GLUTEN FREE APPLE CRISP

Gluten Free Apple Crisp image

Gluten Free Apple Crisp featuring a buttery oat topping over a warm apple cinnamon filling. Easy and scrumptious. The perfect apple dessert!

Provided by Erin Clarke / Well Plated

Categories     Dessert

Time 1h10m

Number Of Ingredients 13

1 cup gluten free rolled oats
2/3 cup almond flour
2/3 cup brown sugar
2/3 cup pecan halves (chopped)
1/2 teaspoon kosher salt
6 tablespoons unsalted butter
2 1/2 pounds mixed apples
1/4 cup pure maple syrup or honey
2 tablespoons bourbon (or rum or water)
1 1/2 teaspoons ground cinnamon
1 tablespoon freshly squeezed lemon juice
1/2 tablespoon cornstarch
Vanilla ice cream (frozen yogurt, or Greek yogurt, for serving)

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish with non-stick spray.
  • In a medium bowl, stir together the oats, almond flour, brown sugar, pecans, and salt.
  • In a microwave-safe bowl in the microwave (or a saucepan on the stove), melt the butter. Pour over the top of the oat mixture. With a fork or rubber spatula, stir until the crumbs are evenly moistened.
  • To a large mixing bowl, add the apples, maple syrup, bourbon, cinnamon, lemon juice, and cornstarch. With a big spoon, stir to combine.
  • Scoop the apples and any liquid that has collected at the bottom of the bowl into the prepared baking dish into an even layer. It will be very full. Nudge the apple slices around a bit so that they lay fairly flat.
  • With your hands, squeeze chunks of the crumb mixture together to create clumps of assorted sizes, and place them on top of the apples. Scatter any remaining crumb mixture over the top.
  • Bake the crisp until the apples are tender (you may need to use a fork to peek down underneath that generous topping and check on the apples) and the crumb topping is crisp and deep golden brown, about 45 to 55 minutes. Check the crisp halfway through, then periodically during baking; if at any point, the topping browns more quickly than you would like, tent the pan with foil to protect the crust, then continue baking as directed. Serve warm with a big scoop of ice cream.

QUICK & EASY APPLE CRISP

Quick & Easy Apple Crisp image

A traditional autumn dessert that's delicious served with vanilla ice cream. I've often made this recipe "diabetic-friendly" without sacrificing taste or quality by using Splenda No-Calorie Sweetener. Directions are included.

Provided by Debs Recipes

Categories     Dessert

Time 50m

Yield 6 serving(s)

Number Of Ingredients 9

6 -8 tart apples, peeled, cored, and sliced (such as Granny Smith)
2 -3 teaspoons lemon juice
1/4 cup granulated sugar
1 teaspoon cinnamon
1 tablespoon butter
1 cup flour
1 cup brown sugar
1/2 cup butter
vanilla ice cream or fresh whipped cream

Steps:

  • Toss apples with lemon juice, sugar, and cinnamon; turn into an 8x8" baking pan that has been lightly coated with no-stick cooking spray; dot with butter.
  • Cut together flour, brown sugar, and butter until crumbly; sprinkle evenly over apples.
  • Bake at 350° for 30-40 minutes until apples are tender; serve warm with vanilla ice cream or fresh whipped cream.
  • VARIATION: This recipe can be made diabetic-friendly by substituting Splenda for the granulated sugar and substituting 1/2 cup Splenda for 1/2 cup of the brown sugar - the remaining 1/2 cup of brown sugar is still used.

APPLE CRISP (GLUTEN-FREE!)

Apple Crisp (Gluten-Free!) image

A very yummy, fairly easy, gluten-free (but you can't tell) dessert. This is very forgiving; I kind of made up the amounts I used and it turned out well, but it could be altered and still turn out well, I'm sure.

Provided by Laura Meehan

Categories     Dessert

Time 55m

Yield 6 serving(s)

Number Of Ingredients 6

3 apples, cored and sliced
1/4 cup margarine
0.5 (8 ounce) bag midel arrowroot cookies (gluten-free animal crackers, or could try other cookies)
2 tablespoons sugar
cinnamon
clove

Steps:

  • Put the apples in a baking dish (I used a 1-quart glass one). Put a few tablespoons of water in the bottom of the dish. Sprinkle the apples with the sugar, and a dash of cinnamon and cloves.
  • Grind cookies into crumbs in a food processor, or put them in a ziplock bag and crunch them up with a rolling pin.
  • Add the margarine to the crumbs and process or cut in until the mixture turns into coarse crumbs and no lumps are visible.
  • Pour crumbs over the apples in the dish and bake in a 350 degree oven for 45 minutes or until the crumbs darken and turn light brown (keep your eye on it).

My son has celiac disease & I try very hard to get versions of his favorite foods in gluten free versions. This recipe is actually a conglomeration of several recipes I have tried & is usually more popular than the "glutened" versions at events I take it to.
