3 lbs orange-fleshed sweet potatoes, peeled, cut crosswise into 1/4 inch thick rounds
1 3/4 lbs tart green apples, peeled, halved, cored, cut into 1/4 inch thick slices
1/2 cup pure maple syrup
1/4 cup apple cider
1/4 cup unsalted butter, cut into pieces
1/2 teaspoon salt

Steps:

  • Preheat oven to 375°F.
  • In a 13x9x2 inch glass baking dish, alternate potato and apple slices in rows, packing tightly.
  • Combine remaining ingredients in heavy medium saucepan and bring to a boil over high heat. Pour hot syrup over potatoes and apples. Cover dish tightly with foil and bake 1 hour. Uncover casserole. (Can be prepared 3 hours ahead to this point. Let stand at room temperature, basting occasionally with pan juices.) Reduce oven temperature to 350°F Bake until potatoes and apples are very tender and syrup is reduced to a thick glaze, basting occasionally, about 45 minutes. Let stand 10 minutes before serving.

3 pounds sweet potatoes (about 4 large)
1 cup pecans
4 tablespoons unsalted butter, plus more for preparing baking dish
3/4 cup agave syrup, preferably amber
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/4 cup whiskey
2 cups crisp apples, peeled, cored, and sliced into 1-inch pieces

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the potatoes on a baking sheet and cook the potatoes whole, do not pierce. Bake for 45 minutes to 1 hour. Lightly squeeze the potatoes - if they are soft, they are done. Let cool.
  • In a small saute pan over high heat, add the pecans and lightly toast. Add 4 tablespoons of butter, reduce the heat to medium, add the agave and spices, and allow to simmer for 4 to 5 minutes. Add the whiskey and continue to simmer for 5 minutes more.
  • Peel the potatoes and cut into 1/2-inch slices. Butter the bottom and sides of an 8 by 8-inch baking dish. Arrange the sweet potatoes, alternating with the apples. Pour the whiskey-pecan mixture over the top and place in the oven.
  • Bake for 30 minutes, basting the top with the whiskey sauce once at 15 minutes.
  • Remove and serve immediately.

4 pounds sweet potatoes, peeled and cut in 1-inch chunks
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon ground black pepper
5 slices smoked bacon, chopped
1 pound onions, thinly sliced
1 cup pure maple syrup
2 teaspoons fresh thyme

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks, olive oil, salt, and black pepper in a large bowl, and spread the sweet potatoes out onto a large rimmed baking sheet.
  • Roast in the preheated oven until browned and tender, about 40 minutes; stir after the first 20 minutes.
  • Cook the bacon until crisp and brown in a large skillet over medium heat, about 10 minutes; transfer bacon to a bowl, but leave the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, stirring frequently. Reduce heat to low, and cook the onions until very soft, brown, and sweet, another 10 to 15 minutes. Stir often. Mix the onions with the bacon in the bowl, and set aside.
  • Pour the maple syrup into the hot skillet with the thyme, and bring to a rolling boil. Boil the syrup until reduced by half, 3 to 4 minutes. Place the roasted sweet potatoes and onion-bacon mixture into the skillet, and stir to coat the vegetables with maple glaze. Transfer to a serving dish.

And your young chefs will love making it almost as much as eating it! I found this recipe inb Working Mother magazine. I have not tried this recipe, but I'm posting it for safe keeping.

5 tablespoons unsalted butter
3 tablespoons all-purpose flour
3/4 cup pure maple syrup
1/2 teaspoon salt
1/4 cup dark brown sugar
3 large sweet potatoes, peeled and sliced 1/4-inch thick (3 pounds)
3 granny smith apples, peeled and cored and thinly sliced (1 1/2 pounds)

Steps:

  • Heat oven to 350. Let the kids coat a 9x13-inch baking pan with 1 tablespoon of the butter; set aside.
  • In a small pan, melt remaining butter over medium-low heat. Whisk in flour until well blended and cooked, about 1 minute. Add maple syrup, salt and brown sugar. Simmer, whisking frequently, until the sugar dissolves and sauce thickens, about 4 minutes. Remove sauce from heat.
  • Help kids arrange a row of sweet potato and apple slices, alternating and overlapping them, in the prepared pan. They can continue to make rows until the pan is full. Pour the sauce evenly over potatoes and apples. Cover pan tightly with foil and bake 40 minutes.

3 medium sweet potatoes (1 1/2 to 2 pounds), scrubbed well
4 tablespoons (1/2 stick) unsalted butter
3/4 cup pure maple syrup
Coarse salt and freshly ground pepper
Small sprigs fresh thyme, for garnish

Steps:

  • Preheat oven to 400 degrees. Slice each sweet potato in half lengthwise, and slice each half crosswise into 1-inch-thick half-moons.
  • Melt butter in a large cast-iron or other ovenproof skillet over medium heat. Add sweet potatoes; toss to coat evenly. Add maple syrup; toss potatoes to coat, and bring to a boil.
  • Transfer skillet to oven; cook, stirring occasionally, until potatoes are golden, well glazed, and tender when pierced with a paring knife, about 20 minutes. Remove from oven, and season with salt and pepper. Serve hot, garnished with thyme.

  • Preheat the oven to 350°. Grease 2 very large, shallow baking dishes using 2 tablespoons of the butter. Alternating the sweet potato and apple slices, arrange the slices in the baking dishes in a single layer of concentric circles.
  • In a medium saucepan, combine the maple syrup, cider, butter, and salt. Simmer over moderate heat for 5 minutes. Pour half of the mixture over the slices in each of the baking dishes and cover the dishes securely with foil.
  • Bake in the center of the oven for 40 minutes, or until the apples release their liquid. Remove the dishes from the oven, uncover and baste the apples and sweet potatoes with the pan juices. Increase the oven temperature to 450° and place the dishes in the upper third of the oven. Continue baking for about 35 minutes longer, basting a few more times, until the sweet potatoes are tender and nicely glazed. Serve hot.
