My kids hate onions and peppers, but they LOVE these fajitas. Pita breads, where available, can be substituted for tortillas.

2 green bell peppers, sliced
1 red bell pepper, sliced
1 onion, thinly sliced
1 cup fresh sliced mushrooms
2 cups diced, cooked chicken meat
1 (.7 ounce) package dry Italian-style salad dressing mix
10 (12 inch) flour tortillas

Steps:

  • Cut peppers and onion into thin slices. Do not dice, leave slices long and thin.
  • Saute peppers and onion in a small amount of oil until tender. Add mushrooms and chicken. Continue to cook on low heat until heated through. Stir in dry salad dressing mix and blend thoroughly.
  • Warm tortillas and roll mixture inside. If desired top with shredded cheddar cheese, diced tomato and shredded lettuce.

This recipe is based on wonderful fajitas served at a small authentic Tex-Mex restaurant near where I used to live. I have used this with both chicken and steak, flank steak or skirt steak, and it works great. I also mix a batch of the dry spices together and use a tablespoon or so when I make fajitas. The red onions, while not traditional, add a nice color to the fajitaas, but sweet yellow onions are more traditional. Note that the preparation time listed includes time to marinate.

1 1/2 lbs boneless chicken breasts or 1 1/2 lbs flank steaks
1 lime
2 garlic cloves, minced
2 tablespoons vegetable oil (any kind)
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1/4 teaspoon ground cayenne pepper
1 teaspoon ground chili powder
1 teaspoon kosher salt
1 teaspoon black pepper, freshly ground
1 medium green bell pepper, cut into 1/2-inch strips
1 medium yellow bell pepper, cut into 1/2-inch strips
1 medium red onion, cut into 1/2-inch strips
8 flour tortillas
salsa
sour cream

Steps:

  • Cut chicken or steak into 3/4" strips. Place in a bowl or recloseable bag with lime juice, farlic, cumin, coriander, cayenne pepper, chili powder, salt, and pepper. Toss to coat. Allow to marinate in refrigerator for 1 hour for chicken, 1-1/2 to 2 hours or more for flank or skirt steak.
  • Heat grill or pan to high. Brush grill lightly with oil or coat bottom of pan lightly with oil.
  • Put chicken or steak on grill or in pan and cook until no longer pink.
  • Add vegetables, cooking until just tender and onions and peppers begin to caramelize.
  • Serve immediately on tortillas with salsa and sour cream to garnish.

2 tablespoons canola oil
2 tablespoons lemon juice
1 garlic clove, minced

1/4 to 1/2 teaspoon crushed red pepper flakes
1 large sweet red pepper, julienned

Steps:

  • In a large skillet, brown steak in oil over medium heat. Place steak and drippings in a 3-qt. slow cooker. Apron Strings blog did a great article about the merit of marinades using lime zest as opposed to lime juice. This same marinade may, also, be used to marinade the accompanying onions and sweet peppers. Time includes just prep time to make the marinade.

2 chipotle chiles in adobo
2 teaspoons lime zest
1/4 red onion, chopped
3 garlic cloves
1 teaspoon cumin

1 1/2 lbs flank steaks or 1 1/2 lbs chicken

Steps:

  • Place all ingredients in a blender or food processor and blend until smooth.
  • Reserve about 1-2 tablespoons marinade for the vegetables and the remainder for the steak. Place steak and vegetables in separate ziploc bags. Add the amount of marinade to each bag as suggested, then seal and massage until evely coated. An hour of marinate time is sufficient for the vegetables, longer for the steak, if desired. Remove meat from marinade and lightly wipe away the excess.
  • Grill on high heat about until done. Allow to rest for about 5-10 minutes.
  • To serve, place grilled meat and vegetables on wamed tortillas and top with cheese and avocado.

¼ cup lime juice
¼ cup chopped fresh cilantro
½ jalapeno pepper, seeded and minced
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground cumin
1 ½ pounds beef skirt steak, cut across the grain into 1/2-inch strips
1 yellow onion, cut into 1/2-inch strips
3 red bell peppers, cut into 1/2-inch strips
2 teaspoons vegetable oil, divided, or as needed

Steps:

  • Whisk lime juice, cilantro, jalapeno pepper, olive oil, garlic, and cumin together in a large glass or ceramic bowl. Add skirt steak, onion, and red bell peppers; toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator, 30 minutes to 2 hours.
  • Remove steak, onion, and peppers from marinade and shake off excess. Discard remaining marinade.
  • Heat 1 teaspoon vegetable oil in a large skillet over high heat until oil shimmers. Cook and stir steak in hot oil until browned on all sides and still pink in the center, about 3 minutes per side. Transfer meat to a plate, tent with aluminum foil, and let rest for 5 minutes.
  • Heat remaining oil in the same skillet over medium-high heat. Saute onion and peppers in hot oil until just tender but still crisp to the bite, 5 to 6 minutes. Return meat to skillet; cook and stir until heated through.

Delicious chicken fajitas, marinated and grilled to perfection.

Number Of Ingredients 16

1/4 C fresh lime juice
1/3 C water
2 T vegetable oil
2 cloves garlic (pressed or finely minced)
3 t vinegar
2 t soy sauce
1/2 t liquid smoke* (I used 1 tsp.)
1 t salt
1/2 t chili powder
1/2 t cayenne pepper
1/4 t ground black pepper
1/4 t onion powder
*If you're not familiar with liquid smoke
4 Boneless skinless chicken breasts (about 3-4 large ones. Steak is also great.)
3 Bell Peppers (about 3 large ones I used a red, orange and yellow.)
1 Onion (I used a Walla Walla Sweet Onion.)

Steps:

  • Mix all the marinade ingredients together and place in a zip-lock bag.
  • Before you put the meat in, reserve a little marinade to use at the end.(about 1/4 a cup)
  • Then toss in the chicken or steak, and bell peppers and onions or if you want more marinade for the meat do not include the peppers and onions.
  • Just coat them with some olive oil and salt before griling.
  • Marinade for at least 4 hours, but longer if possible.
  • Then grill outside on the bbq, or indoors on a skillet (cast iron is best) or grill pan.
  • Use the reserved marinade from the bag to baste meat as you cook. (This is not the 1/4 cup you reserved)
  • Here are some tips from Our Best Bites to help make your fajitas truly fabulous!:
  • I usually double the marinade, or 1 1/2 it because I have this weird thing where I like to see my meat swimming.
  • Once it's all combined, immediately reserve about 1/4 cup, and set it aside.
  • I then butterfly my chicken, or pound it thinner, because that increases the marinade-to-chicken ratio!
  • I toss all of the meat in the bag of marinade, but leave the peppers and onions out.
  • Only reason being that I usually want all of the marinade for the meat (see above weirdness), and the veggies get a splash of it at the end with the marinade I reserved.
  • But if you have enough marinade, go ahead and do the veggies too.
  • I slice my onion into about 1/2 inch slices, and leave the slices in tact.
  • Then I quarter the peppers.
  • When they're ready to grill I toss the veggies with a little olive oil and salt and pepper if I haven't included them in the marinade
  • When everything is cooked slice the meat, peppers and onions into strips
  • Combine in a bowl and pour in the reserved marinade (do not use the liquid that the chicken was marinading in.
  • Serve with tortillas (I used the uncooked tortillas from Costco and cook them up fresh!)

2 lb chicken breasts, thinly sliced into strips
4 bell peppers, 1 each of yellow, orange, red, and green; sliced in thin strips
5 Tbsp olive oil
1 1/2 Tbsp chili powder
1 1/2 Tbsp cumin
1 1/2 tsp dried oregano
1 1/2 tsp paprika
1 1/2 tsp garlic powder
salt and pepper, to taste
1 1/2 medium sweet onions, sliced thinly
flour or corn tortillas
2 avocadoes, sliced thinly
sour cream
salsa
sharp cheddar cheese, grated
tomatoes, sliced thinly
green onions, cut into 1/4 inch lengths

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. Use a large baking pan and spread out chicken, bell peppers, and onion. Must be in single layer. If can't be in single layer, use 2 baking pans that can be in the oven at the same time.
  • 3. Mix up chicken, peppers, and onion and drizzle olive oil over all.
  • 4. Mix up oregano, onion powder, paprika, garlic powder, chili powder, and cumin. Sprinkle over all the mixture on oven pans. Toss meat, veges, and oil, until completely coated.
  • 5. Bake for 10 minutes. Use spatula and stir up everything. Bake for another 5 minutes.
  • 6. Turn oven to broil and broil for about 3 minutes until everything is a little charred and crispy.
  • 7. Ready for everyone to make their own fajitas using corn or flour tortillas depending upon your individual preference..

2 teaspoons olive oil
1 medium onion, sliced 1/4 inch thick
1 medium green pepper, sliced 1/4 inch thick
1 garlic clove, crushed
1/2 teaspoon oregano
8 -10 ounces filet of beef, trimed of all fat
2 tablespoons fresh cilantro, chopped
8 corn tortillas, heated
guacamole or avocado, slices
sour cream
salsa
olive oil flavored cooking spray, as needed

Steps:

  • Spray a large, non-stick skillet with olive oil spray and add 2 teaspoons olive oil; Add the onions and green peppers and cook over medium heat until onion is translucent.
  • Add the garlic and oregano and cook for 1 minute more; (this can be done a day ahead and reheated) Or kept warm while steaks are grilling.
  • Grill the meat to rare to medium rare as you like; then remove from heat and cut into strips on a cutting board.
  • Add the hot cooked steak and cilantro to the warm peppers and onion and mix together in skillet, cooking for 2 to 3 minutes, just to blend flavors.
  • Serve with warm corn tortillas, sour cream, salsa and avocados as garnishes.

3 -4 tablespoons vegetable oil
1 cup soy sauce
1 cup fresh lemon juice
2 medium onions, sliced thin
1 medium onion, sliced thin

1 tablespoon fresh minced garlic
1 (3 -4 lb) steak (beef skirt, round steak, or flank steak)
1 tablespoon liquid smoke flavoring
1 teaspoon Tabasco sauce

Steps:

  • Tenderize steak. Have the butcher tenderize steak for you or score with a knife and pound it out. Soak 8 to 12 hours in marinade; put slices of onion and lemons between soaking slabs of meat. Cook slabs over hot coals. Baste with leftover marinade sauce. Cook medium well; cut against the grain in 3/4 inch strips. Serve hot with flour tortillas.
  • We usually fill tortillas with onion,sliced meat, and pepper jack cheese. Fold over and grill tortillas on grill for a few minutes.
  • We have also added other vegetable such as green and red peppers and mushrooms. Enjoy!
