Honey-Mustard Glazed Ribs in Oven and Broiler image

Provided by Bobby Flay

Categories     main-dish

Time 1h45m

Yield 6 servings

Number Of Ingredients 11

1/2 cup apple cider vinegar
2 tablespoons light brown sugar
1/3 cup clover honey
3 heaping tablespoons Dijon mustard
Salt and freshly ground black pepper
2 racks St. Louis Style/Country Style pork ribs (12 ribs each)
4 tablespoons canola oil
Salt and freshly ground black pepper
1 cup soy sauce
4 cups water
2 to 3-inch piece ginger, skin on and sliced

Steps:

  • Combine the vinegar and brown sugar in a small saucepan over high heat and cook, stirring occasionally, until the sugar is completely dissolved and mixture reduces slightly, about 5 minutes. Remove from the heat and whisk in the honey and mustard and season with salt and pepper, to taste. Let cool to room temperature.
  • Preheat the oven to 500 degrees F.
  • Brush the pork racks on both sides with canola oil and season with salt and pepper, to taste.
  • In a saucepan over medium-high heat, combine the soy sauce, 4 cups of water and the ginger and bring to a boil. Pour the mixture into the bottom of a roasting pan, fitted with a rack, and arrange the ribs on the rack. Wrap the pan with foil and roast until the ribs are tender, about 1 1/2 hours.
  • Remove the ribs from the oven and transfer to baking sheets lined with foil or parchment paper. Turn on the broiler and let heat for 3 to 5 minutes. Brush the ribs heavily on the top side with some of the glaze, put under the broiler and broil until golden brown and a crust has formed. Remove from the oven to a cutting board and brush with more of the glaze. Let rest 10 minutes before slicing. Arrange the ribs on a serving platter and serve.

BAKED CHICKEN DRUMMIES

Baked Chicken Drummies image

Prepare the marinade in 5 minutes, marinate 2 hours and then into the oven to bake - too easy! For a budget friendly family meal for 4, serve with chips, a simple salad on vegetables on the side. Preparation time does not include the two hours marinating time required. You can use a large Ziploc bag for the marinade to save on washing up if you wish to. This recipe was made using competition ingredients for Dining on a Dollar comp. For a great home-made ponzu sauce - see recipe#487741 #487741 (You could just make up the small amount as used in this recipe) Alternatively, I think a blend of soy sauce and lime juice would work well

Provided by Jubes

Categories     < 60 Mins

Time 45m

8 chicken drumsticks
4 tablespoons ketchup
2 tablespoons ponzu sauce, see intro for other options (lime and citrus dressing sauce)

Provided by The Purple Baker

Categories     Meat and Poultry Recipes     Chicken     Chicken Breast Recipes

Time 1h15m

Yield 8

Number Of Ingredients 9

½ cup prepared yellow mustard
½ cup honey
2 tablespoons orange juice
1 clove garlic, minced
1 cup whole wheat flour
1 teaspoon salt, divided
3 cups whole wheat panko bread crumbs
3 eggs, beaten
2 pounds skinless, boneless chicken breast halves, cut into strips

  • Stir mustard, honey, orange juice, garlic together in a glass or ceramic bowl. Transfer 1/4 cup mustard mixture to a bowl to use as a dipping sauce; add chicken to the remaining mustard mixture and toss to coat. Marinate chicken for at least 30 minutes, or up to 3 hours.
  • Preheat an oven to 450 degrees F (230 degrees C). Place wire cooling racks onto baking sheets.
  • Stir whole wheat flour and 1/2 teaspoon salt together in a shallow bowl. Stir bread crumbs and 1/2 teaspoon salt together in another shallow bowl. Place beaten eggs in another shallow bowl.
  • Gently press a chicken strip into the flour mixture to coat and shake to remove excess flour. Dip into the beaten egg, then press into bread crumb mixture. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded chicken strips onto baking sheets prepared with wire cooling racks.
  • Bake chicken in the preheated oven until no longer pink in the center and the juices run clear, 15 to 18 minutes. Serve with reserved mustard sauce.
