French toast bake is my new tradition for Christmas morning! Serve with fruit and/or maple syrup.

- Slice bread and cut off and discard crusts. Beat milk, eggs, and vanilla together in a bowl until well combined.
- Stir melted butter and brown sugar together until well mixed. Pour into the bottom of a 9x13-inch pan; spread evenly. Layer bread slices over top. Pour milk mixture evenly over bread. Sprinkle with cinnamon. Cover with aluminum foil and chill in the refrigerator, 8 hours to overnight.
- When ready to bake, preheat the oven to 350 degrees F (175 degrees C).
- Bake, covered, for 30 minutes. Remove cover and continue to bake until golden brown and bubbly, about 15 more minutes.
- Remove from the oven and sprinkle with powdered sugar and cinnamon before serving.

- Cut bread slices into cubes.
- Cover bottom of a 9x13 dish with half of the bread.
- Dot bread with cream cheese then cover with remaining bread.

- Preheat oven to 350˚F (180˚C).
- For the cheesecake filling: in a small bowl, combine cream cheese, egg, heavy cream, sugar and vanilla. Beat until smooth.
- For the French toast egg mixture, combine eggs, milk, heavy cream, sugar, vanilla, cinnamon, nutmeg, and salt in a large mixing bowl. Stir until well incorporated.
- Dip slices of brioche in egg mixture.
- Transfer brioche slices and cover bottom of a loaf pan, using a half or a quarter of a slice if necessary.

- Layer another row of brioche slices and top with slices of strawberry and banana.
- Layer one last row of brioche slices using small pieces of the bread to fill in the holes.

- Invert the loaf onto a parchment paper-lined baking tray.
- Brush top of loaf with butter and sprinkle sugar over top.
- Broil on high for 5 minutes or until sugar starts to carmelize.
- Garnish with more strawberries, banana, and powdered sugar. Slice and serve.
