CRISPY CHEESE AND BACON POTATOES
Crispy roasted potatoes, topped with melting cheese and plenty of crisp bacon are a great side dish for any meal.

- COOK THE BACON: Spread the bacon strips out across a large rimmed baking sheet pan and place on the middle rack of a COLD oven. Set the temperature to 400 degrees. Set a timer for 16 minutes and check the bacon. Remove it from the oven when it is as crisp or crunchy as you like. I remove ours at 18 minutes and it's a great balance of chewy crunch. If you like your bacon crispy enough to crumble, you will probably want to cook it another minute past that.
- COOK THE POTATOES: While the bacon is cooking, peel and chop the potatoes. Transfer the bacon to a paper towel lined plate to drain. There should be 2-3 tablespoons of bacon grease left on the sheet pan. (If there is more than that, drain off a bit.) Put the potatoes on the pan and toss with tongs to thoroughly coat them in the bacon grease. Sprinkle with salt and pepper. Spread the potatoes out in a single layer and bake for 20 minutes, stir well and bake an additional 20 minutes. Stir again, making sure that none of the potatoes are sticking to the tray. Bake another 15 minutes.
- Chop the bacon into small pieces. Remove the potatoes from the oven, stir again and sprinkle generously with shredded cheese and chopped bacon. Return the tray to the oven and bake an additional 2-3 minutes, until the cheese has melted. Top with sliced green onions just before serving. Enjoy!

- Preheat the oven to 350 degrees.
- Butter a 13x9x2-inch glass baking dish.
- Cook chopped bacon in heavy skillet over medium heat until brown and crisp.
- Transfer bacon to paper towels to drain. Blot well.
- Combine bacon, potatoes and onion in prepared baking dish.
- Season with salt and pepper.
- Sprinkle with cheese. And jalapenos, if using.
- Dot with butter.
- Cover with aluminum foil.
- Bake until potatoes and onions are very tender, about 1 hour.
- Preheat broiler.
- Uncover baking dish and broil until the top of the potato mixture is brown and crisp.
- Watch closely. This only takes a couple of minutes!

- Preheat the oven to 450 degrees F (220 degrees C).
- Arrange the potatoes and onions in a greased 9x13 inch baking dish so that they are evenly distributed. Season with garlic powder, salt and chili powder. Drizzle with olive oil. Stir to coat potatoes and onions with oil and spices.
- Bake for 35 to 40 minutes in the preheated oven, until potatoes are fork tender and slightly crispy. Stir every 10 minutes. When done, sprinkle with cheese. Wait about 5 minutes for the cheese to melt before serving.

- Scoop out potato.
- Put potato in large bowl and mash.

- Scrub new potatoes well and rinse in cold water. Cook in boiling salted water for 15-20 minutes with bay leaves until tender.
- Meanwhile, preheat the grill to high. Melt butter in a small pan, add a bunch of spring onions, chopped and cook gently for 1-2 minutes to soften.
- Grill the smoked streaky bacon until crisp and golden, drain on kitchen paper, then break into small pieces.

- Boil potatoes in salted water til soft (about 25 min). Drain, cool slightly, quarter & set aside.
- Place a lrg non-stick sauté pan over med heat & cook bacon to barely crisp. Drain bacon on paper towels, crumble slightly & set aside.
- Place butter in the sauté pan over med-high heat & sauté the onions w/salt, pepper, cumin seeds & chili powder (stirring occ) till onions are soft & aromatic.
