Number Of Ingredients 13

1 stick (8 tablespoons) unsalted butter, melted, plus for greasing the pan
2 cups quick oats
3/4 cup granulated sugar
3/4 cup whole milk
1 vanilla bean, scraped (see Cook's Note)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon baking powder
1 egg
Heavy cream
Brown sugar
Berries

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan with butter.
  • Combine the oats and sugar in a medium bowl, then pour in the milk.
  • Add the vanilla seeds, cinnamon, nutmeg, salt and baking powder.
  • Next comes the melted butter and the egg.
  • Then just stir it all together into a big delicious oaty mess of wonder.
  • Plop the mixture into the prepared pan and spread it out.
  • Bake for 30 minutes, until set.
  • Cut into squares while still warm. Serve with cream, brown sugar and berries.

½ cup salted butter, melted and cooled
2 eggs, beaten
1 cup brown sugar
3 cups quick oats ("instant oats")
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
1 cup milk ((I use 2%))
2 apples, grated (you do not need to peel them)
For serving: warm milk or cream, brown sugar, butter, maple syrup, nuts, fresh fruit

Steps:

  • Preheat oven to 350 degrees F. Grease a 9 x 13-inch baking dish and set aside.
  • Whisk together butter, eggs and brown sugar. Add remaining ingredients and stir to combine. Transfer to the prepared baking dish. Bake for about 40-45 minutes or until set. Slice and serve with warm milk and other toppings, if desired.

I got this recipe from a bed and breakfast in Amish country of Pennsylvania. My family is Pennsylvania Dutch, so we were out there almost every summer. It's a great, filling breakfast. Serve with fresh or canned peaches and a splash of milk or half-and-half.

3 cups quick-cooking oats
1 cup packed brown sugar
1 cup milk
½ cup vegetable oil
2 eggs, beaten
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
  • Mix oats, brown sugar, milk, oil, eggs, baking powder, salt, and cinnamon together in a bowl using an electric mixer. Pour into the prepared pan.
  • Bake in the preheated oven until set, 25 to 30 minutes, making sure not to let brown.

butter or nonstick cooking spray (to coat baking dish)
3 cups old-fashioned rolled oats (uncooked dry oatmeal)
1 1/2 tsp baking powder
2 tsp ground cinnamon
1/4 tsp ground nutmeg
3/4 tsp salt
1/2 cup light brown sugar, lightly packed (or more, if you like your oatmeal sweeter)
1/3 cup chopped walnuts (optional)
1/3 cup raisins (optional)
2 1/2 cups milk
2 large eggs
1 tsp vanilla extract
1/4 cup butter, melted
2 to 3 large sweet/tart apples (like gala or honey crisp), cored and diced (you can also peel the apples if you prefer, but it's not necessary)

Steps:

  • 1. Preheat oven to 325°F. Lightly butter or spray a 9x13-inch baking dish; set aside.
  • 2. In a large mixing bowl, whisk together the oats, baking powder, cinnamon, nutmeg, salt, brown sugar, and nuts and raisins (if using).
  • 3. In a medium mixing bowl, whisk together the milk, eggs, vanilla and melted butter. Pour the milky mixture over the dry oat mixture. Stir until well combined.
  • 4. Arrange the diced apples across the bottom of the baking dish. Pour the oatmeal mixture over the applies. If not baking immediately, you can cover the baking dish with plastic wrap, and keep it in the refrigerator at this point. (Remove plastic wrap when ready to bake.)
  • 5. Place baking dish oven, and bake for 35 to 45 minutes or until the top is lightly browned and it's firm and not jiggly. Serve warm with a little splash of milk or cream poured on top.

This recipe came from an old Amish cookbook of mine. It tastes like an oatmeal cookie. It stores well in the refrigerator and can be reheated in the microwave and served with milk. This has to sit overnight, so plan accordingly. It is well worth the wait, however!

1 1/2 teaspoons baking powder
1 1/2 teaspoons vanilla
1 teaspoon nutmeg or 1 teaspoon cinnamon
1/4 teaspoon salt
1 cup milk
2 tablespoons milk
3 cups oatmeal (regular or quick)

Steps:

  • Melt butter.
  • Grease 1 1/2 quart baking dish and drop in eggs and beat well.
  • Add brown sugar, baking powder, vanilla, nutmeg or cinnamon, and salt. Mix well, no lumps.
  • Whisk in butter and both measures of milk, then add oats.
  • Stir well, and refrigerate overnight.
  • Bake, uncovered, at 350 for 35-45 min, or until set in the middle.
  • Serve hot with warm milk poured over.
