Thank Oklahoma for this easy, bright and tangy salad. It's made with one of the state's staple crops, black-eyed peas -- or cowpeas as some in the "Sooner State" like to say. With bursts of corn, tomato and pepper, it's a salad that can be served cold or at room temperature, making it perfect for a picnic or tailgate party.

3 tablespoons cider vinegar
2 tablespoons finely chopped pickled jalapeno plus 1 tablespoon brine
1 teaspoon honey
Kosher salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
1 cup frozen corn, thawed
1/2 cup roughly chopped fresh cilantro
4 scallions, chopped
2 plum tomatoes, seeded and chopped
1 red bell pepper, stemmed, seeded and chopped
Tortilla chips, for serving

Steps:

  • Whisk together the vinegar, pickled jalapeno brine, honey, 1/2 teaspoon salt and several grinds of pepper in a large bowl. Whisk in the oil to make a smooth dressing.
  • Add the black-eyed peas, black beans, corn, cilantro, pickled jalapeno, scallions, tomatoes and bell pepper. Toss to coat in the dressing. Season to taste with additional salt and pepper. Cover and refrigerate at least 1 hour to blend the flavors before serving. Serve with tortilla chips for scooping.

I first made this as a teenager and everyone I've made it for loves it. It's very easy and absolutely delicious! You can top it with chili as well. It is also good the next day.

2 pounds ground beef
1 small onion, chopped
2 (7 ounce) packages sweet yellow cornbread mix (such as Martha White®)
1 cup milk
2 eggs
1 (15 ounce) can creamed corn
2 cups shredded Cheddar cheese
2 tablespoons butter, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add onion; cook until soft, 5 to 10 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine cornbread mix, milk, and eggs in a large bowl. Stir in creamed corn.
  • Spread beef-onion mixture in the bottom of a baking dish. Spread Cheddar cheese on top. Pour cornbread batter over cheese.
  • Bake in the preheated oven until golden brown and a toothpick inserted into the center comes out clean, 17 to 22 minutes. Spread butter over the top. Let cool for 5 minutes before cutting.

12 ounces hot Italian sausage links, casings removed
2 (8 ounce) packages cream cheese, at room temperature
1 cup sour cream
4 ounces sharp Cheddar cheese, grated
2 cups frozen sweet corn, thawed and drained
1 (14 ounce) can fire-roasted diced tomatoes with green chiles
1 (4 ounce) can diced Hatch green chiles
½ cup diced fresh jalapeño peppers
½ cup sliced green onions
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
2 tablespoons grated sharp Cheddar cheese
1 pinch cayenne pepper, or to taste
1 teaspoon sliced green onion, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place sausages in a dry pan over medium heat until they start to sizzle. Use a spoon or flat wooden spatula to break them up as they cook. Continue to cook until browned and crumbly, 10 to 12 minutes. Remove from the heat. Drain grease if desired.
  • Combine cream cheese, sour cream, 4 ounces grated Cheddar, thawed corn, cooked sausage, fire-roasted tomatoes with chiles, Hatch chiles, jalapeño peppers, green onions, salt, pepper, and cayenne in a large bowl; mix until thoroughly combined. Transfer into a baking dish and smooth out the top. Top with remaining Cheddar, and cayenne.
  • Place the baking dish on a sheet pan and bake in the center of the preheated oven until cheese is melted and dip is bubbling around the outside, about 30 minutes.
  • Sprinkle green onions over top before serving.

My dad used to make this and it was GREAT!!! My husband and daughter enjoy this and its a pretty popular recipe in our house. This recipe can easily be doubled for potluck dinners or big get togethers. Be sure not to cook the cornbread before you put the mixture on top!!!

1 (15 ounce) can ranch style beans
1 green bell pepper
2 (8 ounce) packages cornbread mix
1 lb ground beef

Steps:

  • Chop bell pepper and set aside.
  • Fry ground beef in skillet until cooked add bell pepper.
  • Cook for 5 minutes and drain excess grease.
  • Prepare one package of cornbread mix according to directions.
  • Grease a 11x13 pan and pour in cornbread mix.
  • Open corn and beans and pour into meat.
  • Prepare 2nd package of mix and top meat and veggies mixture.
  • Cook in oven 20 minutes.

1 (15 ounce) can black beans
1 (15 ounce) can black-eyed peas
4 ears fresh corn, cooked and taken off cob
1 bell pepper (any color)
2 roma tomatoes
1 jalapeno
1/4 red onion
1/4 bunch fresh cilantro
2 tablespoons olive oil
1 fresh lime (2 tbsp jucie)
1/2 tablespoon balsamic vinegar
1/2 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon sugar

Steps:

  • 1 Rinse and drain both cans of beans in a colander. Let the excess water drain as you prepare the vegetables.
  • 2 Finely dice the bell pepper, tomatoes, jalapeño, and red onion. Try to dice the vegetables into pieces that are roughly the same size as the beans. For the less spicy salad, scrape the seeds out of the jalapeño before dicing. Roughly chop the cilantro. Place the drained beans, corn, bell pepper, tomatoes, jalapeño, onion and cilantro in a large bowl.
  • 3 In a small bowl, whisk together the olive oil, 2 tbsp of juice from the lime, balsamic vinegar, chili powder, cumin, salt and sugar. Pour the dressing over the salad, then stir until everything is well coated. Serve immediately or refrigerate until ready to eat.

2 cups biscuit/baking mix
1 cup yellow cornmeal
3/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
1 cup butter, melted
1 cup half-and-half cream

Steps:

  • In a large bowl, combine the first 5 ingredients. In another bowl, combine the eggs, butter and cream; stir into the dry ingredients just until moistened. Spread into a greased 13x9-in. baking pan., Bake at 350° until a toothpick inserted in the center comes out clean, 25-30 minutes. Serve warm.
