EASY OATMEAL BARS (4 INGREDIENTS!)
Here's an oatmeal bars recipe that's beyond easy! These healthy breakfast bars are irresistibly tasty and great for busy mornings and snacks.

Steps:
- Mix together all the ingredients in a bowl until it forms a sticky dough. If the mixture is dry and not sticky, add a bit more honey and/or peanut butter; different peanut butter brands perform differently here.
- Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
- Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.

NO-BAKE PEANUT BUTTER OATMEAL BARS

- In a small saucepan, combine peanut butter and honey. Cook and stir over medium-low heat until melted and blended. Remove from heat; stir in oats. Spread into a greased 9-in. square pan; press lightly. Cool to room temperature; cover and chill for 1 hour.

CHOCOLATE CARAMEL OATMEAL BARS
A girl at work made them and as I love caramel asked for recipe have lost it twice so posting it here so I do not loose it again. Will be adding these to my Christmas baking list.

Steps:
- Preheat oven 350°F and line a 9x13 pan with parchment paper.
- In medium bowl whisk together flour, baking soda and salt.
- Using electric beater beat together butter, brown sugar and vanilla until creamy. Scrape down side of bowl. Beat in flour mixture, mix in oatmeal. Using floured hands press about 2/3 of the mixture evenly into pan.
- Bake until deep golden brown around edges, about 25 minutes.
- Add 1/2 of the milk chocolate (caramilk bars) into remaining oatmeal mixture, mix well with your hands.
- Remove base from oven when baked. Evenly drizzle condensed milk over the hot base. Sprinkle with remaining caramilk and choc chips. Crumble remaining oatmeal mixture over top (will not cover completely).
- Bake until topping is deep golden brown and edges are bubbling, about 25-27 minutes.
- Cool in pan on rack, cut into bars store in an airtight container.
- Makes 30 bars. This came from Chatelaine magazine.

- Preheat oven to 350°F.
- Spray 8 inch square baking pan with nonstick spray and set aside.
- With a whisk or electric mixer, beat together brown sugar, spices, molasses, oil and egg.
- In a separate bowl, combine flour, oats and baking powder.
- Add to molasses mixture; stir until blended.
- Spread in baking pan.
- Bake for 18-20 minutes or until a toothpick inserted in centre comes out dry.
- Cool on wire rack.
- Cut into squares.

ELSIE'S PINEAPPLE OATMEAL BARS
A sweet lady at the church I attended growing up used to make these for potlucks and church dinners. She once gave me the recipe on a card, which I've long since misplaced, but I had copied the recipe into another cookbook and have made it many times. Every time I take these bars somewhere, people ask for the recipe. They're also great made with zucchini pineapple (the recipe is also posted here on the zaar, by another chef). I like to cut the sugar down by at least 1/4 cup, because the pineapple is sweet enough, and I've always made these with real butter. Quick oats or old-fashioned will work, but the old-fashioned does make it a little more challenging to press the crust into the pan. I intend to try a mixture of the two at some point, but haven't ever done it. These would be great for a bake sale, potluck, or gifts. The crust does tend to be a little soft, so I'd be sure to package with something firm underneath, rather than just wrapping in plastic. I've seen other recipes that add nuts, coconut, etc. I'm sure that would be great as well, but this is just the basic, buttery, oatmeal and brown sugar crust and topping. Yum!

- For the filling, combine the sugar and cornstarch in a saucepan and mix well. Add the pineapple and its juice, and cook over medium heat until thickened, stirring constantly. Cool.
- For the crust, combine oatmeal, salt, brown sugar, flour, and baking powder together. work in butter until mixture is uniform.
- Reserve 1 1/4 cup of crumb mixture, and press the rest into an ungreased 9 x 13 pan, working up edges just slightly to help hold filling off of the edge of the pan.
- Pour filling over oatmeal mixture and spread evenly.
- Sprinkle reserved crumbs evenly over filling.
- Bake at 350 for 20 minutes. cool and cut into bars.
EASY STRAWBERRY OATMEAL BARS

- Place a rack in the center of your oven and preheat to 375 degrees F. Line an 8×8-inch baking pan with parchment paper so that the paper overhangs two sides like handles.
- In a medium bowl, combine the oats, flour, brown sugar, ginger, and salt. Pour in the melted butter and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside 1/2 cup of the crumble mixture, then press the rest into an even layer in the bottom of the prepared pan.
- Scatter half of the strawberries over the crust. Sprinkle the cornstarch evenly over the top, then sprinkle on the lemon juice and 1/2 tablespoon of the granulated sugar. Scatter on the remaining berries, then the remaining 1/2 tablespoon sugar. Sprinkle the reserved crumbs evenly over the top. You will have some fruit showing through.
- Bake the bars for 35 to 40 minutes, until the fruit is bubbly and the crumb topping smells toasty and looks golden. Place the pan on a wire rack to cool completely (you can speed this process along in the refrigerator).
- While the bars cool, prepare the glaze: In a medium bowl, briskly whisk together the powdered sugar, vanilla, and milk until smooth. Feel free to add more milk if a thinner consistency is desired. Using the parchment-paper handles, lift the bars from the pan. Drizzle with glaze, slice, and serve.
