CONFETTI BLONDIES

- For the blondies: Preheat the oven to 350 degrees F. Prepare an 8-inch square baking pan with parchment and cooking spray, allowing the parchment to hang over the sides.
- In a medium bowl, whisk together the brown sugar and butter. Whisk in the vanilla and eggs. Using a rubber spatula, fold in the flour, baking powder and salt. Lastly, fold in the sprinkles.
- Pour the batter into the prepared baking pan and spread it to even out the surface. Bake until the blondies are golden brown, 32 to 35 minutes. Set aside to cool completely before icing, about 1 hour.
- For the confetti icing: In a large bowl, mix the powdered sugar, butter, vanilla and salt with an electric mixer until just combined. Add the milk and whip until the icing is light and fluffy, 2 to 3 minutes. Fold in the rainbow sprinkles.
- Spread the icing on the cooled blondies in a thick even layer. Sprinkle the top with as many sprinkles as your heart desires. Refrigerate the baking pan until the icing is firm, at least 1 hour.
- Carefully lift the blondies out of the pan and cut into 2-inch squares.
MOM-MOM'S BLONDE BROWNIES
The chewy kind, with chocolate chips. My mom's handwritten recipe included "1 Blonde Wig", which always made her giggle. Family Note: Mom-mom used margarine, but butter is better.

- Preheat oven to 350 degrees. Grease a 9" X 12" baking pan.
- Melt butter with brown sugar in saucepan over medium heat, stirring constantly. Let cool slightly. Pour into mixer bowl.
- Add eggs, vanilla and water. Mix well.
- Sift together flour, baking powder, baking soda and salt. Beat into butter mixture.
- Stir in chocolate chips.
- Optional: Add walnuts and one blonde wig.
- Bake at 350 degrees for 20 to 25 minutes.

- Melt shortening, then mix in brown sugar and water, then mix in eggs and vanilla.

- Preheat the oven to 375 degrees F. Butter and flour a 9 by 13-inch glass baking dish.
- Put the sugar in a large bowl. Melt the butter in a small skillet or in the microwave in a glass measuring cup. Stir the butter into the sugar until smooth, cool to room temperature.
- Meanwhile, in another medium bowl, whisk the flour, baking soda, and salt together.
- Beat the eggs and vanilla into the sugar mixture. Add the flour mixture a bit at a time and mix until a smooth thick batter forms. Fold in the chips, as desired.
- Spoon the batter to the prepared dish and spread to evenly fill the dish. Bake until the blondies are light brown around the edges and a toothpick inserted in the center comes out clean, about 20 to 25 minutes.
- Remove from the oven and let cool slightly. Invert onto a rack and cool completely. Cut into squares and serve.

- Preheat oven to 350°F Grease a 9x9 inch square pan.
- Combine sifted flour, baking powder, baking soda, and salt. Sift again and add 1/2 cup chopped nuts. Mix wel and set aside.
- Melt 1/3 cup butter. Add 1 cup firmly packed brown sugar and mix well. Cool slightly.
- Add beaten egg and vanilla; blend well. Add flour mixture, a little at a time, mixing well.
- Spread into prepared pan. Sprinkle chocolate chips on top. Bake in the preheated oven for 20 to 25 minutes. Cool and cut into bars.
