UNCLE BILL'S PYRAHI DOUGH



Uncle Bill's Pyrahi Dough image

This recipe goes back to the good old days. My grandmother taught me how to make the pyrahi when I was very young.

Number Of Ingredients 9

1/2 cup luke water
2 tablespoons active dry yeast
1/2 teaspoon granulated sugar
2 cups whole milk, homogenized,warmed
2 large eggs, beaten
2 tablespoons granulated sugar
1 teaspoon salt
3/4 cup extra virgin olive oil
5 cups all-purpose flour

Steps:

  • In a small bowl, measure water, add yeast,1/2 teaspoon sugar and let stand for about 10 minutes or until frothy.
  • In a large mixing bowl, add warmed milk and yeast and stir gently to incorporate.
  • Add beaten eggs, 2 tablespoons of sugar, salt, olive oil and mix gently.
  • Add flour, 1 cup at a time mixing well after each addition.
  • If dough is too sticky, add a bit more flour.
  • Turn dough out onto a lightly floured surface and knead several times until dough is smooth.
  • Place dough in a lightly greased bowl, turn once to coat.
  • Cover with plastic wrap and place dough in refrigerator for 4 hours or longer.
  • When ready to use, remove from refrigerator and punch dough down.
  • Divide dough into 24 equal pieces and roll into balls that will be the size of a golf ball.
  • Roll dough out into rounds on a lightly floured surface to about 1/8" thickness.
  • Place about 3 tablespoons of filling mixture of your choice in the center of each round.
  • Fold the left and right side of the round towards the center, pinching the dough to crease.
  • Bring the other 2 edges towards the center and pinch again to crease.
  • Leave a space of about 1/4" slit in the center of the pyrahi.
  • Slightly flatten the pyrahi with the palm of your hand.
  • Place pyrahi on a lightly greased cookie sheet, cover with a damp cloth and let rise for 25 to 30 minutes.
  • Bake in preheated 400 F oven for 25 minutes or until lightly browned.
  • Remove from oven and brush with melted butter.
  • Serve with melted butter and sour cream or yogurt.
  • To re-warm the pyrahi, heat a frying pan on medium heat, add 1 tablespoon of butter, add the pyrahi, cover and fry for 1 1/2 to 2 minutes, turn over and fry for another 1 to 1 1/2 minutes.

3 cups blueberries (fresh or frozen)
1 1/4 cups granulated sugar
1/3 cup tapioca starch
2 teaspoons lemon juice
1/2 cup granulated sugar
1/4 cup tapioca starch

Steps:

  • If you are using frozen berries, thaw first before using.
  • In a bowl, mix together sugar and tapioca starch, mix well.
  • Place blueberries in a large bowl and pour sugar/tapicoa mixture over and mix well to coat.
  • Now add lemon juice and mix well.
  • In a smaller mixing bowl, mix together 1/2 cup granulated sugar and 1/4 cup tapioca starch.
  • Prepare dough rounds to use in your Mini Form.
  • Place dough over Mini Form.
  • Sprinkle 1/4 teaspoon of sugar/tapioca starch mixture over the middle of the dough in the Mini Form.
  • Now add 1 tablespoon of blueberries and close Mini Form, remove excess dough.
  • Continue with the remainder of the blueberry mixture.

3 cups blueberries (fresh or frozen)
1 1/2 cups granulated sugar
1/2 cup tapioca starch (cornstarch can also be used)

Steps:

  • If you are using frozen blueberries, thaw before using.
  • In a mixing bowl, mix together sugar and tapioca starch until well mixed.
  • Reserve 1/2 cup of mixture to be used for adding to the base of the pastry.
  • Add remaining sugar mixture to the blueberries and carefully mix well to coat berries.
  • Let mixture sit for about 5 minutes before using.
  • Add 1/2 teaspoon of sugar/tapioca starch mixture to the dough rounds or pastry cups.
  • Add about 1 1/2 tablespoons of blueberries into either the regular dough or the pastry dough.
  • Bake in preheated 400 F oven for 12 to 15 minutes or until crust is just lightly browned.

I wanted to make a light style soup using many of the fresh veggies that are available at this time. This soup is easy to make and tastes so good.

3 tablespoons butter
1 tablespoon extra virgin olive oil
1 medium onion, chopped small
3 large garlic cloves, chopped small
4 cups chicken broth
4 cups hot water
3 tablespoons chicken soup base
3 white nugget potatoes, washed and cubed 1/4 inch
4 small young carrots, washed and sliced 1/8 inch thick
3 tablespoons finely chopped fresh dill weed or 3 teaspoons dried dill weed
2 tablespoons finely chopped fresh parsley or 1 teaspoon dried parsley flakes
1 cup cauliflower floret, broken into small pieces
1 1/2 cups chopped chopped small celery ribs
2 cups fresh young peas (petite) or 2 cups use frozen tiny peas (petite)
1/2 large sweet red pepper, seeded and diced small
2 green onions, chopped small
3/4 teaspoon white pepper
1/2 teaspoon seasoning salt
6 tablespoons idaho potato flakes
1/2 cup whipping cream

Steps:

  • In a cooking pot on medium-high heat, melt butter and add olive oil.
  • Add chopped onions and saute' on medium-high heat for 5 minutes.
  • Add garlic and saute' for another 2 minutes.
  • Add chicken broth and water and bring to boil.
  • Add chicken soup base, cubed nugget potatoes, and cook for 4 minutes.
  • Add carrots, dill weed, parsley and continue to cook for another 5 minutes or until carrots are just tender, but still firm.
  • Add cauliflower, celery, young peas, red pepper, green onion, white pepper, seasoning salt, Idaho potato flakes and cook for another 3 to 4 minutes.
  • Reduce heat and add whipping cream slowly, stirring all the while when adding.
  • Adjust seasonings to taste.
  • Remove soup from heat and let stand for 10 minutes before serving.
  • Refrigerate any unused portions.

A very light salad to add to any dinner meals. I developed this recipe in 1995 and it has been a highly rated salad.

2 cups frozen tiny peas (whole)
1/2 cup sour cream
1/2 cup mayonnaise
2 teaspoons dried dill weed
2 tablespoons finely chopped onions
4 tablespoons finely chopped celery
3 slices bacon, fried until crispy

Steps:

  • In a microwave-proof dish, microwave peas on HIGH (full power) for 2 minutes; stir.
  • Continue to microwave for an additional 2 minutes on HIGH (full power).
  • Drain and cool completely with cold water and ice cubes; then drain.
  • In a large mixing bowl, mix together peas, sour cream, mayonnaise, dill weed, onions and celery and mix well to blend.
  • Chill for at least 30 minutes in refrigerator.
  • Meanwhile, fry bacon until well done and crispy; DO NOT BURN.
  • Place fried bacon on paper toweling to drain.
  • Crumble bacon and garnish salad when serving.

3 large red beets
3 tablespoons granulated sugar
1/2 teaspoon salt
3 tablespoons butter

Steps:

  • Wash and scrub beets, cut off the tails and the end.
  • In a saucepan, add beets, just cover with water and bring to boil.
  • Reduce heat and cook until beets are just tender, about 30 minutes.
  • Drain and immediately pour cold water over beets.
  • When cool enough to handle, remove skins and discard.
  • Grate beets.
  • In a mixing bowl, add grated beets, sugar and salt, mix well.
  • In a frying pan, melt butter, add beet mixture and saute' for 5 minutes stirring occasionally.
  • Let cool slightly before using.
  • Use about 3 tablespoons of filling for each pyrahi.
  • You can also use canned regular beets.
  • Grate the beets and prepare them as above.

1/4 cup whipping cream
1 tablespoon granulated sugar
1/2 teaspoon salt

Steps:

  • In a saucepan, add canned beans including liquid.
  • Bring to boil, reduce heat and simmer for 5 minutes.
  • Remove from heat and mash beans.
  • Add whipping cream, sugar and salt and mix well.
  • Use about 3 tablespoons of filling for each pyrahi.
  • You may also use dried beans, 3 cups.
  • In a saucepan, add beans, cover with water and cook until tender.
  • Drain, but reserve 1 cup of liquid.
  • Mash beans, add 1 cup reserved liquid, whipping cream, sugar and salt and mix well.
  • You may also use other legumes of your choice.

For those who love cottage cheese, these perogies are a delightful treat. The original recipe was given to me by my Grandmother over 55 years ago. I have made some modifications to enhance the taste. Number Of Ingredients 5

3 cups dry curd cottage cheese
1 cup finely chopped green onion
2 large eggs, beaten
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Squeeze as much liquid that you can from the dry curd cottage cheese and discard.
  • In a mixing bowl, add cottage cheese, finely chopped green onions, beaten eggs, salt and pepper and mix well to blend.
  • Use 1 heaping tablespoon for each perogie.
  • Boil for 2 to 3 minutes or until they float to the surface.
  • Serve with melted butter and sour cream if desired.
  • These perogies freeze well.

1 tablespoon butter
3/4 cup finely chopped onion
3 cloves garlic, minced
2 large eggs, beaten
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • In a saucepan, add potatoes, cover with water and cook until tender.
  • Drain well and mash potatoes, set aside.
  • In a frying pan, melt butter.
  • Add onions and garlic and saute' for 5 minutes or until onions are translucent.
  • In a mixing bowl, add potatoes, sautee'd onion/garlic, beaten eggs, salt and pepper and mix well.
  • Use about 3 tablespoons of mixture for each Pyrahi.
