STUFFED YOUNG ZUCCHINI

4 small zucchini, 5 to 6-inches long, 1 1/2-inches thick
2 tablespoons extra-virgin olive oil
12 crimini mushrooms, chopped
1 small to medium yellow onion, chopped
3 to 4 cloves garlic, grated or chopped
Salt and freshly ground black pepper
2 vine ripe tomatoes or Roma tomatoes, seeded and chopped
2 slices white toasting bread
Softened butter
A small handful flat-leaf parsley
A few sprigs fresh tarragon or a small handful basil leaves
3/4 cup shredded Parmigiano-Reggiano
1 egg, beaten

Steps:

  • Heat the oven to 425 degrees F.
  • Halve 4 of the small zucchini lengthwise and scoop out the seeds and soft center flesh with a spoon to produce a set of shallow shells to hold the stuffing. Reserve the center flesh. Arrange the small hulls in a baking dish. Drizzle with a little extra-virgin olive oil and season with salt and pepper, to taste. Chop the reserved zucchini flesh and set aside.
  • Heat the remaining extra-virgin olive oil in a skillet over medium-high heat and saute the mushrooms, onions and garlic for 5 minutes. Add in the reserved zucchini and tomatoes, season with salt and pepper, to taste and heat through for 1 minute, then remove from the heat.
  • While the veggies cook, toast the bread in a toaster, then spread liberally with butter and tear into pieces. Add the bread to a food processor along with the parsley and tarragon or basil, and pulse into herb crumbs.
  • Fold the herb crumbs into the veggies along with 1/2 cup Parmesan and the egg. Mound the zucchini stuffing in to the shells and roast for 15 minutes. Remove from the oven, sprinkle the tops with remaining cheese and broil for 2 to 3 minutes to brown.

1 cup mozzarella cheese, fresh
3 tablespoons grated Parmesan-Reggiano cheese
10 zucchini blossoms
7 tablespoons rice flour
2 eggs
¼ cup milk
¼ cup sparkling water
2 tablespoons sweet rice flour
salt and ground black pepper to taste
1 cup oil for frying

Steps:

  • Mix mozzarella cheese and Parmesan-Reggiano cheese together in a bowl until smooth. Stuff 1 tablespoon cheese mixture into each zucchini blossom and pinch the ends closed.
  • Mix rice flour, eggs, milk, sparkling water, sweet rice flour, salt, and pepper together in a bowl. Place stuffed blossoms in flour mixture; toss gently until covered.
  • Heat oil in a saucepan over medium heat. Fry blossoms in oil until crisp and pale golden brown, about 2 minutes. Rest blossoms on paper towels to absorb excess oil.

This recipe is an Italian side dish, we love it, I usually have one or two right out of the oven before dinner is even served. I want to try this with yellow squash as well.

3 1/2 lbs zucchini (12 small or 6 large)
1/2 cup cooked ham, diced
1/4 cup fresh basil, chopped
2 tablespoons parsley, chopped
2 tablespoons dry breadcrumbs (approx)
2/3 cup parmesan cheese, grated
2 eggs
nutmeg
salt and pepper
5 tablespoons butter
1 tablespoon flour
1 cup milk

Steps:

  • Cut ends off zucchini and trim to same length, wash and drain.
  • Boil in lightly salted water for 10 minutes or until half cooked, drain and cool (you may dip in ice water to help cool).
  • Slice in half lengthwise and scoop pulp into a colander to drain a little.
  • Leave about 1/4 inch thick walls in the zucchini, make them like a boat.
  • In a bowl mix pulp, ham, parsley, basil, breadcrumbs, eggs and all of the parmesan except 2 tablespoons.
  • Add nutmeg, salt and pepper to taste, stir well (I only use about 1/4 teaspoon of nutmeg, but use to your taste, or leave out).
  • In a saucepan melt 1/4 C of the butter, stir in the flour, gradually stir in milk and stir over low heat until it has thickened and is bubbly.
  • Gradually stir sauce into zucchini mixture, add more bread crumbs if mixture is not thick enough to spoon.
  • Useing a spoon fill zucchini shells with the mixture and arrange themm side by side in a shallow buttered baking dish.
  • Sprinkle with remaining parmesan cheese and bake at 350 for 1/2 hour, serve hot.
  • For an added touch mix 2 or 3 tablespoons of finely grated mozzarella cheese with the 2 tablespoons of parmesan then sprinkle on top.

Stuffed Zucchini Genovese image

4 4-inch long zucchini (about 1 1/2 pounds)
1 large potato
1/2 cup grated Parmesan cheese
1 egg, lightly beaten
Pinch freshly grated nutmeg
Salt and pepper
4 teaspoons homemade or prepared pesto
Extra-virgin olive oil, for drizzling

Steps:

  • Heat oven to 400 degrees. Trim ends of zucchini and halve them lengthwise. Using a spoon, or melon baller scoop out flesh from each half, leaving 1/4-inch thick shell. Reserve zucchini boats and flesh.
  • Boil potato until tender. When cool enough to handle, peel and mash potato in a potato ricer into a small bowl. Add reserved zucchini flesh, Parmesan, egg and nutmeg. Season to taste with salt and pepper. Mound potato mixture into each zucchini boat. Fill only as high as walls of zucchini, or a little above. Use a brush to smear pesto over each. Fit zucchini snugly into an oiled baking dish. Pour enough water to reach 1/4-inch up sides of zucchini, cover tightly with foil and bake 20 minutes. Remove foil and continue cooking 25 minutes more. Let cool to room temperature. Before serving, drizzle each zucchini boat with extra-virgin olive oil. Serve 2 zucchini per person.

The peak of summer is often marked by an abundance of zucchini and the eternal question of what to do with it! By grating and slowly simmering zucchini with butter and shallots, you can transform 2 pounds of zucchini into a concentrated spread that you can keep stashed inside your fridge in a small jar. Inspired by Julia Child's Grated Zucchini Sautéed in Butter and Shallots recipe, this version cooks much longer to really intensify the vegetal sweetness of zucchini. Try it on buttered toast or loosen with pasta water and coat your favorite noodle instead of pesto.

2 pounds zucchini (3 large or 4 medium)
3 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
1 shallot, finely chopped
3 sprigs fresh thyme
Kosher salt and freshly ground pepper
1/2 teaspoon finely grated lemon zest

Steps:

  • Grate the zucchini on the large holes of a box grater into a colander set over a bowl. Squeeze the zucchini to remove the excess liquid.
  • Heat the butter and olive oil in a skillet over medium heat. Add the shallot; cook, stirring, until softened, 2 to 3 minutes. Add the zucchini, thyme, 1 teaspoon salt and a few grinds of pepper; cook, stirring occasionally, until the zucchini is very tender and almost paste-like but not browned, 35 to 40 minutes, mashing it with a fork in the last 5 minutes. If the zucchini starts sticking, stir in a splash of water; reduce the heat as needed to prevent browning.
  • Remove the pan from the heat, stir in the lemon zest and season with salt. Let cool, then discard the thyme and transfer to a small jar. Store in the refrigerator for up to 1 week.

1 zucchini, scrubbed (the bigger the better!)
1/2 cup tomato sauce or 1/2 cup spaghetti sauce
1 garlic clove, minced
2 tablespoons onions, minced
1/2-1 teaspoon oregano, to taste
1/2-1 teaspoon basil, to taste
2 teaspoons parmesan cheese
2 tablespoons breadcrumbs
salt and pepper, to taste

Steps:

  • Preheat oven to 350°F.
  • Cut off knobby ends and cook zucchini, whole, in boiling salted water for 10 minutes.
  • Cut in half, lengthwise.
  • Scoop out insides with a spoon.
  • Saute onion and garlic for 2-3 minutes; add tomato sauce and heat through.
  • Stir in breadcrumbs.
  • Mix spices and stir into sauce mixture.
  • Add zucchini pulp.
  • Fill zucchini shells with mixture, top with parmesan cheese.
  • Bake for 15 minutes at 350°F.
  • Cool before serving; eat with knife and fork.
  • The skin of the zucchini is the most nutritious part!
  • Don't be afraid to eat the whole thing!

I found this and had to post before even trying - that way it would be here when I need it! In this dish, zucchini are stuffed with the twin stars of Calabrian cheese making: pecorino and ricotta. Flecked with tomato and mint, they are equally good eaten hot or at room temperature on a warm summer day, which is what we have almost all year long :) This recipe was first published in Saveur in Issue #113

6 medium zucchini, halved lengthwise (about 2 lbs.)
7 tablespoons extra virgin olive oil
3 garlic cloves, finely chopped
1 yellow onion, finely chopped
2 medium tomatoes, cored, seeded and chopped
2 cups homemade ricotta cheese or 2 cups store-bought ricotta cheese
3/4 cup grated pecorino cheese
3/4 cup fresh breadcrumb
3 tablespoons finely chopped flat leaf parsley
2 teaspoons dried mint, crumbled
2 teaspoons chopped fresh oregano
2 egg yolks, beaten
kosher salt
fresh ground black pepper, to taste
1 pinch red pepper flakes (or perhaps two pinches of pepper!)

Steps:

  • Using a small spoon, scoop out and discard pulp from each zucchini half, leaving a 1/4" rim around the edges.
  • Heat 3 tablespoons of the olive oil in a 10" skillet over medium heat.
  • Add garlic and onions; cook, stirring occasionally, until translucent, about 6 minutes.
  • Add tomatoes and cook, stirring occasionally, until soft, about 4 minutes more.
  • Remove from the heat and set aside.
  • In a medium bowl, stir together the ricotta, 1/4 cup of the pecorino, 1/4 cup of the bread crumbs, the parsley, mint, oregano, and egg yolks.
  • Fold in the onion mixture and season with salt and pepper;& a pinch or two of crushed red pepper flakes; set the filling aside.
  • Arrange an oven rack about 7" from the broiler element and heat.
  • Rub the insides of the zucchini with 2 tablespoons of the olive oil and season lightly with salt.
  • Place zucchini cut side up on a foil-lined baking sheet and broil for 5 minutes.
  • Remove baking sheet from oven and fill each zucchini half with enough of the ricotta mixture that it mounds slightly but doesn't spill over the edges of the zucchini.
  • Sprinkle each stuffed zucchini with the remaining pecorino and bread crumbs and drizzle with the remaining olive oil.
  • Broil until the zucchini are soft and the tops are lightly browned, 10-15 minutes.
  • Serve with other (vegetarian) dishes & some nice Italian wine and enjoy!
