Really great recipe for both waffles and pancakes. Very helpful to use the Tupperware large and small Mix & Stores (or any other mixing bowl with a handle and a pouring spout).

Number Of Ingredients 7

Ingredients

2 1/2 cups flour
4 teaspoons baking powder
3/4 teaspoon salt
2 tablespoons sugar
2 eggs
2 1/4 cups milk or 2 1/4 cups combination of milk and water
3 tablespoons melted shortening, bacon drippings or 3 tablespoons vegetable oil

Steps:

In a large bowl, preferably one with a handle and a pouring spout, mix together the first four ingredients. I use a whisk.
In a separate, smaller bowl, again with a handle and a pouring spout if it's available, beat the two eggs into the milk or milk and water combination, then add and mix in the melted shortening, bacon drippings or vegetable oil.
Pour the wet ingredients into the dry ingredients and mix with a firm whisk, just until combined. Mixture will be lumpy.
Pour onto heated nonstick waffle iron or griddle. Serve hot, or re-heat leftover waffles in a toaster.

Ingredients

2 eggs, beaten
2 1/4 cups milk
1/2 cup oil
2 1/4 cups flour
4 teaspoons baking powder
3/4 teaspoon salt
1 1/2 tablespoons sugar

Steps:

Mix wet ingredients together. Sift dry ingredients into separate bowl. Add wet ingredients. Mix till moistened. Bake in preheated waffle maker 7-8 minutes until done and golden brown.
Cooking time is for all the waffles.

1 3/4 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1 3/4 cups milk
1/2 cup cooking oil or 1/2 cup melted butter
1 teaspoon vanilla

Steps:

In a medium bowl, stir together the flour, sugar, baking powder and salt. Make a well in the center of the flour mixture.
In another bowl, beat the eggs, slightly; stir in the milk, oil and the vanilla.
Add the egg mixture all at once to the flour mixture. Stir until just moistened (the batter should still be slightly lumpy).
Pour 1 to 1 1/4 cups batter onto the grids of a preheated, lightly greased waffle iron . Close the lid quickly and do not open until done.
When done lift the waffles of the iron with a fork.
Repeat the procedure with the remaining batter.
