SPICY STICKY LAMB CHOPS

1 1/2 teaspoons coriander seeds
1 1/2 teaspoons fennel seeds
1/4 cup plain yogurt
1/4 cup tomato paste
4 teaspoons finely grated ginger
4 teaspoons minced garlic
1/2 teaspoon hot sauce (or as much hot sauce as you like. I like it mild, so you may want more) (recommended: Sriracha)
2 teaspoons light brown sugar
2 teaspoons kosher salt
Freshly ground black pepper
1 teaspoon apple cider vinegar
4 teaspoons vegetable or canola oil
8 (1 1/4-inch thick) lamb loin chops

Steps:

  • Preheat the oven to 475 degrees F.
  • Toast the coriander and fennel seeds in small pan over a medium flame, shaking every 30 seconds so they don't burn. Once they've given off a lovely aroma and have turned a darker tone, remove from the hot pan and cool completely on a plate. Then throw them into your spice grinder and grind to a fine powder.
  • Mix the spices with the yogurt, tomato paste, ginger, garlic, hot sauce, brown sugar, salt, a healthy few grinds of freshly ground black pepper, apple cider vinegar, and oil. Taste and season according to your palate.
  • Cover each chop with the marinade, rubbing it into the meat and fat. You can marinate overnight, a few hours, or just 30 minutes. I've done all three and it tastes great every way.
  • Bake the chops in a 9- by 13-inch baking dish until the lamb is cooked to medium-rare, or to your liking, 15 to 20 minutes. Remove from the oven and allow to rest, tented with foil, for about 5 minutes before serving.

2 pounds rib, shoulder, or loin lamb chops, frenched if desired
2 tablespoons vegetable oil, divided

Steps:

  • Combine yogurt, lemon juice, and garlic in a medium bowl; season with salt and pepper. Transfer 1/2 cup yogurt mixture to a small bowl and set aside for serving. Stir cumin, coriander, turmeric, and allspice into remaining yogurt mixture.
  • Season lamb chops with salt and pepper. Using your hands, evenly coat all sides of chops with spiced yogurt mixture (avoiding the bone if they are frenched). Let chops sit at room temperature 30 minutes, or cover and chill up to 12 hours.
  • Heat 1 Tbsp. oil in a large skillet over medium-high. Wipe off excess marinade from lamb chops and cook half until nicely browned, about 3 minutes per side (the yogurt in the marinade will help them take on color quickly). Remove chops from skillet and pour off fat (no need to wipe it out). Repeat with remaining 1 Tbsp. oil and remaining chops.
  • Serve lamb chops with reserved yogurt mixture alongside.

1 cup olive oil, plus more for brushing
1/2 cup aged balsamic vinegar
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh rosemary
1 teaspoon ground cumin
4 cloves garlic, finely chopped
1/2 cup chopped fresh mint
16 small lamb chops (about 3 1/2 pounds), Frenched
Kosher salt and freshly ground black pepper
2 tablespoons lemon zest plus 2 tablespoons juice

Steps:

  • Whisk together the oil, balsamic vinegar, parsley, rosemary, cumin, garlic and 2 tablespoons mint in a medium bowl. Place the lamb into a resealable plastic bag and pour half of the marinade over the lamb. Season with salt and pepper, seal the bag and refrigerate for 1 to 2 hours.
  • Add the lemon zest and juice and remaining 6 tablespoons mint to the remaining marinade and whisk to combine. Season with salt and pepper and set aside.
  • Heat a large grill pan over medium-high heat until very hot; lightly brush with oil.
  • Remove the lamb from the bag, letting the excess marinade drip off (discard the marinade). Season with salt and pepper. Grill the chops, turning once, about 3 minutes per side for medium-rare.
  • Serve the chops with the reserved marinade.

2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon lemon juice
1 crushed garlic clove
1/2 teaspoon ground ginger

12 lamb cutlets
1 cup low fat natural yogurt or 1 cup Greek yogurt
2 garlic cloves, crushed
1 tablespoon mint, finely chopped
2 tablespoons coarse grain mustard
1 tablespoon prepared mint sauce
2 large red onions, sliced thinly
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon honey

Steps:

  • Combine all the marinade ingredients in a shallow glass or ceramic dish.
  • Add the lamb cutlets.
  • Toss to coat and refrigerate for 3 hours.
  • Preheat BBQ to medium heat.
  • For honeyed onions.
  • heat oil on BBQ plat or griddle, add onions.
  • cook, stirring constantly for 10 min's.
  • Add vinegar and honey and cook, stirring for a further 5 Min's until onions are soft and golden.
  • For the chops.
  • Drain chops and discard marinade.
  • Cook on a lightly oiled BBQ for 2-3 Min's per side or until cooked to your liking.
  • Serve lamb with onions.

Steps:

  • Whisk together the yogurt, lemon juice, cumin, coriander and turmeric in a bowl. Season with salt and pepper. Lay out your chops and season them with salt and pepper on both sides. You can put the chops in the bowl with the spiced yogurt and roll them around to coat well. Or do what I do and place everything in a large zip top bag. Use your hands on the outside of the bag to make sure that the chops are well coated with the spiced yogurt mixture. Let sit for at least one hour, which can be done at room temperature, and up to overnight refrigerated. Bring back to room temperature before proceeding.
  • Heat a large cast iron pan over medium heat, add enough oil to coat the bottom of the pan. Remove chops from bowl or bag, wiping off most, but not all, of the spiced yogurt. Add half of the chops; they should sizzle as they hit the pan. Cook for about 3 minutes or until nice and crusty and golden brown on the bottom. Flip over and cook an additional 2 to 3 minutes or until chops are done to your liking (we like them medium-rare). Repeat with a little more oil and second batch of chops. Discard marinade. Let chops sit for 5 minutes and serve immediately.
