Sweet& Spicy BBQ Ribs image

Sweet, sticky and with a touch of spice, these bbq ribs will be the star of the show! (if the "show" is dinner, and the "venue" is your backyard). They are so tender they fall of the bone. Right into your mouth. Go ahead. Get some!

2 Tbs paprika (smoked)
1 1/2 Tbs dark brown sugar (packed)
1 Tbs garlic powder
1 Tbs prepared chili powder
1 Tbs kosher salt
1 1/2 tsp onion powder
1 1/2 tsp cracked pepper
1/2 tsp dried thyme
1/2 tsp cayenne pepper
2 Racks St Louis Style Ribs
1 cup ketchup
2/3 cup apple juice
1/3 cup apple cider vinegar
2 Tbs dark brown sugar ((packed))
2 Tbs unsulfured molasses
1 Tbs Worcestershire sauce
1 tsp prepared chili powder
1 tsp smoked paprika
1/2 tsp tsp cumin
1/4 tsp cracked pepper
1 cup apple juice
6 Tbs sauce (from above)
1/4 cup apple cider vinegar

Steps:

  • Take a dull knife, slide the tip under the membrane on the back of each rack, and loosen it. Take the corner of it and pry off the entire membrane from the back of the ribs.
  • Mix the rub ingredients together until well blended.
  • Rub evenly over the top side of the ribs, and massage into the meat. Set aside in the fridge for an hour or so, or overnight if you want even better flavor.
  • Preheat the oven to 300 degrees F. Place the ribs on a foil lined sheet pan, cover with foil and bake for an hour while you make the sauce and mop.
  • After an hour, mop the ribs, and continue to mop every 30-45 minutes or so. The ribs should be in the oven about 3 hours.
  • Remove the ribs from the oven, and baste them with some of the sauce.
  • Heat the grill to medium high and cook them for about 10 minutes, basting regularly with the sauce.
  • Take them off, baste some more and cover with foil. Rest for 30 minutes.

2 racks of St. Louis Baby Back Ribs (silver skin & lining removed)
1 bottle of Cowboy Prairie Fire BBQ Sauce
1 1/2 cup of apple juice
1/2 cup of brown sugar
3 tbsp of chili powder
2 tbsp of garlic powder
2 tbsp of onion powder
2 tbsp of smoked paprika
2 tbsp of cumin
2 tbsp of black pepper
2 tbsp of sea salt
1 tbsp of red chili flakes
1 tsp of cayenne powder
Olive oil

Steps:

  • In a bowl, mix the brown sugar, chili powder, garlic powder, onion powder, smoked paprika, cumin, black pepper, sea salt, red chili flakes & cayenne powder thoroughly.
  • Take the 2 rack of ribs and generously lather olive oil on both sides. Then, cover with the spices that you mixed above.
  • Use some Cowboy Hardwood Lump Charcoal to light fire and let burn for 15-20 minutes. Once charcoal is white hot, push to one side of the grill for indirect grilling. Optional: For a more intense flavor, add some hickory or apple wood chips to the top of the charcoal.
  • Place ribs on the opposite side of the charcoal for 3 hours. Make sure to only check a couple of times as when the lid is up the meat is not cooking.
  • Pull ribs off and place in 2 layers of tin foil. Pour in the apple juice, wrap the tin foil and place the ribs back on the grill, indirectly, for 2 more hours.
  • Finally, pull the ribs off the grill, remove tin foil and baste them in the Cowboy Prairie Fire BBQ Sauce. Place ribs back on the grill for another hour. Add more BBQ sauce as needed. Make sure to also keep adding charcoal & smoking chips as needed.
  • Pull the ribs off the grill, serve & enjoy the game!

SPICY BEEF BACK RIBS

5 pounds beef Back Ribs, cut into 2 to 4 rib sections
1 tablespoon vegetable oil
1-1/2 cups finely chopped onion
1 tablespoon minced garlic
1 to 1-1/2 teaspoon crushed red pepper flakes
1-1/2 cups chili sauce
1/2 cup water
3 tablespoons fresh lemon juice
1/2 teaspoon salt

Steps:

  • 1.Heat oil in medium saucepan over medium high heat until hot. Add onion, garlic and pepper flakes; cook and stir 4 to 5 minutes or until onion is tender. Add chili sauce, water and lemon juice; bring to a boil. Reduce heat and simmer 5 minutes, stirring frequently. Season with salt. Reserve 1/2 cup sauce for basting. 2.Prepare charcoal grill for indirect cooking by igniting an equal number of charcoal briquets on each side of fire grate, leaving open space in the center. When coals are medium, ash-covered (25 to 30 minutes), add 3 to 4 new briquets to each side. Position cooking grid with handles over coals so additional briquets may be added when necessary. 3.Place ribs, meat side up, in large (16-1/8 x 11-3/4 x 2-7/8 inches) foil roasting pan. Pour remaining sauce over ribs; turn ribs to coat. Cover tightly with aluminum foil; place foil pan on cooking grid. Cover with grill lid and grill over medium heat 1 to 1-1/2 hours or until ribs are fork-tender. Carefully remove roasting pan from grill; remove ribs from pan and place, meat side up, on grill rack. Baste ribs with reserved sauce; grill, covered, 10 to 15 minutes, turning and basting once. Steps:

  • Place the ribs in large pot with enough water to cover, and bring to a boil. Stir in the lemon juice. Cook the ribs 1 hour, until meat is tender. Drain, and place in large resealable plastic bags.
  • In a medium saucepan over medium heat, mix the picante sauce, brown sugar, barbeque sauce, garlic, mustard, Worcestershire sauce, jalapeno peppers, and onion. Season with salt and pepper. Bring to a boil, reduce heat to low, and simmer 30 minutes, stirring occasionally, until thickened. Pour over the ribs in the plastic bags. Seal bags, and marinate ribs 8 hours, or overnight, in the refrigerator.
  • Preheat the grill for high heat.
  • Lightly oil the grill grate. Place ribs on the grill, and discard remaining marinade. Season ribs with red pepper flakes, and cook 10 to 20 minutes, turning once, until browned and crisp.

2 (2-lb) racks baby back ribs
For sauce
1 1/2 cups chopped onion (from 1 large)
6 garlic cloves, finely chopped
1 1/2 tablespoons finely chopped peeled fresh ginger
2 tablespoons vegetable oil
1 1/2 cups ketchup
1/2 cup cider vinegar
6 tablespoons soy sauce

Steps:

  • Whisk together brown sugar, salt, and spices in a small bowl.
  • Line a 17- by 12- by 1-inch heavy-duty baking pan with a double layer of foil, then oil foil.
  • Pat ribs dry and arrange in baking pan. Rub ribs all over with spice mixture and marinate, meaty sides up, covered and chilled, 2 1/2 hours.
  • Bring ribs to room temperature, about 30 minutes.
  • Put oven rack in middle position and preheat oven to 350°F.

1/2 cup apple cider vinegar

Steps:

  • Preheat oven to 325°F. Combine brown sugar, paprika, cayenne, garlic powder, and 3 tablespoons salt in a small bowl; set aside 1/4 cup spice mixture.
  • Pat ribs dry with paper towels and rub with remaining spice mixture, massaging into crevices. Wrap each rack in a double layer of foil, crimping edges to seal tightly. Place each foil packet on a rimmed baking sheet and bake until meat is fork-tender at the thickest part but not falling off the bone, 2-3 hours. Let cool.

SPICY OVEN BBQ RIBS



Spicy Oven BBQ Ribs image

DH found this recipe on the internet and, of course, he tweaked it a bit to his liking. You can control the amount of "heat" by adjusting the amount of Jamaican Jerk Rub, Hot Sauce and the type of Pepper Jelly used. We used Tabasco brand pepper jelly (red in color) which is not "smokin' hot". They do take a little time to cook, but they really are finger-licking good! The original recipe stated to cook covered for 2 hours, but after cooking that long covered the meat just fell off the bones. We suggest cutting the covered cooking time back to 1 hour and just test for tenderness. The broiling step is very important to get that crispy and crusty exterior that is so delicious. Also, removing the membrane from the back of ribs is a crucial step in achieving tender ribs - it can be a little tedious, but once you get the hang of it you'll never cook ribs again without removing it. Be sure to watch closely while broiling as it doesn't take too long to burn.

Steps:

  • Remove membrane from back of ribs.
  • Combine all ingredients for the rub except cooking spray.
  • Sprinkle the seasoning mixture evenly over ribs on all sides.
  • Line inside of large baking pan with foil.
  • Spray foil with nonstick cooking spray.
  • Bake ribs uncovered for 2 hours at 250 degrees.
  • Remove from oven and cover ribs with foil.
  • Seal tightly around edges so steam does not escape.
  • Return to oven and bake another hour or until ribs are tender.
  • While baking combine all glaze ingredients.
  • When ribs are tender remove from oven and pour off all juices that may have accumulated.
  • Cut ribs into individual pieces.
  • Turn broiler to high.
  • Brush glaze evenly on ribs on one side and place them back in the pan and put under broiler.
  • Watch ribs closely and as they get brown and sticky remove from oven, turn ribs and brush with glaze.
  • Repeat this process of brushing, turning and brushing until all the glaze has been used.

2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons chili powder
2 tablespoons paprika
1 tablespoon dry mustard
1 tablespoon salt
2 large racks (4 pounds or more) pork ribs
1/2 cup apple juice
1/2 cup tomato juice
1/2 cup molasses
1/4 cup Worcestershire sauce
1/4 cup hot sauce
1 cup barbecue sauce (your choice)

Steps:

  • A few hours before beginning the slow cooking of the ribs, make the rub by combining garlic powder, onion powder, chili powder, paprika, mustard, and salt in a bowl and mixing well. Rub the mix into the meat and let sit for at least an hour. The mixture will begin to cure the meat.
  • About 30 minutes before beginning to barbecue, heat the grill.
  • Wrap ribs in heavy duty aluminum foil and place on the grill over indirect heat and slowly cook for about 2 hours, turning occasionally.
  • While the ribs are cooking, begin the sauce on the stovetop. Combine apple juice, tomato juice, molasses, Worcestershire sauce, hot sauce and barbecue sauce in a saucepan, stirring to mix well. Simmer over low heat until it beings to thicken. Let simmer for 1/2 hour. Reserve about 1 cup to serve on the side with the ribs, and use the rest to brush on the ribs as they barbecue.
  • When the meat begins to become fork tender, unwrap ribs and begin brushing on the sauce. Continue to apply the sauce to the ribs during the barbeque process. When ribs are able to pull apart, they are ready.

DRY RUB FOR SPICY BBQ RIBS

2 tablespoons chili powder

Steps:

  • Wash rack of ribs, remove membrane on back, and pat dry with paper towel. You can either leave as a rack and thread onto a spit or cut into 2-3 rib sections.
  • Mix all remaining ingredients until well blended. Rub the mix over both sides of ribs until it's all used up. I sometimes double the recipe to get a really good coating. You can either put in fridge overnight or grill at 350 F right away on bbq over indirect heat. The bbq acts more like an oven this way. The sugar will burn if you grill over direct flame.
  • They will take an hour to cook through.

¾ cup tamarind juice, in a spray bottle*

Steps:

  • About one hour before you plan to start grilling, make the rub: In a small bowl, combine the brown sugar, salt, onion powder, chili powder, paprika and pepper. Pat the ribs dry with paper towels, then sprinkle both sides of each rack with the rub. Set aside at room temperature for one hour.
  • Preheat the grill for indirect cooking at 250 to 300 degrees F. Add the drained wood chips, if using.
  • Place the ribs, meaty side up, over a drip pan, close the grill, and cook for 2 hours, adding about 12 coals to a charcoal grill every 45 minutes or so to maintain the heat.
  • Meanwhile, make the sauce: In a medium saucepan over medium heat, combine the honey, soy sauce, jam, vinegar and garlic sauce and bring to a boil. Reduce to a simmer and cook 15 minutes, stirring frequently, until lightly thickened. Set aside to cool to room temperature, then refrigerate.
  • Continue to cook the ribs until they're so tender the rack will easily break when bent with tongs, 1 to 2 more hours, spraying on both sides with the tamarind juice every 20 to 30 minutes. Brush the ribs on both sides with the sauce and continue to cook for about 5 minutes, until the sauce is set. Remove from the grill and let stand for 5 minutes.
  • Cut the racks into 3- or 4-rib sections and serve. Pass any remaining sauce at the table.

I always keep this dry rub in a shaker on my shelf so I have it ready to use in an instant. It's a deliciously different way to prepare barbecued ribs.

2 tablespoons brown sugar
2 tablespoons paprika
2 tablespoons pepper
1 tablespoon chili powder
1-1/2 teaspoons salt
1-1/2 teaspoons crushed red pepper flakes
1 teaspoon garlic powder
6 pounds pork spareribs
6 sheets (40 inches x 18 inches) heavy-duty foil

Steps:

  • In a small bowl, combine the sugar and seasonings. Rub all of it onto both sides of ribs. Make two stacks the three sheets of foil and place half the ribs in the center of each stack. Bring opposite long edges of foil together; fold down several times. Fold the short edges toward the food and crimp tightly to prevent leaks. Refrigerate overnight. Remove from refrigerator 30 minutes before grilling., Prepare grill for indirect heat. Place foil packets over indirect medium heat. Grill, covered, for 1-1/2 hours or until tender, turning foil packets over after 45 minutes. Remove ribs from foil; place over direct heat. Grill, uncovered, for 10-15 minutes or until crisp, turning once.

Make these sticky pork ribs with ginger, chilli, garlic and XO, a wonderfully spicy seafood sauce. Serve with lime wedges - and plenty of kitchen paper

2 tbsp vegetable oil
700g pork spare ribs
2 garlic cloves , sliced
thumb-sized piece ginger , sliced
4 spring onions , chopped
2 star anise
a few Sichuan peppercorns
3 tbsp XO sauce
3 tbsp malt vinegar
2 tbsp honey
500ml chicken stock
2 limes , 1 zested and 1 cut into wedges to serve
good pinch of chilli flakes

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil over a high heat in a large flameproof roasting tin. Season the pork, then fry until browned in places - don't worry about the ribs getting evenly browned, you are just looking for a little colour as it will add lots of flavour to the dish.
  • Add all the remaining ingredients, except the lime zest and chilli, to the tin, stir, then arrange the ribs so they are in a single layer. Once the liquid has started to boil, transfer to the oven and roast for 1 hr, turning the ribs halfway.
  • Take the tin out of the oven and carefully put back on the hob over a medium heat. The liquid will have reduced considerably. Keep turning the ribs over to coat in the sauce - they are ready once they are all covered and glossy, around 10 mins. Scatter over the lime zest and chilli flakes and serve with lime wedges and plenty of kitchen paper.
